Roasting veggies always needs revamping every now and then, and I like to experiment by pairing them with different dressings or cheeses. I happened to love goat cheese and had extra on hand. I paired it with asparagus, and they lived happily ever after.

- In a medium bowl, whisk together the oil, mustard, vinegar and 1/4 teaspoon salt until smooth and emulsified.
- Meanwhile, bring a large pot of water to a boil over high heat. Sprinkle generously with salt. Add the asparagus to the water and, depending on the size of the asparagus, blanch for 3 to 5 minutes. It should still have some bite left to it. Add the warm asparagus to the dressing and toss well to coat.
- Fan the asparagus out on a platter and sprinkle with the mizuna. Scatter the hazelnuts and goat cheese on top and drizzle with any dressing that may remain in the bowl.
FARFALLE WITH FRESH HERBS AND GOAT CHEESE

- Bring a large pot of salted water to a boil. Add the pasta and return to a boil, stirring occasionally. Cook until al dente according to the package instructions, 8 to 10 minutes. Reserve about 1 cup of the pasta water, then drain.
- Meanwhile, add the olive oil to a large skillet and heat over medium heat. Add the garlic and shallot and saute until softened, about 2 minutes. Add the half-and-half and whisk in the goat cheese until smooth and warm. Season with pepper. Add the lemon zest and juice and half of the reserved pasta water and whisk until combined. Add half of the parsley, dill, mint and chives.
- Transfer the drained pasta to the skillet and cook until the sauce starts to thicken, about 2 minutes. Turn off the heat, add 1/2 cup of the Pecorino Romano and stir to combine. Adjust the consistency of the sauce with the remaining pasta water if needed. Drizzle with extra-virgin olive oil.
- Divide the pasta among bowls and garnish with the remaining Pecorino Romano, parsley, dill, mint and chives.
SMOKED DUCK BREAST WITH GOAT CHEESE GRIT CAKE, GRILLED ASPARAGUS AND SMOKED BLUEBERRY SAUCE
Steps:
- For the grits: Add grits to 2 cups of water in a heavy-bottomed steel pot. Bring to a light simmer over low heat, stirring frequently. When the grits start to thicken to an oatmeal consistency, add 1 cup of water and continue to cook in the same manner. Repeat with 1 more cup water.
- Once the grits start to thicken once more, add the cream and continue to cook, stirring frequently, until the grits thicken again. Add the butter and allow to melt throughout.
- Season to taste with salt and pepper.
- Allow grits to cool, loosely covered, 2 hours, or up to overnight in the refrigerator.
- Reheat the grits over low to medium heat, stirring well, adding additional milk or cream if needed for the right consistency. Add the goat cheese and mix well. Add more salt and pepper if needed.
- Oil a hot skillet or griddle, then add a 6-ounce ladle or scoop of goat cheese grits. Cook through until a brown crust has developed on the bottom of the grit cake, about 5 minutes. Carefully flip the grit cake with a spatula or pancake turner, making sure to get between the crust and the skillet, rather than between the crust and the grits. Continue to heat through until a bottom crust has developed, roughly 5 more minutes.
- For the duck: Prepare a smoker or grill for indirect cooking at 225 degrees F.
- Stir together salt and pepper in a bowl. Lightly rub duck breasts with salt and pepper, and place in your smoker or over indirect heat on your grill. Cook, undisturbed, until lightly browned from the smoke and an instant-read thermometer inserted in the thickest part registers 150 degrees F, about 45 minutes. Remove from smoker and allow to rest at least 15 minutes. Preheat a grill (if you used a smoker) for cooking at 225 degrees F.
- To crisp the skin, lightly run a sharp knife in a cross-hatch pattern on the skin, then baste lightly with oil or melted butter. Place skin-side-down on the grill until skin is crispy but duck meat is not overcooked, about 5 minutes.
- For the asparagus: Meanwhile, preheat a grill for cooking over medium heat.
- Heat a large amount of water in a large stockpot over high heat. Add a generous handful of salt. Bring to a roiling boil.
- Add asparagus to the boiling water. (If you have a steamer basket, this is an excellent time to use it, as it makes fishing the asparagus out a breeze.) Cook the asparagus until just turning soft while still maintaining a bright green color. Remove the asparagus from the hot water and allow to cool completely, preferably in ice water.
- Rub the asparagus lightly with olive oil, salt and pepper. Place on the grill and cook until desired level of char appears on the stalks, about 5 minutes.
- For the smoked blueberry sauce: Meanwhile, add blueberries to a skillet or aluminum pan. Place blueberries in the smoker alongside the duck, taking care to leave room for air to circulate, and smoke until the berries take on a dusky midnight blue appearance, about 15 minutes. (Longer cooking will lead to stronger smoky flavor in the berries.)
- Remove the berries from the smoker, then heat them on the stove over high heat with the dark brown sugar. Add the dark rum, being careful of flames. Allow the alcohol to burn off and continue to heat the pan, stirring, until the sugar has dissolved, the berries have released some of their juices, and the sauce is thickened, about 10 minutes.
- Serve the duck breast over the grits with the sauce and asparagus.

