- Place the bacon in a large, deep skillet and cook over medium-high heat until evenly brown. Drain on paper towels, crumble, and set aside. Drain bacon fat from the skillet.
- Using the same skillet, cook the ground beef and onion over medium heat, stirring until the meat is no longer pink, 5 to 7 minutes. Drain.
- Transfer the ground beef to a slow cooker. Add the pinto beans, butter beans, baked beans with pork, barbeque sauce, ketchup, and brown sugar to the ground beef mixture; stir to blend well. Cover and cook for 4 hours on High. Top each serving with crumbled bacon.

- 1. In a large skillet, cook bacon, beef, and onion until browned. Transfer to a large bowl. Do not drain. Add remaining ingredients and stir well. Turn out into a greased 9x13 baking dish. Cover with aluminum foil. Bake 350 degrees for 50 minutes...until bubbly.
- 2. NOTE: Easily doubled. However, just add 1T more of molasses and prepared mustard instead of doubling those. Use a lasagna pan which holds a doubled recipe nicely.

- 1. Preheat oven to 350°F. Chop bacon and cook until almost done then add beef and onions seasoned with garlic and pepper. Cook until done. Drain.
- 2. Add beans and remaining ingredients and mix well. Pour into a casserole dish and cook uncovered for 40-45 min depending on your oven. You're just heating it clear through since everything is cooked but it also thickens as well during cooking time. .
- 3. ****I almost always double or triple the recipe. If you do, increase the cooking time to 1 hour at least to make sure it heats through.**** The photo is a triple batch, made with honey maple bacon before being baked. I prepped it in a stock pot and went ahead and baked it right in it as well, for one hour.

- Preheat oven to 350 degrees F (175 degrees C).
- In a large skillet over medium heat, fry the bacon until crispy, stirring occasionally. Remove bacon from pan and drain on paper towels. Set bacon aside.
- Discard all but 2 tablespoons of bacon fat from the pan.
- Season the beef with salt and pepper and add the meat, and peppers and onions to the bacon fat in the pan. Cook until the ground beef is no longer pink.
- Drain fat.In a large mixing bowl, combine all of the beans.
- Stir in the ketchup, apple cider vinegar, dry mustard, brown sugar and cooked beef and pepper/onion mixture.
- Mix thoroughly.

These are my Aunt Jessie's famous baked beans. She makes them for all our family picnics and everyone loves them. I make them vegetarian by eliminating the bacon and ground beef. It isn't necessary to replace the eliminated items but you can substitute tofu crumbles for the beef.

- Cook bacon in skillet until crisp, then crumble and set aside.
- Cook beef in skillet until no pink remains. Add onion, sauté just until tender.
- Combine beef, onion, ketchup, salt, brown sugar, mustard and vinegar in a 3 qt baking dish or crock pot. Partially drain all the beans (I don't drain the baked beans) and add to the baking dish or crock pot, stirring gently to mix. Sprinkle with bacon.
- Bake at 350 F for 40 minutes or cook in crock pot until heated through.
- For vegetarian version just sauté onion and add to bean mixture. If using dry tofu crumbles it isn't necessary to rehydrate them first, I just stir them into the mixture. It may require addition of water to the mixture if it gets too thick, I just play it by ear. When using frozen crumbles or gimme lean ground "beef" I heat it up in the pan with the onion before adding to the bean mixture.
