GOAT CHEESE PEAR SALAD



Goat Cheese Pear Salad image

Number Of Ingredients 11

2/3 cup fresh goat cheese, crumbled
12 cups mesclun loosely packed
1 Bosc pear quartered lengthwise, remove core, slice to 1/8-inch thick
1/4 cup olive oil
1/3 cup diced pancetta, about 1/4-inch squares
1/2 teaspoon chopped garlic
2 tablespoons tomato concasse
2 tablespoons chopped parsley
1 tablespoon plus 4 teaspoons zin vinegar
Salt and pepper
4 teaspoons toasted pine nuts

Steps:

  • Place the goat cheese, mesclun and pear in a large mixing bowl. Heat the oil and pancetta in a medium saute pan on high heat until the pancetta just starts to brown. Remove from heat. Add the garlic and quickly shake the pan until the garlic starts to brown. Add the tomato and parsley and combine well. Add the zin vinegar and season with salt and pepper. Return to high heat and boil. Pour the vinaigrette over the mesclun mixture and toss well. Sprinkle with pine nuts.

6 cups torn salad greens or chopped romaine
1/2 cup reduced-calorie, fat-free or regular blue cheese salad dressing
1 1/4 cups cooked chicken strips
1 medium yellow or green bell pepper, thinly sliced
1 can (15 oz.) Del Monte® Lite Sliced Pears, drained
(Optional) 1 oz. crumbled blue cheese (about 1/4 cup total)
(Optional) coarsely ground black pepper
(Optional) chopped walnuts

Steps:

  • 1. Arrange equal amounts of the salad greens on each of 4 dinner plates.
  • 2. Spoon equal amounts of the dressing evenly over all.
  • 3. Top with the chicken, onions and pears. Sprinkle evenly with the blue cheese and black pepper, if desired.
  • For additional flavor and texture: Add 1/2 cup dried cranberries or unsweetened cherries on top with 2 ounces thinly sliced red onion (about 1/2 cup).
  • For a lighter version: Use reduced fat blue cheese and fat-free dressing.

2 boneless skinless chicken breasts, grilled and cut into bite-size pieces
2 ripe pears, cored and sliced
fresh ground black pepper
bleu cheese salad dressing

Steps:

  • In a large salad bowl combine the greens, chicken and salad dressing.
  • Toss gently to coat.
  • Divide among 4 chilled, individual plates.
  • Arrange pear slices on top of salad.
  • Sprinkle with fresh ground black pepper.

I found this recipe in a book called Cook This Not That. It is supposed to be a lower calorie version of California Pizza Kitchen Field Greens Salad

4 ounces goat cheese (log)
1 cup breadcrumbs
1 teaspoon thyme, dried (or Italian seasonings)
salt
pepper
1 egg, lightly beaten
1/4 cup walnuts
16 cups mixed salad greens (or arugula)
1/4 cup balsamic vinaigrette (or to taste)
1 pear, peeled, cored and sliced

Steps:

  • Slice the goat cheese into four 1/2" disks. If the cheese crumbles, use your hands to form it back into a disk. Pour the bread crumbs onto a plate and toss with the thyme and a pinch each of salt and pepper.
  • Dip the goat cheese into the egg, then into the crumb mixture, turning to coat evenly. Place the disks on a plate and into the freezer for 15 minutes to firm up.
  • Preheat oven to 450 degrees. Place the goat cheese on a baking sheet coated with cooking spray and bake for 10 minutes, until the cheese is soft and the crumbs are toasted. Remove. While the oven is still hot, toast the walnuts for 5 minutes.
  • Toss the lettuce with the vinaigrette and pear. Divide between 4 plates. Top with walnuts and goat cheese.

Grilled Chicken and Goat Cheese Salad image

Prepare this delicious meal-sized salad for up to 6 people. It does take more work than your typical salad, but is worth it in the end. Your dinner guests will be impressed with your cooking skills-and will love that you're serving healthy food!

6 chicken breast halves, boned, with skin and wing bones attached (if possible)
12 ounces creamy white goat cheese, cut into 1/4 inch medallions
1 pinch salt, to taste
1 pinch fresh ground pepper, to taste
3 red bell peppers, cut into 3/4 to 1 inch strips
3 yellow bell peppers, cut into 3/4 to 1 inch strips
1 large vidalia onions or 1 large sweet red onion, cut into thin slices
2 tablespoons extra virgin olive oil
3 heads mache, torn into bite-sized pieces
2 bunches arugula, torn into bite sized pieces
2 heads red-leaf lettuce, torn into bite sized pieces
1 head radicchio, separated into leaves
1 cup tomatoes, roughly chopped
1 cup balsamic vinaigrette

Steps:

  • 1. Preheat grill or broiler. With your finger, gently make a pocket between the skin and meat of each chicken breast. Insert the goat cheese medallions into the pockets, overlapping as necessary. Sprinkle the chicken with salt and ground pepper. Brush bell peppers and onion with olive oil. Sprinkle with salt and ground pepper, set aside.
  • 2. Place chicken on grill rack, skin sides up, over medium heat. Grill for 3-5 minutes, or until browned. Turn chicken over; grill for 5 to 7 minutes more. Add bell peppers and onion to grill. Grill about 1 minute or until chicken is done and vegetables are heated through and slightly charred, turning once. (OR broil chicken and vegetables 4 to 5 inches from heat.).
  • 3. Arrange mache, arugula, lettuce and radicchio on 6 plates. Cut each chicken breast into 4 slices and place on plates. Add tomato concasse/chopped tomatoes, grilled peppers, and onions to plates. Drizzle vinaigrette over vegetables. Spoon salsa over chicken. Sprinkle with chives.
  • 4. Serve with Jalapeno-Cilantro-Lime Salsa. Recipe posted on this site.

1/4 cup pecans (about 1 ounce)
3 -4 cups salad greens, torn
4 bartlett pears
2 ounces goat cheese or 2 ounces chevre cheese
2 tablespoons balsamic vinegar
1 teaspoon sugar
1 tablespoon olive oil

Steps:

  • In a small skillet, dry roasted pecans over medium heat for 1 to 5 minutes; stirring frequently. Finely chop.
  • Meanwhile, arrange ½ cup salad greens on each of eight plates; set aside.
  • Cut pears in half lengthwise. With a melon baler, remove seeds and make a small, round cavity in each pear half.
  • Cut cheese into eight pieces; shape each into a ball. Roll in pecans and place one in each pear cavity. Arrange pears on lettuce.
  • Pour vinegar into a small bowl; add sugar, whisking until dissolved.
  • Add oil in a fine stream, whisking constantly until smooth. Drizzle evenly over pears; sprinkle with any remaining pecans.
