CRISPY SHREDDED DUCK AND NOODLE SALAD

Crispy Shredded Duck and Noodle Salad image

It's important to use large lettuce leaves (about 6 inches) for this salad, so you may need to buy 2 heads of lettuce in order to get 6 good leaves. Active time: 45 min Start to finish: 45 min

Yield Makes 6 first-course servings

Number Of Ingredients 15

2 ounces dried rice-stick noodles (rice vermicelli)
1 1/2 tablespoons rice vinegar (not seasoned)
1 1/2 teaspoons sugar
1/4 teaspoon salt
1/4 cup plus 1 tablespoon vegetable oil
2 (6- to 7-ounce) confit duck legs, meat (with skin attached) removed from bone in large pieces
1 large shallot, thinly sliced crosswise and separated into rings (1/3 cup)
1 (6-inch) piece seedless cucumber (usually plastic-wrapped), peeled
1 firm-ripe medium peach or nectarine, halved lengthwise and pitted
6 large Boston lettuce leaves
24 fresh mint leaves
24 fresh cilantro leaves
18 Thai basil leaves or small Italian basil leaves
Accompaniment: sweet chile dipping sauce and/or nuoc cham
a Japanese Benriner or other adjustable-blade slicer

Steps:

  • Cook noodles in a 4-quart pot of boiling salted water until just tender, 2 to 3 minutes. Drain in a colander, then rinse under cold water and drain well. Stir together vinegar, sugar, and salt in a bowl until sugar is dissolved, then add noodles and toss well.
  • Heat 1 tablespoon oil in a 10- to 12-inch heavy skillet over moderately high heat until hot but not smoking, then sauté duck pieces, starting with skin sides down and turning occasionally, until skin and meat are crisp, 3 to 5 minutes. Transfer with tongs to a cutting board. (Do not clean skillet.)
  • When duck is cool enough to handle, remove crisp skin from meat and thinly slice skin. Remove and discard any excess fat from meat, then shred meat into 1/4-inch-wide pieces.
  • Heat remaining 1/4 cup oil in skillet over moderately high heat until hot but not smoking, then fry shallot, stirring occasionally, until golden brown, about 2 minutes (watch closely, as shallot can burn easily). Quickly transfer with a slotted spoon to paper towels to drain.
  • Working around core of cucumber, cut thin lengthwise slices (about 1/8 inch thick) with slicer, then stack slices. Halve stack crosswise, then cut slices lengthwise into 1/4-inch-wide matchsticks.
  • Cut each peach half lengthwise into 1/8-inch-thick wedges with slicer or a sharp knife.
  • Put 1 lettuce leaf on each of 6 plates, then divide noodles among leaves and top with duck (meat and skin), cucumber, peach, shallot, and herbs. To eat, roll lettuce leaf into a cylinder to enclose filling.

Sticky stem ginger duck & noodle salad image

This Asian style salad with vermicelli rice noodles and crunchy veg makes a light weeknight dinner - pack leftovers for lunch the next day

Provided by Cassie Best

Categories     Dinner, Lunch, Main course

Time 1h

Number Of Ingredients 10

5 balls stem ginger , finely grated, plus 3 tbsp syrup from the jar
3 tbsp low-sodium soy sauce
zest and juice 4 limes , plus 1 cut into wedges to serve
2 duck legs , skin removed
200g pack sugar snap peas
140g vermicelli rice noodles
300g bag beansprouts
200g pack radishes , sliced
small pack mint , leaves picked
1 fat red chilli , deseeded & thinly sliced

Steps:

  • Heat oven to 220C/200C fan/gas 7. In a small bowl, mix the stem ginger, 1 tbsp soy and the juice and zest 1 lime. Put the duck on a foil-lined baking tray, scrunch up the sides of the foil around the duck, then pour over the marinade. Bake for 45 mins, turning the duck over halfway through cooking.
  • Meanwhile, bring a large pan of water to the boil. Add the sugar snap peas and boil for 30 secs, then scoop out (don't drain the water), then transfer to a colander and run under cold water until cool. Bring the water back to the boil and cook the rice noodles following pack instructions. Meanwhile, slice the sugar snap peas on the diagonal.
  • When the noodles are cooked, drain well. Put in a large bowl, add the remaining soy, the stem ginger syrup, lime zest and juice, cooled sugar snap peas, beansprouts, radishes, mint and chilli. Shred the duck and add this, along with any juices collected in the foil. Toss everything together, then serve.

