SESAME GRILLED ASPARAGUS

1 pound asparagus
2 tablespoons dark sesame oil
1 tablespoon soy sauce
1 clove garlic, minced
2 tablespoons sesame seeds
Salt and black pepper

Steps:

  • In a shallow pan, soak skewers in cold water for 1 hour, then drain and set aside.
  • Preheat grill to high. Snap off the woody bases of the asparagus and discard. Skewer 4 or 5 asparagus spears together, using the toothpicks or 2 bamboo skewers, forming a raft shape.
  • In a small bowl, combine the sesame oil, soy sauce, and garlic and stir with a fork to mix. Brush this mixture on the asparagus rafts on both sides. Season the asparagus with a little salt and lots of pepper.
  • When ready to cook, place the asparagus rafts on the hot grate and grill until nicely browned on both sides, 2 to 4 minutes. Sprinkle with the sesame seeds as they grill. You can serve the asparagus as rafts or unskewered.

Steps:

  • Preheat oven to 450°F. Oil large rimmed baking sheet. Whisk mayonnaise, 1 teaspoon rice vinegar, 1 teaspoon soy sauce, and 1 teaspoon grated ginger in pie dish. Mix panko and sesame seeds in another pie dish. Toss asparagus in mayonnaise mixture to coat, then roll in panko mixture. Transfer to prepared baking sheet. Drizzle with 2 teaspoons sesame oil. Roast until browned, turning once, about 16 minutes.
  • Meanwhile, whisk 1 teaspoon water, brown sugar, chili-garlic sauce, remaining 3 teaspoons vinegar, 2 teaspoons soy sauce, 1/4 teaspoon ginger, and 1/4 teaspoon sesame oil in small bowl for sauce.

1/3 cup mayonnaise
2 scallions, trimmed and finely chopped
2 tablespoons white miso
1 teaspoon chili-garlic sauce
1/2 teaspoon toasted sesame oil
1 bunch asparagus, trimmed
3/4 cup japanese-style panko breadcrumbs (see Notes)
1/4 cup sesame seeds

Steps:

  • Preheat oven to 450°F Line a baking sheet with foil; coat with cooking spray.
  • Combine mayonnaise, scallions, miso, chile-garlic sauce and oil in a small bowl.
  • Place asparagus in a shallow dish and toss with half the miso mixture (about 1/4 cup), making sure the asparagus is well coated.
  • Combine panko and sesame seeds in another shallow dish. Working with one spear at a time, roll in the panko mixture and place on the prepared baking sheet, leaving a bit of room between each spear. Coat the prepared spears with cooking spray.
  • Roast the asparagus until the coating is browned and crispy and the asparagus is tender, 20 to 25 minutes. Serve with the remaining miso mixture as a dipping sauce.
  • TIPS & NOTES.
  • Miso is fermented soybean paste made by inoculating a mixture of soybeans, salt and grains (usually barley or rice) with koji, a beneficial mold. Miso is undeniably salty, so a little goes a long way. White or sweet miso (Shiromiso), made with soy and rice, is yellow and milder in flavor; use for soup, salad dressings and sauces for fish or chicken. Look for it near tofu at well-stocked supermarkets.
  • Although we typically use whole-wheat panko-style breadcrumbs, for this recipe we recommend using white, Japanese-style panko breadcrumbs for the best texture and flavor. Look for them in the Asian-food section of most supermarkets or near other breadcrumbs.

1 lb asparagus, fresh, thinner spears
3 tablespoons toasted sesame oil
3 tablespoons soy sauce
1/4 teaspoon black pepper
sesame seeds (optional)

Steps:

  • Soak 2-3 bamboo skewers in water for 30 minutes or more.
  • Wash asparagus and snap the ends off. *Note: Snapping the ends off with your fingers rather than cutting will prevent the asparagus from being stringy.
  • Thread the asparagus spears onto the bamboo skewers.
  • Spoon or brush the toasted sesame oil onto the asparagus.
  • Spoon or brush the soy sauce onto the asparagus.
  • Sprinkle with pepper.

16-20 asparagus spears, about 500g/1lb 2oz
2 tbsp sesame oil
1 tbsp soy sauce
1 garlic clove , crushed
2 tbsp sesame seeds

Steps:

  • With one hand, hold an asparagus stalk at its base. Bend the stalk over with your other hand - the asparagus will break where the woody part ends and the tender part begins. Discard the base. Place 4 or 5 asparagus stalks next to one another. Skewer them crosswise in two places - just below the tips and 3cm from the bottom - with slender bamboo skewers. You will end up with something that looks like a raft.
  • In a small bowl, combine the sesame oil, soy sauce, garlic and sesame seeds and stir with a fork to mix. Brush this mixture on the asparagus rafts on both sides. Season the asparagus with a little salt and lots of pepper.
  • Grill the asparagus on a barbecue or in a griddle pan for 4-5 mins per side, turning with tongs. Sprinkle with sesame mix as they grill.

2 dashes hot pepper sauce
1 tablespoon fine chopped chives
1 teaspoon canola

1 teaspoon sesame oil
2 tablespoons canola oil

  • Put flour, eggs, and sesame seeds in 3 shallow dishes. Wrap each asparagus spear with pancetta, leaving tip exposed.
  • Heat oil in a medium straight-sided skillet over medium heat until it registers 350 degrees on a deep-fry thermometer.

