ASIAN-INSPIRED SHEPHERD'S PIE

Asian-Inspired Shepherd's Pie image

In the English tradition, a cook uses leftover beef or lamb from last night's roast to make this hearty casserole. For the most basic shepherd's pie, you sauté some fresh vegetables, add in meat taken off the bone, and then add any jus or gravy to thicken up the filling and make it a little saucy. You put this filling into an oven-safe casserole dish, top it off with mashed potatoes, dot with butter, and bake until the topping gets a nice roasted brown hue. What you don't know about shepherd's pie is that it is the perfect dish in which to use those Thanksgiving leftovers because there is no set recipe. Your shepherd's pie is based on what's available in the fridge the morning after Turkey Day. Personally, I like to go with very traditional flavors on Thanksgiving, and then go a little cross-cultural with the leftovers. So here is an Asian-inspired take on Shepherd's pie.

Time 44m59S

Yield 8

Number Of Ingredients 16

1/2 cup diced carrots
1/2 cup diced celery
1/2 cup diced onion
1/2 cup diced green onion
4 cloves of garlic, minced
1 cup shiitake mushrooms, sliced in half
1 cup shelled edamame
1/2 cup dry white wine
1 pound leftover turkey meat, off the bone, pulled apart or chopped
4 cup gravy
1/8 cup soy sauce
1 tablespoon sesame oil
6 cup mashed potatoes or mashed japanese sweet potatoes
2 tablespoon olive oil
crumbled nori or toasted sesame seeds, for garnish
salt and pepper, to taste

Steps:

  • Preheat the oven to 450 degrees.
  • Lightly sauté the vegetables together in a medium-sized pot. When they are gently cooked, add the wine to deglaze and cook them until the alcohol smell wears off. Now, fold in the turkey meat and add the gravy, soy sauce, and sesame oil. Taste the mixture for proper seasoning.
  • Spoon the filling into a 12-by-8-inch casserole dish. Top it off with the mashed potatoes (or sweet potatoes) and use a spatula to even it out on top. If you would like to increase the amount of crispiness, drag a fork across the topping to create more grooves. Dot with butter if you like.
  • Bake for 30 minutes. If you have a convection oven, turn on the fan. If the top is not as brown as you would like at the end of 30 minutes, use the broiler option to get a good crust. However, keep an eye on it to make sure it does not burn.
  • Once you get the casserole to a desired look, let it sit for at least 15 minutes before serving.

VEGAN SHEPHERD'S PIE

Vegan Shepherd's Pie image

Whether you are sticking to meatless Mondays or eat plant-based every day, this vegan version of shepherd's pie will satisfy any cravings for that warming winter classic. It looks just like the meat version and tastes just as good. We streamlined the process (including using frozen peas and carrots and baking the pie in the same skillet used to cook the vegetables) to make the dish as accessible and weeknight-friendly as possible. Note that although a food processor chops the mushrooms really fast, you can use a knife, if you prefer.

Provided by Food Network Kitchen

Time 55m

Yield 4 servings

Number Of Ingredients 11

1 1/2 pounds small creamer potatoes
8 cloves garlic
Kosher salt
1/3 cup plus 2 tablespoons olive oil
1/4 cup chopped chives
Freshly ground black pepper
1 pound cremini mushrooms, quartered
1/4 cup tomato paste
2 tablespoons fresh rosemary leaves, chopped
1 1/4 cups vegetable or mushroom broth
One 10-ounce bag frozen peas and carrots

Steps:

  • Preheat the oven to 425 degrees F.
  • Combine the potatoes and garlic in a medium saucepan and cover with 2 inches of water. Season generously with salt and bring to a boil over high heat, then reduce to a simmer. Cook until the potatoes are tender, about 20 minutes. Reserve 1 cup of the cooking water and then drain the potatoes. Return the potatoes and garlic to the saucepan and mash with a potato masher. Add 1/2 cup of the cooking water and the 1/3 cup olive oil and stir to combine. If needed, stir in more water until the potatoes are a spreadable consistency. Stir in the chives and season to taste with salt and pepper. Cover and set the mashed potatoes aside.
  • Pulse the mushrooms in a food processor until coarsely chopped. Heat the 2 tablespoons olive oil in a medium skillet over medium high heat until shimmering. Add the mushrooms, 1 teaspoon salt and several grinds of pepper and cook until all the moisture from the mushrooms has evaporated, about 8 minutes. Stir in the tomato paste and rosemary and cook, stirring occasionally, until the tomato paste is a bit darker, about 3 minutes. Stir in the broth, followed by the peas and carrots and bring to a simmer, about 4 minutes.
  • Remove from the heat, dollop all over with the mashed potatoes and spread the potatoes into an even layer with the back of a spoon or a spatula. Bake until golden on top and bubbling around the edges, about 25 minutes.
