½ white cabbage , finely shredded
2 carrots , grated
2cm/¾in piece fresh ginger , peeled and grated
1 red chilli (seeds removed if you like), chopped
zest and juice 2 limes
1 tbsp toasted sesame seeds
sunflower oil
a little light muscovado sugar

Steps:

  • Very simply, you just mix the cabbage, carrots, ginger, chilli, lime zest and juice, the sesame seeds and oils with salt, then add a little sugar to taste. It will keep in the fridge for up to a couple of days.

2 tbsp rice vinegar (*1)
1/2 tbsp soy sauce (*2)
1/2 tbsp mirin (*3)
1 tbsp honey
1/2 tsp grated ginger
1/2 tbsp olive oil
1/2 tbsp sesame seeds oil
1/2 tbsp sesame seeds
50 g red cabbage
50 g green cabbage
50 g Napa cabbage
1/2 carrot
1 scallion
1/4 cup edamame (frozen) (*without pods)
Watercress to garnish (*4)
2 tbsp fried noodle to garnish (*5)

Steps:

  • Combine all ingredients and set aside.
  • Finely shred red cabbage, green cabbage, napa cabbage, and carrot.
  • Chop scallion finely and set aside.
  • Wash the shredded vegetables in a large mixing bowl under running water.
  • Drain the water with a colander.
  • Place the shredded vegetables in a salad spin and remove excess water as much as you can.
  • Toss the vegetables into a serving dish.
  • Scatter the edamame and garnish with watercress and fried noodle pieces.
  • Dress with the sesame and soy dressings to serve.

1 carrot
1/4 cup plain rice vinegar (or plain white vinegar)
1 tablespoon sesame seed oil

Steps:

  • In a small bowl, dissolve sugar in vinegar. Add the oils.
  • Thin slice the cabbage and shred the carrot. Mix together. Then add the dressing and mix to coat. Cover bowl and refrigerate.
  • This slaw is best made several hours ahead of time, or the previous day, to give the flavors time to blend.

¼ cup honey
¼ cup vegetable oil
¼ cup unseasoned rice vinegar
1 tablespoon soy sauce
1 teaspoon Asian sesame oil
1 tablespoon peanut butter (I like Skippy Natural No Need to Stir)
Heaping ½ teaspoon salt
1 teaspoon Sriracha sauce (optional)
1 tablespoon minced fresh ginger
1 large garlic clove, minced
4 cups prepared shredded coleslaw
2 cups prepared shredded carrots
1 red bell pepper, thinly sliced into bite-sized pieces
1 cup cooked and shelled edamame
2 medium scallions, finely sliced
½ cup chopped salted peanuts (or you can leave them whole)
½ cup loosely packed chopped fresh cilantro

Steps:

  • In a medium bowl, whisk together all of the ingredients for the dressing (be sure the peanut butter is dissolved). Set aside.
  • Combine all of the slaw ingredients in a large mixing bowl. Add the dressing and and toss well. Let the slaw sit for at least ten minutes so the vegetables have a chance to soak up the dressing. Taste and adjust seasoning if necessary (I usually add a bit more salt.) Serve cold. This slaw is best served fresh but leftovers will keep in a covered container in the refrigerator for a few days.
  • Make-Ahead Instructions: The dressing can be prepared up to 2 days ahead of time; store in a covered container in the refrigerator.

2 small carrots, julienned
1 small red onion, finely sliced
2 tsp salt flakes
½ cup malt vinegar
¼ cup white sugar
1 small cucumber cut in half lengthways, de-seeded and finely sliced on the diagonal
½ cup shredded Chinese white cabbage (about two leaves)
½ cup bean sprouts
3 spring onions trimmed, julienned
2 tbsp light soy sauce or tamari
2 tbsp lemon juice
handful sweet Thai basil leaves
handful coriander leaves
handful dill sprigs
handful mint leaves

Steps:

  • Place carrot, onion and salt in a glass or ceramic bowl, mix well. Set aside for 30 minutes. Combine vinegar and sugar in a small heavy-based pan and stir over medium heat until sugar dissolves. Simmer, uncovered without stirring, for about eight minutes, or until reduced and slightly syrupy. Set aside to cool. Drain carrot and onion and, using your hands, gently squeeze out any excess liquid. Place carrot and onion in the cooled syrup to pickle them lightly. Combine pickled carrot and onion and syrup with remaining coleslaw ingredients, adjust seasoning if necessary, toss well and arrange on a serving plate. Serve with Mumma Kwong's roast chicken.