- Heat a griddle pan. Drizzle the asparagus with a little oil, season and cook for 3-4 mins, rolling around the pan until just tender. Leave to cool.
- Lay a slice of prosciutto on your chopping board. Put 3 asparagus spears on top, with the tips poking out the end, then top with a few rocket leaves and 2 semi-dried tomatoes. Roll up the prosciutto tightly to enclose the filling and put in a sealable container for transporting. Continue until all the ingredients are used up.
- Mash the cream cheese and goat's cheese together in a bowl with a fork. Season and add enough milk to make a smooth consistency, into which you can dip the bundles. Transfer to a pot for travelling and sprinkle over the hazelnuts.

When I put these ingredients in my rice cooker, I knew the flavors would complement each other, but I wondered what the dish would look like. It was lovely! - Set a medium rice cooker to the regular cycle or to quick cook if it's a fuzzy-logic machine. Heat the olive oil and sauté the spring onion for 1 minute. I really wanted my husband to try goat cheese, so the other night I asked him if he wanted scalloped potatoes in a cheese sauce; he said 'yes,' and this is what I made. Afterwards he said I would definitely need to make this again, as he had four helpings. When I told him that it was goat cheese all he could say was 'REALLY?' and kept eating. - In a large micro-wave safe glass bowl, heat butter about 50 seconds on high, or until melted.
- Whisk in the 2 tablespoons of flour and 1 cup of heated milk.

- Goat cheese: Line a small baking sheet with parchment paper. Set aside.
- Using a fork, in a small bowl, combine the goat cheese and basil until smooth. Season with salt and pepper, to taste. Using a 1/2-ounce cookie scoop or a round tablespoon measure sprayed with vegetable oil cooking spray, scoop the goat cheese into balls and arrange on the prepared baking sheet. Refrigerate for 30 minutes.
- Soup: In a Dutch oven or large saucepan, heat the butter over medium heat. Add the leeks and cook, stirring constantly until softened, about 3 to 4 minutes. Add the broth, asparagus and basil. - Heat the oven to 400 degrees. In a large (12-inch) ovenproof skillet, heat the olive oil over medium-high. Add the potatoes, spreading them out into an even layer, and season with 1/2 teaspoon salt and a few grinds of black pepper. Cook, tossing occasionally and scraping the bottom of the pan, until potatoes are nicely browned, 7 to 9 minutes.
- Lower the heat to medium, add the fennel and leek, and cook, tossing occasionally, until leeks are translucent, 3 to 5 minutes. If the skillet looks dry at any point, add a splash of olive oil.
- Add the asparagus, along with 1/2 teaspoon salt and a few more grinds of black pepper. Cook, tossing occasionally, until the asparagus, fennel and potatoes are tender, about 5 minutes.
- Off the heat, add the lemon juice and toss, scraping up any brown bits from the bottom of the pan.
- Use a spoon to create 4 small hollows in the hash. Carefully crack an egg into each, season the eggs with salt and pepper and bake for 5 to 7 minutes, until the egg whites are just set. (Don't overcook.)
- Sprinkle with goat cheese, herbs, fennel fronds and lemon zest, if using. Sprinkle with additional lemon juice, if desired, and a pinch of salt, and serve hot. (A spatula works best for serving.)

I had some left over cooked pasta one night and wanted to make a quick meal. I a few things together, and it happened (to my surprise) to be really good. This is a creamy, very tasty dish that I hope you enjoy. I used whole wheat pasta, but either would be good. Also, adjust the spices to your liking. I have posted the recipe for one serving, but it is easily doubled, tripled, and so on.

FETTUCCINE WITH MORELS, ASPARAGUS, AND GOAT CHEESE

- In a heavy skillet cook the shallot in the butter over moderately low heat, stirring, until it is softened, add the wine, and simmer the mixture until the wine is reduced by half. Add the broth and the morels, sliced crosswise, and simmer the mixture, covered, for 10 minutes, or until the morels are tender. Add the cream and the goat cheese and cook the mixture over low heat, stirring, until the cheese is melted. Stir in the asparagus, the chives, and salt and pepper to taste and keep the sauce warm. In a kettle of boiling salted water cook the fettuccine until it is al dente, drain it well, and in a bowl toss the pasta with the sauce.

Steps:
- In a saute pan, melt the butter then add flour.
- Whisk together until bubbling.
- Slowly stir in chicken broth and whisk until smooth.
- Simmer on low heat to thicken.
- Stir in goat cheese and lemon juice until melted & smooth.
- In a separate pan, saute asparagus, mushrooms & sundried tomatoes.
- In a separate pan, saute shrimp, garlic, salt & pepper.
- Coat the pasta with the sauce & mix in 1/2 the shrimp.
- Spoon the vegetables & shrimp over the top.

- Toss chicken with salt and pepper. In a large skillet, heat oil over medium-high heat; saute chicken until no longer pink, 4-6 minutes. Remove from pan; keep warm., Add asparagus to skillet; cook and stir over medium-high heat 1 minute. Add garlic; cook and stir 30 seconds. Stir in tomatoes, milk and 2 tablespoons cheese; cook, covered, over medium heat until cheese begins to melt, 2-3 minutes. Stir in chicken. Serve with rice. If desired, top with additional cheese.
