Steps:
- Adjust oven rack to just below the middle of the oven and preheat to 350 F.
- Dice onion, bell pepper and jalapenos. If you include the seeds of the jalapenos, beans will have more spice.
- Cut bacon into pieces about ½" - 1" long. Stirring enough to make sure the bacon does not burn, fry over medium-high heat in a cast iron skillet or other heavy frying pan until the bacon is about half way cooked. Do not discard bacon fat. Use a slotted spoon to remove bacon chunks and pile on paper towels to drain.
- Add the diced onion, bell pepper and jalapenos to the bacon grease in the frying pan. Continue to fry over medium-high heat stirring frequently for 2-3 minutes until the veggies have softened.
- Meanwhile open the cans of beans and drain up to 1" of liquid off the top of each can. Pour the remainder of the beans and liquid into a large mixing bowl.
- Add the barbecue sauce, brown sugar, liquid smoke and black pepper. Add the veggies when they are done.
- Gently fold the mixture together with a rubber spatula until it is thoroughly mixed. Pour it into a 9"x13" casserole dish or equivalent pan. Scatter the bacon over the top.
- Bake 1-2 hours until the sauce is the thickness of syrup (cooking time is up to your personal taste). After baking let stand for 10 minutes before serving.

BAKED BEANS WITH A KICK
Found online, these baked beans are really simple to make, and have a lovely balance of flavors. The bacon adds texture and a savoury sweet deliciousness. Since these beans are cooked uncovered, everything gets caramelized and the beans are not mush. Since every oven is different, check your beans at an hour and a half.

BAKED BEANS
Steps:
- Preheat the oven to 325 degrees F.
- Put a heavy-bottomed pot (with a lid) over medium-high heat. Add the bacon and cook, stirring often, until the fat renders and bacon begins to crisp, about 6-8 minutes. Add the onion and cook until softened, about 5 minutes more. Stir in the ketchup, tomato puree, brown sugar, vinegar, Worcestershire, salt, pepper, and cayenne and mix well. Bring to a simmer and cook for 5 minutes. Stir in the beans until well coated, cover, and bake in the oven for 1 hour. Remove the lid and continue baking until sauce thickens and the beans begin to brown, about 15 minutes more. Remove from the oven and allow to cool at least 15 minutes before serving.
- Serve warm or at room temperature.

SWEET AND SOUR BAKED BEANS - WITH A KICK
When the weather turns cold, there is nothing nicer then a bowl of something hot to warm your soul. Packed with protein, loaded with flavour, and very economical. May be served as a side dish, or by itself with a hunk of fresh bread. Don't want to waste that sauce. Created for the 2010 Dining on a Dollar Contest. Update: Nov 10/10 - Based on the reviews made during the contest, I have reduced the amount of vinegar by half in the ingredient list. It certainly would be easier to add extra vinegar, then try to reduce it. If there's another 'Vinegar Freak' out there, the original amount was 3 tbsp. :) Thanks to the chefs that made and reviewed the recipe.

Steps:
- Place the navy beans into a large container and cover with several inches of cool water; let stand 8 hours to overnight. Or, bring the beans and water to a boil in a large pot over high heat. Once boiling, turn off the heat, cover, and let stand 1 hour. Drain and rinse before using.
- Place the beans in a large saucepan with 4 cups of water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer 1 hour.
- Preheat an oven to 375 degrees F (190 degrees C). Stir the ketchup, maple syrup, brown sugar, molasses, Worcestershire sauce, salt, pepper, and chili powder together in a small bowl; set aside.
- Once the beans have simmered for 1 hour, drain, and reserve the cooking liquid. Pour the beans into a 1 1/2 quart casserole dish and stir in the chopped onion and the molasses sauce. Stir in enough of the reserved cooking liquid so the sauce covers the beans by 1/4 inch.
- Cover, and bake in the preheated oven for 10 minutes, then reduce the heat to 200 degrees F (95 degrees C), and cook 6 hours longer. Stir the beans after they have cooked for 3 hours. Once the beans are tender and the sauce has reduced and is sticky, remove from the oven, stir, recover, and allow to stand 15 minutes before serving.
