AUNT VERA'S CRUMB CAKE

This recipe is actually more crumb than cake; very buttery and yummy. Makes two large trays. Wrap well, after cooling and freeze one for later use.

Number Of Ingredients 11

4 ounces butter, room temp
1 cup sugar
2 eggs, room temp
2 cups flour
3 teaspoons baking powder
1 cup milk
1 teaspoon vanilla
3 cups flour
8 ounces butter, room temp
2 cups sugar
1 teaspoon cinnamon

Steps:

  • Preheat oven to 375°.
  • Cream butter and sugar until light yellow and well blended.
  • Add eggs, one at a time.
  • Sift flour and baking powder together and add alternately with milk, beginning and ending with 1/2 cup of flour.
  • Add vanilla.
  • Spray two cookie sheets with cooking spray and fit with parchment paper. Spray again.
  • Divide batter between two trays.
  • Mix all crumb ingredients together with a fork, and form into two balls.
  • Crumble each ball over each tray.
  • Bake for 25 to 30 minutes.
  • When cool, sprinkle with confectioners sugar.

Number Of Ingredients 10

2 cups all-purpose flour
1-1/4 cups sugar, divided
3 teaspoons baking powder
3-1/2 teaspoons ground cinnamon, divided
1-1/4 teaspoons salt
2 eggs
1 cup buttermilk
1/3 cup vegetable oil
2 teaspoons vanilla extract
3 tablespoons butter, melted

Steps:

  • In a large bowl, combine the flour, 1 cup sugar, baking powder, 1-1/2 teaspoons cinnamon and salt. In another large bowl, combine the eggs, buttermilk, oil and vanilla; stir into dry ingredients just until moistened. , Pour half of the batter into a greased 9x5-in. loaf pan. In a small bowl, combine the remaining sugar and cinnamon; stir in butter. Sprinkle with half the cinnamon-sugar mixture; cut through batter with a knife to swirl the topping. Repeat. , Bake at 350° for 55-60 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely.

2 large eggs
1/3 cup milk
3 tablespoons butter, melted
1 cup all-purpose flour
1/2 cup plus 2 tablespoons sugar, divided
1 teaspoon baking powder
1-1/4 teaspoons ground cinnamon, divided
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
6 medium plums, pitted and halved
Whipped cream and additional ground nutmeg, optional

Steps:

  • In a bowl, beat the eggs, milk and butter. Combine the flour, 1/2 cup sugar, baking powder, 3/4 teaspoon cinnamon, salt and nutmeg; add to the egg mixture and beat just until combined. , Pour into a greased 9-in. round baking pan. Place plums cut side up over batter. Combine remaining sugar and cinnamon; sprinkle over the top. Bake at 375° for 20-25 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely. Serve with whipped cream and sprinkle with nutmeg if desired.

My Aunt Lillian gave me a small book of her favorite recipes when I got married. All were handwritten on 3x5 note cards. I cherish these recipes. Her Italian Crème Cake is one of my favorites! To make a lighter version, use non-fat cream cheese and Land O Lakes light butter.

1 c buttermilk, fat free
1 tsp baking soda
2 c sugar
1/2 c butter, salted
1/2 c canola oil
5 eggs, separated
1 tsp vanilla extract
1/2 c pecan pieces
1 c coconut flakes
2 c all-purpose flour
ICING
12 oz cream cheese
1 stick butter, plus 2 tablespoons
1 tsp vanilla extract
1 lb powdered suger

Steps:

  • 1. Mix baking soda and buttermilk. Let stand.
  • 2. Cream together sugar, butter and canola oil. Add egg yolks one at a time, beating after each addition. Gradually add flour and buttermilk, alternating between each addition.
  • 3. Separately beat the five egg whites until stiff and fold into batter.
  • 4. Add nuts and coconut, stirring gently.
  • 5. Bake in three greased and floured 9" pans at 325 degrees for 25 minutes, or until done. Let cool.
  • 6. ICING Beat cream cheese and butter until light. Add remaining ingredients and continue to whip until mixed.

Combine the flour, baking powder, baking soda and salt; add to creamed mixture alternately with sour cream., Spoon a third of the batter into a greased and floured 10-in. tube pan. Combine the cinnamon, nuts and remaining sugar; sprinkle a third over batter. Repeat layers twice., Bake at 350° for 65-70 minutes or until toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack.

1/4 cup unsweetened applesauce
1/2 cup fat-free milk
TOPPING:
1/3 cup packed brown sugar
1/4 cup sugar
2 teaspoons ground cinnamon

Steps:

  • In a medium bowl, combine flour, sugar, baking powder and salt. In another bowl, beat egg whites, applesauce and milk. Add to dry ingredients. Pour into a 9-in. square baking pan that has been coated with cooking spray. Combine topping ingredients; sprinkle over batter.
