Steps:
- Place the chicken, tomatoes, beans, onions, corn, broth and seasonings in the crock pot. in the morning. Cook on low all day (6 to 8 hours). Once cooked, shred chicken and place back into the crockpot. Stir.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Shred the chicken and serve topped with the tortilla strips, shredded cheese, avocado and cilantro. Enjoy!

THE EASIEST AND BEST CROCK POT CHICKEN TORTILLA SOUP
A friend of mine made this soup for a baby shower that I recently attended and everyone loved it! Fritos or tortilla strips and cheddar cheese are optional topping's as well as the sour cream. I like it the best with only sour cream which makes it HEALTHY which is always a major plus! You do not need to pre cook the chicken, just put it in raw OR frozen, which makes it super easy. For spicer soup, get the spicy RoTel tomatoes and/or Medium or Hot Tostitos Salsa but you will find that it has a lot of flavor and is quite spicy for not having to add any extra spices -- SO easy!! I like it the best with one jar of medium and one jar of mild tostitos salsa.

Steps:
- Put all ingredients in a crock pot.
- Stir until combined.
- Cover and Cook on High for 3 hours and then reduce heat to low for approximately 3-5 more hours. If the chicken has not seperated on it's own, just give it a few shreds with the fork.
- Serve and Top with Sour Cream.

- 1. Add all ingredients to the crockpot EXCEPT cheese and chips. Stir together so everything is well mixed.
- 2. Cook on high for 4 hours or low for 8 hours.

- Put all ingredients in the crockpot and stir to incorporate together.
- Place on high 4-6 hours or low 6-8 hours.
- Do not keep opening lid as this slows cooking time by 30 minutes every time.
- If too thick add more broth or water to thin out.
- If stovetop method is preferred just make sure the chicken is cooked thoroughly.

- Combine all ingredients in greased 4 1/2 to 6 quart slow cooker
- Cover and cook on low heat 6-8 hrs or on high 3-4 hrs (everyone's crockpot is different, adjust accordingly).
- Top with shredded pepper or monterey jack cheese, guacamole or sour cream.
- Serve with tortilla strips or chips, sometimes I even make cheese quesadillas.
- VARIATION- Add 1 c shredded carrots or zucchini at beginning of cook time.

CROCKPOT CHICKEN TORTILLA SOUP
Throw this together in the morning and be ready for a warm dinner tonight, I have used frozen chicken breasts in place of thawed, and they worked great! They did take an hour or so to thaw with the crockpot on high, so maybe allow for 30 min-an hour extra cooking time. Different crockpots cook totally differently, some people say that the extra water added made their soup very watery and tasteless, in my crockpot this is not the case. If you like try skipping the water when you put everything in the crockpot in the morning, and if your soup looks too thick before serving add a little water and let it cook in for 10-15 minutes. If you don't love spicy food, look for the MILD Ro-Tel.

- * instead of these spices, you could include a packet of Taco seasoning if you prefer.
- Put chopped onion, cans of beans, rotel, corn, chicken broth, water, and spices in CrockPot and stir to mix.
- Put chicken breasts on top of mixture and make sure they're at least partly submerged in liquid.
- Cook on high 6-7 hours or low 8-9 hours.
- Before serving remove the chicken breasts from soup and shred, if needed, (sometimes they'll just fall apart on their own, but sometimes they need some help).
- Return chicken to CrockPot, stir to combine.
- To serve put a few tortilla chips in the bottom of a bowl, ladle soup over tortilla chips, top with shredded cheddar cheese, and a dollop of sour cream, serve with more chips if you like. Enjoy!
