From the Taste of Home Cookbook : Rice noodles can be found in the Asian section of your grocery store. Otherwise, angel hair pasta makes a good substitute.

4 ounces asian rice noodles, uncooked or 4 ounces angel hair pasta
2 teaspoons cornstarch
3 tablespoons soy sauce
2 tablespoons rice vinegar
2 tablespoons hoisin sauce
1 teaspoon gingerroot, minced
1 teaspoon garlic, minced
1/4 teaspoon salt
1/4 teaspoon pepper
16 ounces frozen stir-fry mixed vegetables
1 1/2 cups carrots, shredded
2 teaspoons sesame oil, divided
1 beef flank steak, cut into thin strips (1 1/2 pounds)
2 teaspoons sesame seeds, toasted

Steps:

  • In a large bowl, soak noodles in boiling water for 10 minutes. Meanwhile, in a small bowl, combine the cornstarch, soy sauce, vinegar, hoisin sauce, ginger, garlic, salt and pepper until blended; set aside.
  • In a large skillet or wok, stir-fry the vegetable blend and carrots in 1 teaspoon oil for 2-3 minutes or until crisp-tender. Remove and keep warm. In the same pan, stir-fry beef in remaining oil for 3-4 minutes or until no longer pink.
  • Stir soy sauce mixture and add to pan. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Drain noodles. Stir noodles and vegetables into beef mixture; heat through. Sprinkle with sesame seeds.

This flank steak comes out so delicious! It is so easy to make and you can put the marinade together, toss in the flank steak and toss in the freezer for an OAMC treat. The recipe comes from the Super Suppers cookbook.

2 lbs beef flank steak
1/2 cup soy sauce
1/4 cup fresh lemon juice
1/4 cup minced onion
1/4 cup packed brown sugar
2 tablespoons toasted sesame oil
1 tablespoon freshly grated gingerroot
1 tablespoon minced garlic
1 teaspoon red pepper flakes (optional)

Steps:

  • Combine all ingredients except steak in a large ziploc bag, close, and squish together to combine the the ingredients.
  • Add the steak to the bag and marinate in the refrigerator for 1 to 24 hours.
  • Preheat grill to medium-high.
  • Place steak on grill and throw away extra marinade.
  • Grill until you reach your favorite level of doneness.
  • Let steak stand 10 to 15 minutes so that juices will redistribute.
  • Slice meat across the grain into very thin slices.

I originally got the idea for this out of Sunset Magazine, and have tweaked it to suit my family and friends. It makes a great OAMC entree for the grill, or to take camping. I've used this on chicken and salmon as well as beef, just reducing the marinating time appropriately. Don't use ground (dry) ginger in this- the flavor is not the same.

1/4 cup water
1/4 cup soy sauce
2 tablespoons rice vinegar
2 tablespoons gingerroot, grated
1 tablespoon sugar
1 pinch chili flakes
2 lbs flank steaks

Steps:

  • Place all ingredients except for steak in a gallon size zip top bag, and mix well to combine.
  • Add steak to bag, remove all of the air, and seal.
  • Marinate for up to 24 hours, turning bag occasionally.
  • Remove meat from marinade, and grill or broil to desired degree of doneness.
  • Thinly slice steak against the grain and serve.
  • To OAMC, freeze bag for up to 6 months, and pull from freezer at least 24 hours before using.
  • You can substitute (or add) garlic for the ginger. If you like it spicy, add more chili flakes!

