PAN SEARED SCALLOPS WITH CITRUS SAUCE



Pan Seared Scallops with Citrus Sauce image

A simple tasty recipe for Seared Scallops ( or fish) with Citrus Sauce. Serve with steamed green beans or roasted asparagus.

Number Of Ingredients 12

6 tablespoons olive oil
2 tablespoons orange juice plus 1 tablespoon zest
1 tablespoon lime juice
1 small shallot - finely chopped
1 tablespoon chopped cilantro ( or sub parsley)
⅛ teaspoon chili flakes or aleppo chili pepper
--
2-4 portions of scallops or fish ( try to find large "dry" scallops)
1-2 tablespoons olive oil
salt and pepper to taste

Optional- 2-4 portions Green beans or substitute asparagus

Steps:

  • In a small bowl, mix dressing ingredients together and set aside.
  • If steaming green beans, set them inside a steamer basket inside a pot, with a little water. Bring to a boil, cover, steam 2 - 3 minutes, or until bright green and just tender. Uncover.
  • Heat oil in a large skillet over medium high heat until smoking.
  • Season the oil with salt and pepper. Add the patted dry scallops ( or fish) and sear for 1-2 minutes until golden. Turn over. If cooking a thick piece of fish, finish in a warm oven.
  • Spoon flavorful dressing over the scallops and green beans.

Scallops that are easy, fresh, pan seared, perfectly golden and topped with a sweet and tangy citrus ginger sauce. Watch the video above to see how quickly they come together!

2 tbsp avocado oil
1 1/2 lb sea scallops
1 orange (zested and juiced)
1 lemon (juiced)
1 tbsp fresh ginger (grated)
2 tbsp butter (or ghee)
sea salt (to taste)
fresh thyme (for garnish)

Steps:

  • Pat your scallops dry with a paper towel and sprinkle them with sea salt.
  • Heat the oil in a sauté pan over medium high heat. When the oil is nearly smoking, place your scallops in the pan and sear for approximately one and a half to two minutes on each side. Remove scallops to a plate.
  • Reduce the heat to medium and add the orange and lemon juice, orange zest, grated ginger and butter to the pan. Whisk the sauce together in the pan until it's simmering, then add the scallops back to the pan and spoon the sauce on top.
  • Plate your scallops, drizzle more sauce on top and garnish with thyme.

1 small garlic clove, chopped
1 small fresh hot chile (2 1/2 inches long, preferably red), chopped, including seeds
2 1/4 teaspoons sugar
2 tablespoons seasoned rice vinegar
2 tablespoons Asian fish sauce
1 1/2 tablespoons water
1 tablespoon fresh lime juice
16 medium sea scallops (1 pound), tough muscle removed from side of each if necessary
1 tablespoon olive oil
Special Equipment
4 (8-inch) bamboo skewers

Steps:

  • Soak skewers in water 30 minutes.
  • Pound garlic, chile, and sugar to a fine paste with a mortar and pestle. Stir paste together with vinegar, fish sauce, water, and lime juice. (Alternatively, purée sauce ingredients together in a blender.)
  • Pat scallops dry. Thread 4 on each skewer (flat sides facing out; see photo), then brush both sides with oil (2 teaspoons total for 4 skewers). Season scallops with salt and pepper.
  • Brush a 12-inch nonstick skillet with remaining teaspoon oil and heat over high heat until hot but not smoking. Sear scallops, turning over once, until just cooked through, about 6 minutes total.
  • Serve scallops with sauce spooned over.

2/3 cup soy sauce
1/4 cup fresh lemon juice
1/4 cup fresh lime juice
3 tablespoons plus 1 teaspoon sugar
2 teaspoons finely grated peeled fresh ginger
2 teaspoons Asian sesame oil
2 lb large sea scallops (30), tough muscle removed from side of each if necessary
2 teaspoons vegetable oil
Garnish: 2 teaspoons sesame seeds (preferably black),toasted
Accompaniment: soba salad ;

Steps:

  • Whisk together soy sauce, lemon and lime juices, sugar, ginger, and sesame oil in a wide shallow nonreactive bowl. Add scallops and marinate, covered, at room temperature, 5 minutes on each side (do not marinate any longer, or scallops will become mushy once cooked). Transfer scallops to a plate and reserve marinade.
  • Heat 1/2 teaspoon vegetable oil in a 12-inch nonstick skillet over moderately high heat until hot but not smoking, then sauté scallops, 6 to 8 at a time, until golden brown and just cooked through, 2 to 3 minutes on each of the 2 flat sides, transferring to a plate as cooked. Wipe out skillet and add 1/2 teaspoon oil between batches.
  • Wipe out skillet again, then add marinade and boil until reduced to about 1/3 cup, about 2 minutes. Drizzle scallops with sauce.

olive oil

6 large garlic cloves, sliced thin
2 tablespoons low sodium soy sauce
2 tablespoons rice vinegar

2 tablespoons lemon juice
1 teaspoon dried cilantro (or 1 bunch fresh)

Steps:

  • in a nonstick skillet over medium high heat heat oil in skillet and add scallops. season with salt and pepper cook about 3-5 minutes should be lightly browned then flip and do the same on other side.
  • mean while in sauce pan combine all the ingredients and bring to a boil then remove from heat.

16 fresh scallops in shells
2 tablespoon(s) lime juice
1 tablespoon(s) lemon juice
3 tablespoon(s) mirin
1 tablespoon(s) fish sauce
1 tablespoon(s) brown sugar
1 finely chopped red chili deseeded.
1 tablespoon(s) fresh cilantro chopped

Steps:

  • Preheat oven 350 degrees. Remove the schallops from their shells as cleanly as possible and remove the veins. Wash the shells in warm water and set on a baking sheet. Alternately you can use frozen scallops and place them in a mini muffin pan.
  • Mix the remaining ingredients together and spoon over the scallops. Bake the scallops for about 10 minutes and serve immediately.

4 (1 inch) green onions, diagonally cut
1 teaspoon peanut oil
1 1/2 lbs sea scallops
1/4 teaspoon salt, divided
1/4 cup fresh orange juice
1/4 cup mirin (sweet rice wine)
2 tablespoons lemon juice
2 tablespoons low sodium soy sauce
1/4 teaspoon fresh ginger, grated
1/4 teaspoon crushed red pepper flakes
1 teaspoon water
1/2 teaspoon cornstarch

Steps:

  • Heat 1 teaspoon sesame oil in a large cast-iron or heavy skillet over high heat. Add onions; sauté 1 minute or until wilted. Remove from pan; set aside.
  • Add remaining 1 teaspoon sesame oil and peanut oil to pan. Pat scallops dry with paper towels; sprinkle with 1/8 teaspoon salt. Add scallops to pan; cook 2 minutes or until golden brown.
