SUE'S TACO SALAD

This is a great dish for pot-lucks. It's easy, and can be made in advance. Add dressing just before serving.

1 pound lean ground beef
1 (1 ounce) package taco seasoning mix
½ (14.5 ounce) package nacho-flavor tortilla chips
2 cups shredded Cheddar cheese
½ (15 ounce) can kidney beans, drained
½ cup ranch-style salad dressing
1 chopped tomato
1 cup chopped lettuce
¼ cup chopped green onion

Steps:

  • Place ground beef in a large, deep skillet. Cook over medium-high heat, stirring to crumble until well done; drain. Stir in taco seasoning mix. Set aside to cool.
  • Place chips into a large bowl, and crush into bite-size pieces. Combine with seasoned meat, cheese, beans, tomatoes, lettuce, and green onions. Pour dressing over all, and toss to coat.

This taco salad is famous in our family. It's easy to make and full of yummy veggies, beans, beef and cheese, crushed Doritos are mixed in and then it's topped with a tangy Italian dressing.

1 large head of iceberg lettuce, ripped into bite sized pieces (can sub Romaine)
2 cups shredded cheddar cheese
1-1.5 pounds lean ground beef, browned and drained
1-2 large tomatoes, diced
1 can (15 ounce) dark red kidney beans, drained
1/2 of 1 (12 ounce) bag Nacho Cheese Doritos , crushed
1/2-3/4 cup Wishbone Italian Dressing

Steps:

  • Brown ground beef with salt and pepper in a skillet, and drain off any excess fat. Set aside. Rip lettuce into a large bowl. Add tomatoes, kidney beans, beef and cheese. Toss. Right before you are ready to serve, add cheese and dressing. (start with a 1/2 cup add more if needed) Toss. Mix in crushed Doritos, and serve immediately.

My Aunt Sue (also a Michigander) used to make this at her cabin by the lake for summertime parties. A bit of an indulgence for me, but oh so delicious!

1 head lettuce, cut up
0.5 (1 1/4 ounce) package taco seasoning
2 tomatoes, chopped
1 (8 ounce) package fat-free cheddar cheese, shredded
1 lb ground turkey
1 onion, chopped
1 (18 ounce) bottle fat-free thousand island salad dressing (or Catalina, if you prefer)
1 (15 ounce) can kidney beans, drained (can be omitted)
4 cups nacho cheese flavor Doritos, broken up

Steps:

  • Brown turkey and onions, drain and rinse. Return to pan and stir in taco seasonings. Refrigerate.
  • Mix together remaining ingredients, add meat mix.
  • Add Doritos and dressing when ready to serve (otherwise it will get soggy).

These are very yummy and pretty for the holidays. They are fun to make, but the dough needs some time in the freezer. Also, I found that the chocolate takes quite a while to "set." I ended up placing the cookies on the wire cooling racks and setting them outside on the front steps for about 10 minutes. That did the trick. The refrigerator probably would too, but I didn't have enough room!

1 cup butter, softened
1 1/2 cups sugar
1 egg
1 teaspoon pure vanilla extract
2 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon almond extract
4 drops red food coloring
4 drops green food coloring
1/2 cup pecans, chopped
4 1/2 teaspoons chocolate syrup
1/2 cup semi-sweet chocolate chips
1 1/2 teaspoons shortening

Steps:

  • Preheat oven to 350. Line a 9 x 5 x 3 in loaf pan with waxed paper and set aside. In a mixing bowl, cream butter and sugar. Beat in egg and vanilla.
  • In a separate bowl, combine the flour, baking powder and salt. Gradually add to the creamed mixture and mix well.
  • Divide dough into thirds. Add almond extract and red food coloring to one portion; spread evenly into prepared pan. Add green food coloring to second portion; spread evenly over first layer. Add chocolate syrup to third portion; spread evenly over second layer. Cover with foil. Freeze for 4 hours or overnight.
  • Unwrap loaf and cut in half lengthwise. Cut each portion widthwise into 1 inch slices. Place 2 inches apart on ungreased cookie sheets. Bake at 350 for 12-14 minutes or until the edges are lightly browned. Remove to wire racks to cool.
  • In a microwave, melt chocolate chips and shortening; stir until blended and smooth. Dip one end of each cookie into chocolate. Place on wire racks until set.

1 tomatoes, diced

Steps:

  • Season meat with taco seasoning according to package directions.
  • Chill meat in refrigerator for 20 minutes.
  • Mix all ingredients in a large bowl. Can be served with sour cream.

Austin's is a great local restaurant here in Reno and Lake Tahoe. I have not made this salad, but have eaten it there many times and it is wonderful. The recipe comes from Austin's in a cookbook called "In Good Taste". A great way to use up your left over chili.

4 cups mixed salad greens
1 cup chili
1/4 cup sliced black olives
1 cup tortilla chips, broken into pieces
1/4 cup chopped tomato
1/2 cup shredded cheddar cheese
1/2 cup sour cream
1/4 cup chives
ranch dressing

Steps:

  • Place mixed greens in a large salad bowl.
  • Add warmed chili meat, sliced olives, tortilla chips, tomatoes and shredded cheddar cheese.
  • Add a dollop of sour cream and chives on top.
  • To serve, add ranch dressing and mix thoroughly.
  • Divide among 4 salad plates.
  • Place additional dollop of sour cream and chives on each plate and serve.
  • YUMMY!
