CUCUMBER-CILANTRO MARGARITA
Steps:
- Muddle 3 slices cucumber, 2 tablespoons cilantro leaves, the sugar and 1 lime wedge in the bottom of a cocktail shaker. Add the tequila, triple sec and lime juice. Fill the shaker with ice and shake heavily. Rub a rocks glass with the remaining 2 lime wedges and coat with salt (optional). Fill a glass with ice and strain the cocktail into the glass. Garnish with the cilantro sprig and remaining cucumber slice.

Fill with ice and shake well. Rub the rims of 2 rocks glasses with lime wedges and dip in coarse salt. Fill with ice; strain the margaritas into the glasses. Garnish with cilantro sprigs and cucumber slices.

- Chop cilantro. Zest/grate lime peel (no white; 1 teaspoon); squeeze limes for juice (3 tablespoons). Combine in medium bowl: mayonnaise, oil, cumin, pepper sauce, cilantro, lime juice, and lime zest. Reserve 1/2 cup marinade for later use. Place remaining marinade and chicken in zip-top bag (or shallow dish); seal bag and toss to coat. Let stand 10 minutes (or overnight) to marinate. Meanwhile, preheat oven to 450°F. Line baking sheet with foil. Arrange chicken 2 inches apart on baking sheet and sprinkle with seasoning; bake 10 minutes. Turn chicken over; bake 10 more minutes or until chicken is 165°F. (For more browning, broil 2-3 minutes.) Brush reserved marinade over chicken. Serve.

- Combine mango and cilantro leaves in medium bowl. Press firmly on solids with muddler or back of wooden spoon until mashed. Mix tequila, lime juice, Simple Syrup, and Cointreau, then 1 cup ice. Stir to blend well.
- Strain into large glass measuring cup. Divide remaining ice between 2 tall glasses. Pour Margarita mixture over. Garnish with cilantro sprigs.
- SIMPLE SYRUP
- Stir sugar and water in medium saucepan over medium heat until sugar dissolves. Increase heat and bring to boil. Reduce heat and simmer 3 minutes. Cool. (Can be made 2 weeks ahead. Refrigerate in airtight container.)