6 tablespoons water
2 teaspoons sesame oil
1 teaspoon dried chili peppers
2 tablespoons chopped fresh lemongrass
1 tablespoon grated fresh ginger
2 cloves garlic, smashed
2 tablespoons chopped green onion
1 teaspoon sesame seeds
1/2 pound flank steak, cut into 1/2-inch thick slices against the grain
3 tablespoons olive oil, plus 3 tablespoons
2 tablespoons Chinese black bean sauce
1 green pepper, stemmed, cored, and julienned
1 yellow pepper, stemmed, cored, and julienned
1 red pepper, stemmed, cored, and julienned
Crushed garlic, in the skin
I pack dry Chinese curly egg noodles, boiled according to the package directions
1 small bok choy cut into 1/2-inch slices

Steps:

  • Combine the marinade ingredients in a medium sized bowl, and soak the flank steak in the marinade for 1 hour.
  • In a hot wok over the highest heat, add 3 tablespoons of the oil and black bean sauce. Using the Chinese ladle, spread the bean sauce in the wok until nice roasted smell comes out. Add the beef and stir-fry for 2 minutes. Do not over cook! Remove the beef and set aside.
  • To the wok, add the remaining 3 tablespoons oil, the peppers, and the crushed garlic. Add the boiled noodles and the marinade for the beef and cook for 2 minutes. Add the bok choy and cook until wilted. Add the reserved beef and toss until heated through. Serve.

  • Preheat broiler and coat broiler pan with cooking spray.

Marinate steak for 5 minutes on each side. Transfer steak to broiler pan and broil 5 to 6 minutes on each side to desired doneness. Remove from oven and let stand 5 minutes.
  • Meanwhile, pour marinade into a small saucepan and bring to a boil. Boil 3 to 5 minutes (to kill any bacteria).
  • Cut meat on the diagonal, across the grain, into thin slices. Drizzle with sauce.

  • Preheat broiler. Transfer steak to broiler pan. Drain marinade from dish into medium saucepan; boil 3 minutes. Broil steak until cooked to desired doneness, about 4 minutes per side for medium-rare. Using tongs, transfer steaks to platter; let stand 5 minutes. Cut crosswise into thin slices and serve, passing cooked marinade as sauce.

Fresh or frozen ginger to yield 1 tablespoon coarsely grated
2 teaspoons reduced-sodium soy sauce
1 tablespoon maple syrup
1 1/2 tablespoons red-wine vinegar
8 ounces flank steak

Steps:

  • Preheat the broiler if using, and cover the pan with aluminum foil.
  • Mince garlic; grate ginger, and combine with soy, maple syrup and vinegar in a large bowl.
  • Wash the flank steak, dry and cut into strips half an inch wide on the diagonal. Add to the marinade, turn to coat and let it sit for 10 minutes.
  • Prepare stove-top grill if using. Grill or broil the meat about five minutes total, turning once and brushing with marinade.

1/4 cup reduced-sodium soy sauce
3 tablespoons honey
1 tablespoon sesame oil
1 teaspoon Chinese five-spice powder

1 beef flank steak (1-1/2 pounds)
2 tablespoons hoisin sauce, warmed
3 green onions, thinly sliced
1 tablespoon sesame seeds, toasted, optional

Steps:

  • In a shallow dish, combine the first 7 ingredients; add steak and turn to coat. Cover and refrigerate overnight. , Drain and discard marinade. Grill steak, covered, over medium heat for 6-7 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). 1 1/2 lbs flank steaks
2 tablespoons soy sauce
2 (15 ounce) cans diced tomatoes
1 tablespoon Worcestershire sauce
1 dash hot pepper sauce
3 tablespoons vegetable oil
1 medium onion, sliced
1/2 green pepper, sliced
1 garlic clove, minced
1 (4 ounce) can sliced mushrooms
2 tablespoons cornstarch
1 1/2 cups beef broth

Steps:

  • Slice steak thinly on the bias (this will be easier if you freeze the steak for 20-30 minutes first). Combine in a bowl with soy sauce, Worcestershire sauce and hot sauce. Let stand 10-15 minute.
  • Heat oil in heavy skillet. Add beef and stir-fry quickly until meat loses its pink color. Remove from pan to a clean plate and set aside.
  • Add onion, green pepper and garlic to fat remaining in skillet. Sauté until soft. Add mushrooms with their liquid.
  • Stir cornstarch into a little bit of the beef broth until smooth. Add the slurry with the rest of the broth to the vegetables. Bring to a boil and cook 3 minutes. Return meat to pan and cook until hot all the way through.