2 tablespoons peanut oil
2 tablespoons minced shallots
1 tablespoon sesame seeds
2 teaspoons soy sauce (low sodium, if desired)
Dash of toasted sesame oil
Freshly ground black pepper

Steps:

  • Trim tough ends from asparagus spears. Set spears aside.
  • Heat a 10-inch cast-iron skillet for about 2 minutes over medium-high heat. Add 1 tablespoon peanut oil and half of the asparagus in a single layer.
  • Cook for 3 to 4 minutes without turning. Shake pan occasionally. Turn, and cook 3 minutes more. Asparagus should be bright green with brown spots.
  • Add 1 tablespoon shallots and half the sesame seeds, and cook, shaking the pan to toss asparagus, for 1 to 2 minutes or until shallots are transparent. Do not let them burn.
  • Add half the soy sauce, sesame oil, and pepper, and cook 30 seconds. Transfer to a plate, and keep warm. Repeat with remaining asparagus. Keep warm until ready to serve.

24 asparagus spears, trimmed
juice 1 lemon
85g butter , cut into small chunks
25g parmesan (or vegetarian alternative), finely grated
½ red chilli
1 tsp brown sugar
juice 1 lime
1 tbsp soy sauce
2 tbsp sesame oil
2 garlic cloves , crushed
5 tbsp good-quality mayonnaise
1 tbsp olive oil

Steps:

  • To make the Parmesan butter, tip the lemon juice into a small saucepan and, over a very low heat, add the butter. Melt and stir the butter into the lemon juice until you have a smooth sauce, add the Parmesan and season to taste, then set aside.
  • To make the Asian dressing, using a pestle and mortar, crush the chilli with the brown sugar, then stir in the lime juice until the sugar has dissolved. Stir through the soy sauce and sesame oil, then set aside.
  • For the garlic mayonnaise, mix all the ingredients together. Decant the sauces into 3 serving dishes.
  • Bring a large pan of water to the boil and cook the asparagus for 2-3 mins until just tender. Drain well and serve steaming hot in a pile for everyone to help themselves and dip into the sauce of their choice.

½ lb asparagus, fresh
1 tsp sunflower oil

1 lb boneless, skinless chicken breast(s)
1 tsp toasted sesame oil
1 clove garlic, minced
2 tsp rice vinegar
1 tbsp light tamari sauce
1 tsp sunflower oil
8 cups Romaine lettuce, shredded
2 cups green cabbage, shredded
1 carrot(s), medium, grated
2 cups orange peppers, thinly sliced
1 green onion(s), thinly sliced
12 sprigs chives, for garnish
3 tbsp sunflower oil
4 tsp rice vinegar
2 tsp water
¼ tsp ginger, ground
1 clove garlic, minced
2 tsp ketchup
2 tsp honey
1 tsp lemon juice
¼ tsp black pepper, freshly ground
½ tsp toasted sesame oil
½ tsp sesame seeds

Steps:

  • Cut chicken breasts into strips (6-8 pieces per breast). Place in shallow bowl. Add sesame oil, minced garlic, rice vinegar and tamari and turn pieces to coat. Marinate 1 hour in the refrigerator.
  • Trim tough ends from asparagus. Heat 1 tsp (5 mL) oil in non-stick skillet over medium-high heat. Add asparagus and sauté approximately five minutes until tender crisp. Roll the spears in the pan to coat with oil and encourage even cooking on all sides. Set aside to cool. Slice on an angle into ½ inch (1.25 cm) pieces.
  • Heat another teaspoon (5 mL) oil in pan asparagus was sautéed in. Add chicken strips and cook until lightly browned and cooked through (165°F (74°C)) - about 5 minutes per side. Pour over any remaining marinade during cooking. Boil and set aside to cool.
  • Shred romaine lettuce and cabbage and add to large salad bowl. Top with the grated carrot and slivers of orange pepper.
  • To make the dressing, measure sunflower oil, rice vinegar, water, ground ginger, garlic, ketchup, honey, lemon juice, freshly ground black pepper, sesame oil, sesame seeds and tamari into a blender or food processor. Process until smooth.
  • To serve, pile romaine salad high in centre of dinner plate. Garnish with sliced green onions and a few chive sprigs. Serve with sesame ginger dressing.

2 tablespoons soy sauce
2 teaspoons sugar

1 pound fairly thin pencil asparagus, ends trimmed, cut into 2-inch pieces

Steps:

  • Bring a large pot of water to a rolling boil. In a medium bowl, whisk together the sesame oil, white wine vinegar, soy sauce, and sugar. Set aside.
  • Prepare an ice bath: Fill a large bowl halfway with ice cubes and add some cold water. Place a colander squarely inside the ice bath. The colander will keep you from having to pick the asparagus out from amongst the ice cubes in the ice bath.
  • Add salt until the boiling water tastes like seawater. Add the asparagus to the boiling water and cook for 1 1/2 to 2 minutes - you want them to be crunchy. If the asparagus are thin, cook for only 1 minute. Remove the asparagus from the water with a strainer and transfer them to the colander inside the ice bath. Allow them to cool completely for a few minutes and then place them on a kitchen towel to drain any excess moisture.
  • Toss the asparagus, sesame seeds, and the sauce together and refrigerate for 1 hour, or until ready to serve.

4 tablespoons olive oil
1 teaspoon salt

Steps:

  • Preheat a grill.
  • Place asparagus on a plate. Drizzle oil over the asparagus and turn spears until they are coated. Sprinkle with salt and turn again.
  • Grill asparagus for 5 minutes over a hot grill. Each minute or so, roll each spear 1/4 turn. Asparagus should begin to brown in spots (indicating that the natural sugars are caramelizing) but should it not be allowed to char. Dripping oil may cause flare-ups. Keep a glass, or spray bottle of water handy to spritz on coals, if necessary.
  • Remove from grill and serve immediately (eating spears with your fingers enhances the experience).
