ASIAN MARINATED FLANK STEAK

I originally got the idea for this out of Sunset Magazine, and have tweaked it to suit my family and friends. It makes a great OAMC entree for the grill, or to take camping. I've used this on chicken and salmon as well as beef, just reducing the marinating time appropriately. Don't use ground (dry) ginger in this- the flavor is not the same.

1/4 cup water
1/4 cup soy sauce
2 tablespoons rice vinegar
2 tablespoons gingerroot, grated
1 tablespoon sugar
1 pinch chili flakes
2 lbs flank steaks

Steps:

  • Place all ingredients except for steak in a gallon size zip top bag, and mix well to combine.
  • Add steak to bag, remove all of the air, and seal.
  • Marinate for up to 24 hours, turning bag occasionally.
  • Remove meat from marinade, and grill or broil to desired degree of doneness.
  • Thinly slice steak against the grain and serve.
  • To OAMC, freeze bag for up to 6 months, and pull from freezer at least 24 hours before using.
  • You can substitute (or add) garlic for the ginger. If you like it spicy, add more chili flakes!

ASIAN MARINATED SKIRT STEAK

1 bottle Japanese beer, such as Sapporo
1/2 cup orange juice
1/4 cup hoisin
1/4 cup mirin (Japanese sweet wine)
1/4 cup soy sauce
1/4 cup Worcestershire sauce
1 tablespoon Sriracha hot sauce
1 tablespoon sesame oil
3 cloves garlic, smashed
1 onion, coarsely chopped
2 flank steaks (about 4 pounds total)
Toasted sesame seeds, for garnish

Steps:

  • Whisk together the beer, orange juice, hoisin, mirin, soy, Worcestershire, Sriracha and sesame oil. Stir in the garlic and onions.
  • Place the steaks in a large baking dish and pour the marinade over top. Marinate at least 30 minutes, or up to overnight in the fridge.
  • Preheat a grill pan or grill over high heat.
  • Remove the steaks from the marinade, shaking off any excess. Discard the marinade. Grill the steaks for about 6 minutes per side for medium-rare. Let the steaks rest for 5 minutes before slicing. Slice into thin slices across the grain and transfer to a serving plate. Sprinkle sesame seeds on top and serve.

SPICY ASIAN MARINADE

This all-purpose marinade can be used for chicken or turkey breast, pork cutlets, firm-pressed tofu, and seafood. If you prefer to omit the chile flakes or paste, use 5 or 6 slices of smashed fresh ginger instead.

My Vietnamese fiance taught this to me. It has a strong flavor, so I serve it over a bed of rice with steamed veggies on the side. Regular Soy sauce works fine, but I prefer the low-sodium to ease the saltiness. You can fry, grill or broil the steaks, depending upon your taste. Very simple though! Prep time includes marinating, and cook time is for frying the steaks. --ETA-- I've made these as a dump recipe, and they worked great! I pour all the ingredients into a freezer bag, and when I wanted to cook them, I let them thaw overnight in the fridge. NOTE-- When you marinate them in a zippered bag, you only need half of the sauce to cover all the pork.

1 cup teriyaki marinade

  • Combine teriyaki, soy sauce, and garlic in a large zipped bag or casserole dish.
  • Add pork steaks and marinate 6 hours or overnight for more flavor (turning occasionally).
  • Fry the pork steaks over medium heat, with enough oil covering the bottom of the pan for 5-7 minutes per side (add more time for thicker cuts of pork).
  • OR You can broil the steaks in a 350°F oven for about 45 minutes, turning once after 20 minutes (depending upon thickness).

¼ cup brown sugar
¼ cup sesame oil
3 green onions, thinly sliced
1 lemon, juiced

1 (1 1/2-pound) flank steak
skewers

Steps:

  • Whisk soy sauce, brown sugar, sesame oil, green onions, lemon juice, sesame seeds, ginger, and garlic together in a bowl until marinade is smooth.
  • Thinly slice steak with the grain into 1/4-inch thick pieces. Thread steak slices onto skewers and place in a flat plastic or glass container. Pour marinade over skewers. Cover container with plastic wrap, and refrigerate, 1 1/2 to 2 hours. Flip skewers and continue marinating in the refrigerator, 1 1/2 to 2 hours more.
  • Preheat an outdoor grill for high heat, and lightly oil the grate. Remove skewers from marinade, discarding marinade.
  • Cook steak skewers on the preheated grill until cooked through, 2 to 3 minutes per side.

Steps:

  • In a small bowl, whisk together soy sauce, lemon juice, olive oil, Worcestershire sauce, minced garlic, Italian seasoning, pepper, salt, and a pinch of red pepper. Add steaks to a resealable zip lock bag or large bowl and pour the marinade on top. Marinate for 2 hours or overnight.
  • Turn the skillet to high heat. Add the steaks. Cook on each side for 3 minutes or until outside is browned. Reduce heat to medium-high. Cook the steaks to the desired doneness. Mine took about 10 minutes flipping 3 times to get a medium well.
  • Top with butter and garnish with fresh parsley if desired

1 minced garlic clove
1 teaspoon minced ginger
1/2 teaspoon fish sauce
1/2 teaspoon sesame oil
1 teaspoon honey
1 tablespoon lime juice
1 teaspoon dried lemongrass
1 teaspoon Chinese five spice powder
1 teaspoon kosher salt
4 steaks

Steps:

  • Place all ingredients in a large ziplock plastic bag. Mix well then add steak of your choice making sure to rub well into all steaks. Place in fridge, turning occasionally to make sure marinade gets into all aspects of the steak. Let sit for at least 3 to 4 hrs before grilling. This is a flavorful marinade without heat. If you want the addition of heat I would suggest adding 1/4 tsp or 1/2 tsp of dried chili pepper flakes.
  • Take steaks out of the fridge and allow them to come to room temp(approx 5 min). Heat grill to med/high temp before placing steaks on to get a good sear. When nice sear on one side turn and sear the other side. I generally like my steak medium rare so would take off at this point and allow to rest on a warm plate for 5 minute If you prefer your steak more well done then lower heat and continue to grill to preferred doneness.

2 tablespoons vegetable oil
2 teaspoons onion powder
2 teaspoons lemon juice

4 T-bone steaks (about 3/4 inch thick)

Steps:

  • In a large resealable plastic bag,combine the first six ingredients; add steak. Seal bag and turn to coat. Cover and refrigerate for at least 4 hours. , Drain and discard marinade. Grill steaks, uncovered, over medium heat for 3-4 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 145°).

5 lbs pork steaks (I use 3/4-inch thick sliced loin) or 5 lbs pork loin (I use 3/4-inch thick sliced loin)
1/3 cup hoisin sauce
3 tablespoons minced garlic
3 tablespoons oyster sauce
1/2 teaspoon white pepper
1 tablespoon salt
1 tablespoon rice wine
1 1/2 teaspoons five-spice powder

Steps:

  • Combine all ingredients, except pork, in a bowl and mix well.
  • Coat pork in mixture. I store mine in quart sized zipper bags, 2-3 chops per bag.
  • Let pork marinade in refrigerator for a minimum of 1 hour. I marinate for 24 hours.
  • Cook outdoors on grill until done. On my grill that's 4-5 minutes per side.
  • They also cook well indoors on a contact type grill. I generally cook for 5-6 minutes indoors.
  • Pork filled bags may be frozen with marinade and thawed to cook later.
  • **Note - Marinating time is not included in my "time to Make".
