BANANA BREAD OATMEAL
Gluten-free, vegan banana bread oatmeal that's super simple to whip up and tastes like the real deal. Add some caramelized bananas and toasted walnuts on top for a gourmet breakfast!

- Add oats, cinnamon, vanilla, sea salt and half of the banana slices to a medium pot. Add water and stir to combine.
- Heat over medium-high heat for 8-10 minutes. Be sure to stir the oats several times while cooking to make sure the banana slices melt into the oats and the oats don't stick to the pot. You'll know the oatmeal is done when all the liquid is absorbed and the oats are thick and fluffy.
- While oats are cooking, heat a skillet over medium and add coconut oil and maple syrup. Add remaining banana slices and walnuts to the skillet. Cook banana slices 2 minutes on each side or until they start to get a golden crust. Heat walnuts until just toasted. Remove from heat.
- Place cooked oats into a bowl and top with caramelized bananas and walnuts. For sweeter oats, drizzle with extra maple syrup.

- Place the oats and milk in a medium saucepan over medium-high heat and bring to a rapid simmer. Reduce the heat to medium-low and cook, stirring constantly, until the oatmeal is thick, about 10 minutes. Add sugar, to taste, and set the oatmeal aside to cool slightly.
- Transfer the oatmeal to a container and refrigerate it for at least 2 hours or overnight. Strain the liquid, add the vanilla and add more milk if you want it thinner. Serve cold.

Steps:
- Place the two cups of water and the cinnamon stick in a medium-size saucepan and turn the heat to high.
- Afterward, the water starts boiling, add the Old Fashioned Oats and reduce the heat to medium. Cook for five minutes.
- After the five minutes, pour in the milk and stir well. Keep cooking for five more minutes, stirring from time to time to keep the oatmeal from sticking to the saucepan.
- Eventually, the oatmeal will become thick and creamy, then remove from the heat. Serve it in bowls, sprinkle with some ground cinnamon, and sweeten with your sweetener of choice (I recommend dark brown sugar).