I always like to have a few salads at my BBQ to balance out the heavier stuff. Cole slaw is one of the classics, and I love it, but I like to make it my own by mixing in a few Asian flavors. I use the pre-shredded coleslaw mix that comes in bags at the supermarket or for red and green shredded cabbage packaged separately. And then I dress it up with some other fresh ingredients to make an outstanding and different kind of slaw.

1 bunch (6 large) scallions, trimmed and thinly sliced
2 (16-ounce) bags coleslaw mix or 1 (16-ounce) bag each of shredded green and shredded red cabbage
1 small red onion, thinly sliced
1/4 cup soy sauce
1/4 cup lemon juice
1/4 cup vegetable oil
2 tablespoons grated fresh ginger (from about a 1-inch piece)
2 tablespoons white vinegar
2 tablespoons dark brown sugar
2 teaspoons Asian sesame oil
2 teaspoons sesame seeds, optional
1 teaspoon salt
20 grinds black pepper

Steps:

  • Rough up the scallion slices a little with your fingers so all the little layers of the scallion whites separate. Toss the coleslaw mix or both kinds of cabbage, the red onion and scallions together in a large bowl until everything is thoroughly mixed. You can make the slaw up to this point up to a day in advance as long as you keep it refrigerated. Before serving, simply bring the slaw back to room temperature, make the dressing and toss.
  • Stir the remaining ingredients together in a small bowl until blended, then pour over the vegetables. Serve within 1 hour of dressing or the cabbage will get wilty and sad.

  • In a small bowl, or food processor combine ginger, vinegar, soy sauce, lime juice, oil, and peanut butter. In a large bowl, combine all other ingredients and then toss with dressing. You can save some of the dressing to dress noodles that can be added to this dish along with stir fried pork to make an entire meal.

2 1/2 cups thinly sliced cabbage
1/2 head radicchio, thinly sliced
1 large carrot, peeled, cut into matchstick-size strips
3 ounces snow peas, stringed, thinly sliced lengthwise
4 teaspoons seasoned rice vinegar
1 teaspoon dry mustard
1 teaspoon ground ginger
2 tablespoons vegetable oil
1 tablespoon oriental sesame oil
2 teaspoons soy sauce

Steps:

  • Combine first 4 ingredients in large bowl. (Can be prepared 6 hours ahead. Cover and refrigerate.)
  • Combine vinegar, mustard and ginger in small bowl; stir until mustard and ginger dissolve. Gradually mix in both oils and soy sauce. Pour dressing over salad; toss to blend. Season to taste with salt.

This recipe uses Asian flavors to liven up a standard coleslaw recipe. To further the Asian influence, try replacing the red cabbage with Napa cabbage.

4 cups red cabbage , shredded
1/2 cup carrot, shredded
2 bok choy stalks (with leaves)
1 1/2 to 2 cups mung bean sprouts
2 teaspoons extra-virgin olive oil
1/4 cup rice vinegar
3/4 teaspoon sesame seed oil
2 teaspoons chopped fresh cilantro leaves, or as desired, optional, for garnish
1 tablespoon toasted sesame seeds, for garnish

Steps:

  • Gather the ingredients.
  • Wash the vegetables and drain thoroughly. Shred the cabbage and carrots.
  • Separate the bok choy stalks and leaves. Cut the stalks diagonally and the leaves straight across.
  • Toss the shredded cabbage, shredded carrots, bok choy, and mung bean sprouts in a large bowl. Set aside.
  • In a small bowl, whisk together the olive oil and rice vinegar. Whisk in the sesame seed oil.
  • Place the dressing in the bottom of a bowl, add the vegetables and toss again. Add the cilantro, if using, and sprinkle toasted sesame seeds on top. Chill until ready to serve.