Warm Duck Salad image

Provided by Ina Garten

Categories     main-dish

Time 35m

Yield 4 to 6 servings

Number Of Ingredients 11

2 boneless duck breasts, skin on (about 12 to 14 ounces each)
Kosher salt
1 tablespoon minced shallots
2 1/2 tablespoons good sherry vinegar
1 teaspoon grated orange zest
1/2 cup good olive oil
3 heads Belgian endive
3 ounces mache or other delicate baby lettuce
Navel oranges, peeled, cut in 1/2, and sliced
1/2 pint fresh raspberries
1 cup toasted whole pecan halves

Steps:

  • Preheat the oven to 400 degrees F.
  • Place the duck breasts on a sheet pan, skin side up. Sprinkle with salt and roast for about 20 minutes, until medium-rare. Remove from the oven, cover tightly with aluminum foil, and allow to sit for 10 to 15 minutes. Remove and discard the fat and skin on top (unless you're making cracklings), slice the duck, and then cut the slices crosswise into julienned pieces.
  • Meanwhile, in a small bowl, combine the shallots, sherry vinegar, orange zest, and 1 1/2 teaspoons of salt. Whisk in the olive oil and set aside.
  • For the salad, trim the bottom half-inch from the endive and cut them diagonally into 1/2-inch slices. Separate the leaves and discard the cores. Place the slices in a large salad bowl. Add the mache leaves, oranges, raspberries, and toasted pecans. Toss with enough dressing to moisten. Gently toss in the warm duck meat and serve immediately.

DUCK SALAD

Duck Salad image

Provided by Florence Fabricant

Categories     salads and dressings

Time 3h25m

Yield 6 servings

Number Of Ingredients 12

1 Long Island duckling, 4 1/2 to 5 pounds
1 8-ounce package Japanese buckwheat noodles (soba)
1/3 cup peanut oil
Salt and freshly ground black pepper
1 large sweet yellow pepper
4 scallions, chopped
1 cucumber, peeled, seeded and cut into julliene slivers
2 tablespoons minced fresh coriander
2 tablespoons Oriental sesame oil
Juice of 2 lemons
1 tablespoon light soy sauce
2 bunches watercress

Steps:

  • Roast the duck according to the directions in the recipe for Basic Roast Duck, through Step 5. Remove the duck from the oven and allow to cool.
  • Boil the noodles until just done, about five minutes. Drain, rinse in cold water and allow to drain again. When thoroughly drained, toss the noodles with two tablespoons of the peanut oil and season lightly with salt and pepper.
  • Roast the pepper by turning it over a gas flame or placing it under a broiler until the skin has blackened. Place the pepper in a plastic or paper bag for about 10 minutes to steam off the charred skin. Remove the skin, seed the pepper and cut it in slivers. Toss the noodles with the pepper, scallions, cucumber and coriander.
  • Remove the duck skin from the duck and reserve. Pull the meat of the duck off the bones.
  • Dice the duck skin and fry the pieces in a skillet until crisp. Allow to drain on absorbent paper.
  • Combine the remaining peanut oil, the sesame oil, lemon juice and soy sauce. Beat until well-blended.
  • Arrange the watercress on each of six plates. Toss the noodles with about half the sauce and arrange atop the watercress on each plate. Arrange the duck pieces on the noodles and sprinkle with the rest of the sauce. Scatter the bits of fried duck skin on top and serve.

DUCK, WATERMELON & HERB SALAD WITH ROAST CASHEWS

Duck, watermelon & herb salad with roast cashews image

The sour element in this recipe really cuts through the rich duck meat and cashews

Provided by John Torode

Categories     Dinner, Lunch, Main course

Time 50m

Number Of Ingredients 13

4 medium duck breasts , skin on
2 cos or Ruby gem lettuces
150g bag radishes , thinly sliced
3 spring onions , cut into long strips
2 pink grapefruit , segmented
400g watermelon , cut into thumb-size chunks
good handful each mint, coriander and Thai basil, leaves picked
100g bag roasted salted cashews , roughly chopped
1 red and 1 green bird's-eye chilli , deseeded and chopped
2 tbsp fish sauce
2 tbsp lime juice
2 tbsp palm sugar or light muscovado sugar
1 tbsp tamarind paste (see tip, below)

Steps:

  • Place the duck breasts, skin-side up, on a board. Score the skin all the way through, cutting down to, but not into, the flesh. Make sure you score all the way to the edges. This will ensure the skin doesn't pull the flesh in as it shrinks.
  • Season the skin with a generous amount of salt and freshly ground black pepper. Place the duck, skin-side down, in a solid heavy-based cold pan, then put the pan over a medium heat. Now do not touch anything, do not move the pan. What will happen over the next 10-12 mins is that the fat under the skin will slowly melt, then the skin will brown and go crisp. Once all the fat has run from the skin, there will be a good 1-2cm of duck fat in the pan. Spoon off the excess fat, season the flesh side now (not before), then turn the duck over. Cook for 2 mins, then increase the temperature to full for just 1 min. Take off the heat, then leave in the pan to rest for 5 mins.
  • For the dressing, put all the ingredients into a small food processor and whizz. Remove the 2 outer leaves from each head of lettuce and discard, then peel the leaves away, one at a time. Lay them out on a big serving plate.
  • Thinly slice the duck, then toss with the radishes, spring onions, grapefruit, watermelon, herbs and some of the dressing. Spread over the leaves and scatter the nuts over the top. Drizzle more dressing over and serve.
