For the bean dip:
2 15.4 ounce cans BUSH'S Southwestern Style Pinto Beans™
⅓ cup enchilada sauce or your favorite salsa (mild or medium)
½ tablespoon olive oil
½ yellow onion, finely diced
1 orange bell pepper, diced
¾ cup fresh or frozen sweet corn
1 ½ cup shredded Mexican blend cheese
For garnish:
1 jalapeno, sliced
½ avocado, sliced
2 tablespoons diced cilantro
A few sliced cherry or grape tomatoes
Cotija or feta cheese
Lime wedges
For serving:
Tortilla chips

Steps:

  • Preheat oven to 350 degrees Grease a 9x9 inch pan with oil or cooking spray. Set aside.
  • Add one can of BUSH'S Southwestern Style Pinto Beans™ and 1/3 cup enchilada sauce or salsa to a blender or food processor and process/blend until smooth. Pour it into prepared pan. Stir in the remaining beans from the other can.
  • Add olive oil to a large skillet and place over medium heat. Add diced onion, bell pepper and corn and saute for 3-5 minutes until onion and peppers cook down a bit. Add mixture to the pan with the beans.
  • Gently stir all the ingredients in the pan together so that they are well incorporated. Add shredded cheese on top, then cover with foil and bake for 20-25 minutes until bean dip is bubbling along the edges and cheese is nice and melted. Garnish with jalapeno slices, avocado slices, cilantro, sliced cherry tomatoes and crumbled cheese. Serve immediately with tortilla chips for dipping. Serves 10.

Cheesy hot bean dip is a hit for any occasion. This easy recipe can be made in the oven or in the crock-pot!

30-32 ounce can of refried beans
1 1/2 cups sour cream
8 ounces cream cheese, cut into 8 chunks
1/4 cup taco seasoning
3 cups shredded cheddar cheese, divided

Steps:

  • Combine the beans, sour cream, cream cheese, and taco seasoning in a slow cooker and stir to combine. Cover with a lid and cook on LOW for 3-4 hours or on HIGH for 1 1/2 - 2 hours.
  • Stir well and make sure the cream cheese has melted and is mixed throughout. Add half of the shredded cheese and stir again. Top with the remaining cheese and cover with lid. Cook an additional 30-60 minutes until the cheese has melted and the edges are bubbling.
  • Serve warm with plenty of tortilla chips. Top with chopped lettuce, tomatoes, and olives, if desired before serving.
  • Preheat oven to 350°F. Combine the beans and cream cheese in a large mixing bowl and stir until well-combined. Add the sour cream and taco seasoning and stir again. Add half the cheese and stir once more.
  • Transfer to a 2-quart baking dish or an 8-inch square pan. Top with the remaining cheese. Bake for 25-30 minutes until the cheese has melted and the edges are bubbling.

1 (10 ounce) can diced tomatoes with green chile peppers, drained
1 (10.5 ounce) can condensed Cheddar cheese soup
½ cup shredded Colby-Jack cheese
1 tablespoon taco seasoning mix
1 pinch cayenne pepper, or to taste

Steps:

  • Combine beans and tomatoes with chile peppers in a medium saucepan over medium-low heat. Cook, stirring occasionally, until warm, about 5 minutes. Mash most of the beans with the back of a spoon while stirring.
  • Stir in condensed soup until fully combined. Add Colby-Jack cheese and taco seasoning; cook until cheese has melted. Add cayenne and cook until warm, about 5 more minutes.

1 teaspoon lemon juice

  • Blend in the sour cream, mixing until smooth.

  • Pour pinto beans into a colander or strainer and allow to sit for a few minutes. DON'T RINSE them--our goal is to remove some of the liquid but not all of it.
  • Transfer beans to a large mixing bowl. Use a potato masher or some forks to mash the mixture until relatively smooth, with some chunks. Add the cream cheese and mash some more, until combined. Stir in the sour cream, taco seasoning, salsa, and 1/4 cup shredded cheese.
