CHAYOTE SOUP
This recipe will fool you into thinking you're eating a cream-based soup. It's spicy, different, and really pretty. It's extremely versatile. Tastes best when it's made at least a day in advance.

Steps:
- Dissolve the bouillon in the hot water.
- Melt the butter in a large saucepan over medium heat. Cook and stir the onion, garlic, and red pepper in the butter until the onion is soft. Add the squash, 2 tablespoons cilantro, salt, and pepper and stir continually for 5 minutes. Stir in the bouillon mixture and 1 tablespoon cilantro; cover. Simmer about 20 minutes.
- Pour the mixture into a blender and puree until smooth. Pour into bowls and garnish with a sprig of cilantro to serve.

ASPARAGUS SOUP

- Add the butter to a large saucepan over medium heat to melt. Once foaming and melted, add the shallots and garlic and saute until tender, about 5 minutes. Add the red pepper flakes, cook until fragrant, and sprinkle with salt and pepper. Stir in the flour and cook until blonde and pasty. Gradually pour in the chicken broth while stirring. Bring the mixture to a boil, and then reduce to a simmer. Add the asparagus and simmer until it's nice and tender, about 15 minutes. Stir in the half-and-half. Remove from the heat and use a stick blender to puree the soup until smooth. Season with salt and pepper.
ASPARAGUS, CHAYOTE AND WHITE BEAN SOUP

- Peel and cube the squash. Trim the asparagus and cut into 1" lengths, reserving the tips. Heat oil in a large pot and sauté the onions over medium heat until soft, about 2 minutes. Try not to brown the onions. Add the garlic, sauté for 1 min, add the squash and asparagus stalks and sauté for 5 minutes more or until the squash just starts to soften. Add the chick stock, white beans, black pepper and Serrano chile and simmer for 10 minutes. Add the asparagus tips during the last 3 minutes of cooking. Serve with lemon wedges, parmesan and cracked black pepper. The Serrano chile will add just a touch of heat to the broth, but it adds a bright red contrast to the otherwise pale green vegetables. Your guests should be warned - the chile is here for looks and flavor, not for eating!
WHITE BEAN AND ASPARAGUS SALAD

- Mix one 15-ounce can cannellini beans (drained and rinsed) with 1 grated garlic clove, 1/4 cup olive oil and 2 tablespoons tarragon vinegar or white wine vinegar in a large bowl; let stand 15 minutes. Shave 1 bunch trimmed jumbo asparagus into ribbons with a vegetable peeler. Add to the bowl along with 1 tablespoon chopped tarragon and another 1 teaspoon vinegar; season with salt and pepper and toss. Toast 3 tablespoons panko in 1 tablespoon olive oil in a skillet; sprinkle over the salad.

LEMONY PASTA WITH ASPARAGUS AND WHITE BEANS
Marinating canned white beans in lemon juice and zest, along with red-pepper flakes and shallots, imbues them with brightness and a touch of heat, adding so much flavor to this warm-weather pasta. It's dead simple to make: While the pasta cooks and the beans marinate, sauté the asparagus in olive oil, then use that pan to finish the dish. There's enough asparagus in the mix to make this a one-pan meal, but serving it with a crisp green salad on the side will add a little crunch and freshness.

- Grate the zest from the lemon into a small bowl. Halve the lemon and squeeze the juice from half of it on top of the zest. Add the white beans, shallot or onion, grated garlic, red-pepper flakes and a large pinch of salt and toss well. Drizzle in 1 tablespoon olive oil and set aside.
- Bring a large pot of heavily salted water to a boil. Add pasta and cook until just shy of al dente, usually 2 minutes less than the package directs.
- Meanwhile, heat a 12-inch sauté pan over medium-high heat. When hot, add the remaining 3 tablespoons oil, then add the asparagus. Sauté until the asparagus is tender and starting to brown at the edges, 7 to 10 minutes. Add a big pinch of salt and the sliced garlic and sauté until the garlic is lightly golden, 1 to 2 minutes longer.
- Dip a coffee mug or glass measuring cup into the pasta water and scoop out about 1/2 cup of it to use for the sauce. Drain pasta, shaking it well. Add pasta, bean mixture, parsley and Parmesan to sauté pan and cook until the beans are hot and the pasta is al dente. If the mixture looks dry, splash in some (or all) of the reserved pasta water. Squeeze remaining lemon half over pasta, toss and taste. Season with pepper; add more salt, red-pepper flakes and lemon juice, if desired.

- Melt butter in large skillet over medium heat.
- Add onion and celery and cook, stirring, until tender but not browned, about 8 minutes.

- In a saute pan, cover the asparagus with salted water and boil until just tender (they begin to turn bright green). Immediately remove the asparagus from heat a place in an ice bath. Drain and combine asparagus, beans and red pepper.

- Remove 1 puff pastry sheet from the freezer and let it defrost on the counter for 40 minutes on top of parchment paper. Meanwhile, preheat the oven to 400º F and make the filling.
- Drain and rinse the beans, and add them to the work bowl of a food processor. Add of the remaining ingredients except the soymilk (salt through lemon juice). Pulse the food processor, stopping ever few pulses to scrape down the sides and pulse again. You want to break up the beans and the cashews. Once it's as smooth as you can get it, dribble in the soymilk while the machine is running, as this should help further smooth the mixture.
- After 40 minutes of defrosting, carefully unwrap the puff pastry on top of your parchment paper.
- Roll the puff pastry out slightly into a rectangle. Then add the white bean pesto mixture, leaving a 1 to 1 1/2 inch border on all sides.
- Trim your asparagus so that it fits the tart width-wise. Press the spears into the white bean pesto, alternating their direction so that there are tips and bases next to each other; this one everyone is guaranteed every part of the asparagus after cutting.
- With a sharp knife, trim all the edges to they are neat and square. Trim away as little as possible.
- Brush the spears with olive oil and sprinkle lightly with salt and pepper.
- Using the parchment paper, slide the tart onto a baking sheet (don't remove the tart from the paper). Bake at 400ºF for 25-30 minutes until the tart is puffed and golden brown and the spears are tender. Serve while just warm.
- You can reheat this tart in the oven for a few minutes if you have leftovers, but it's also good at room temperature. Fresh basil is a nice garnish. If you've never worked with puff pastry before, this is a great recipe to get your feet wet. It really is easy to use, just as delicious as phyllo dough with none of the stress. And it's fun to watch it puff!

- To a large stockpot fitted with a steamer basket, add 1 to 2 inches (2.5 to 5 cm) of water.
