2 1/2 cups heavy cream
3 Idaho or other large, waxy potatoes, peeled and sliced thin
Salt and freshly ground pepper

Steps:

  • Preheat oven to 350 degrees. In an 8 by 8-inch baking dish, arrange a fourth of the potatoes, season to taste with salt and pepper and pour a fourth of the cream over all. Repeat with the remaining potatoes and cream, forming 4 layers. Bake for 50 minutes to 1 hour, or until the cream has been absorbed and the potatoes are browned. Remove from the oven and let sit 10 minutes before serving.

2 tablespoons butter, softened
8 large russet potatoes, scrubbed clean
3 cups heavy cream
1 cup whole milk
1/4 cup all-purpose flour
2 teaspoons salt
Freshly ground black pepper
2 cups freshly grated sharp Cheddar
2 green onions, sliced thin (white and light green parts only)

Steps:

  • Preheat the oven to 400 degrees F. Butter a large baking dish with the butter.
  • Slice the potatoes into sticks, and then cut the sticks to create a dice.
  • Combine the cream and milk in a bowl. Add the flour, salt and some pepper. Whisk it together well so that the flour is incorporated into the milk/cream mixture. Add the diced potatoes to the prepared baking dish and pour the creamy mixture all over the top.
  • Cover the dish with foil and bake for 20 to 30 minutes. Remove the foil and bake 15 to 20 minutes more. Just before serving, sprinkle on the grated cheese and return it to the oven until the cheese is melted and bubbly, 3 to 5 minutes. Sprinkle on the green onions and serve it hot. Creamy, dreamy and divine.

This is one of the first dishes I made in Home Economics class, but it wasn't until after I graduated that I learned about adding Parmesan and Gruyere for a more sophisticated version.

1/3 cup unsalted butter, softened
1 1/2 pounds Idaho potatoes, peeled and cut into 1/4-inch-thick slices
1/2 cup grated Gruyere
1/2 cup freshly grated Parmesan
1 cup heavy cream
1 teaspoon salt
1/2 teaspoon ground black pepper
1/8 teaspoon paprika

Steps:

  • Preheat the oven to 350 degrees F.
  • Butter a 1 1/2 quart baking dish with about 1 tablespoon of the softened butter.
  • Arrange a layer of potatoes in the baking dish, and sprinkle some of the cheeses over them. Continue layering potatoes and cheeses until you've used them all, ending with a layer of potatoes.
  • In a small bowl, whisk the cream with the salt and pepper; pour this over the potatoes. Dot the remaining butter over the top and sprinkle with the paprika. Bake for 1 to 1 1/4 hours, or until the potatoes are tender and golden brown on top. Let stand for 5 minutes before serving.

1/4 teaspoon nutmeg
4 ounces gruyere cheese or 4 ounces quality swiss cheese, shredded or sliced thin
2 ounces sharp cheddar cheese, shredded or sliced thin
8 ounces chicken broth
2 tablespoons butter

Steps:

  • Preheat oven to 450 degrees.
  • Grease 8 by 8 baking dish.
  • Toss potatoes with salt, pepper, nutmeg.
  • Layer potatoes in dish.
  • Sprinkle with cheese.
  • Repeat layers ending with potatoes.
  • Cover with broth and dot with butter.
  • Bake uncovered 15 minutes.
  • Reduce heat to 350 degrees and bake 1 hour, or until top is golden and crusty.
  • Serve immediately.

12 russet potatoes, thinly sliced
salt and pepper
2 cups mild cheddar cheese, divided (shredded)
1 pint heavy whipping cream
3 garlic cloves, whole, peeled
1 teaspoon chicken flavor instant bouillon (optional)

Steps:

  • Start by preheating your oven to 350 degrees Fahrenheit.
  • Llightly butter a 13x9 inch pan so the potatoes won't stick.
  • Cut your potatoes into very thin slices (width wise).
  • Organize half of the potatoes in the pan.
  • Sprinkle salt and pepper on potatoes to taste (I use about 3/4 teaspoon of pepper and 1/2 teaspoon salt).
  • Add a layer of cheese (1 cup ).
  • Peel 3 cloves of garlic (but leave them whole).
  • In a small sauté pan add 1 pint of heavy whipping cream, the 3 whole garlic cloves, and 1 teaspoon of chicken flavor bouillon (the bouillon is optional but I always add it.).
  • Evenly add the second layer of potatoes.
  • Add salt and pepper (same amount).
  • Add the rest of the cheese (1 cup).
  • Once the heavy whipping cream mixture comes to a boil REMOVE the 3 garlic cloves; pour mixture evenly over the potatoes.
  • Bake for approximately 1 hour and 20 minutes.

3 lbs red potatoes or 3 lbs potatoes
5 tablespoons butter
6 tablespoons flour
4 cups milk
2 garlic cloves, crushed
2 teaspoons salt
1 dash cayenne pepper
2 cups cheddar cheese
1/3 cup parmesan cheese, grated

Steps:

  • Preheat oven to 350°F.
  • Boil potatoes until just tender, 20-25 minutes; drain.
  • When cool enough to handle, peel and dice into 1/2 inch pieces.
  • Put potatoes in 3 qt round casserole or rectangular baking dish.
  • In a large saucepan, melt butter over medium heat.
  • Add flour; stir while cooking, 1-2 minutes.
  • Whisk in milk and add garlic.
  • Season with salt and cayenne pepper.
  • Stir in cheddar cheese and all but 2 tbs parmesan cheese.
  • Add potatoes to sauce and stir to mix evenly.
  • Pour into casserole dish.
  • Sprinkle remaining parmesan cheese over top.

10 new potatoes
1 tablespoon extra virgin olive oil
1 tablespoon butter
1 tablespoon mayonnaise
1 teaspoon Dijon mustard
1/2 tablespoon garlic flavored rice vinegar
2 cloves minced garlic
1 tablespoon cream of mushroom soup
1 tablespoon minced chives (I used pre-minced freeze-dried chives)
1/4 cup shredded cheese, of your choice (I used shredded smoked mozzarella and provolone pizza cheese)

Steps:

  • Heat oil and butter in a non-stick pan over medium heat until butter foams.
  • In the meantime, cut new potatoes into 1-inch cubes.
  • Add the potatoes to the oil and saute until browned, about 10 minutes.
  • While the potatoes are browning, mix together the remaining six ingredients with a wire whisk until well combined.
  • Add sauce to the potatoes when they have become crisp and golden brown, turn off the heat, and cover pan with a lid.
  • Let the potatoes steam for 10-15 minutes.
  • Reheat the potatoes until sizzling, then top with shredded cheese.
