500 g firm fish fillets, cut into pieces
2 tablespoons oil
2 teaspoons minced ginger
1/2 red capsicum, cut into thin strips
1/2 yellow capsicums or 1/2 green capsicum, cut into thin strips
200 g snow peas
1 teaspoon cornflour
3 tablespoons oyster sauce
1 tablespoon soy sauce
1 teaspoon sesame oil
3 tablespoons water

Steps:

  • Add oil to heated frying pan or wok and then cook fish until golden brown, 5- 6 minutes.
  • Remove fish and set aside.
  • Add ginger, capsicum and snow peas and stir fry until vegetables are tender crisp, 2- 3 minutes.
  • Combine cornflour with oyster sauce, soy sauce, sesame oil and water.
  • Add to pan and cook 2- 3 minutes, add fish and cook, stirring gently, until heated through.
  • Serve with rice or noodles.

4 ounces whiting fish fillets (cut into pieces) or 4 ounces tilapia fillets (cut into pieces)
5 stalks broccoli
1 cup mushroom (diced)
4 slices tomatoes
3 leaves cabbage (torn)
1 carrot (diced)
1/2 tablespoon fat-free salad dressing
1 teaspoon soy sauce
1 dash black pepper

Steps:

  • Mix all ingredients in a skillet and cook on a stove top flame low heat.
  • Cover with a lid right away let steam until fish is done usually only 5-7 minutes depending on thickness of fish.
  • Then pour out excess liquid and serve the rest.

  • Pat your fish filet dry and cut into 1½ inch pieces. Transfer to a bowl, and add Shaoxing wine, salt, white pepper and canola oil. Mix until all the fish is coated. Set aside for 10 minutes before adding the cornstarch and tossing to coat. There should be no standing liquid or any visible dry cornstarch. Add a bit more cornstarch or pour off excess liquid as needed. Set aside.
  • In a small bowl, mix the hot chicken stock, sesame oil, salt, sugar, white pepper and oyster sauce. Set aside.
  • Boil enough water to blanch the vegetables in your wok. Add the carrots, asparagus, red bell pepper, and celery if using. After 15 seconds or until the water begins to simmer again, stir in the snow peas for 10 seconds, and quickly transfer the vegetables to a cool water bath. Drain thoroughly in a colander.
  • Velvet your fish, cooking it until it’s just shy of totally cooked through (the final cooking will take place when everything gets stir-fried together).
