TURKEY TACO SOUP
Steps:
- Heat a large soup pot over medium heat. Add ground turkey and cook, breaking up with a spatula, until no longer pink. Drain any grease (there shouldn't be very much so you could just leave it as it will add flavor)
- Add tomatoes, corn, beans, salsa and taco seasoning to the meat and stir to coat, then cook for about a minute before adding the chicken broth.
- Bring taco soup to a boil, then cover and reduce heat to low. Simmer for 20-30 minutes. Taste and add salt and pepper if desired.
- Optional - Serve with your favorite taco toppings, like sour cream, shredded cheese, diced onions, avocado, tortilla chips and cilantro.

Steps:
- Preheat large dutch oven or heavy bottom pot on medium - high heat, swirl a bit of oil to coat, and add turkey. Cook for 5 - 7 minutes, stirring occasionally and breaking into pieces.
- Add taco seasoning and cook for 1 more minute, stirring frequently.
- Add tomato sauce, beans, corn, onion powder, maple syrup, salt, pepper, water; and stir.
- Cover, bring to a boil, reduce heat to low and simmer for 20-60 minutes (longer - deeper flavours but overall soup is ready fast).
- Preheat large ceramic non-stick skillet on medium - high heat, swirl a bit of oil to coat, and add turkey. Cook for 5 - 7 minutes, stirring occasionally and breaking into pieces. Add taco seasoning and cook for 1 more minute, stirring frequently.
- Transfer to a large slow cooker along with tomato sauce, beans, corn, onion powder, maple syrup, salt, pepper, water; and stir. Cover and cook on Low for 7 - 8 hours or on High for 3 - 4 hours.
- Serving: Serve hot with cilantro, sour cream/yogurt, lime, avocado, green onion and tortilla chips.

- Heat a large skillet over medium-high heat. Cook and stir ground beef and onion in the hot skillet until beef is browned and crumbly, 5 to 7 minutes. Drain and discard grease.
- Transfer beef and onion to the bottom of a slow cooker; stir in diced tomatoes, corn, pinto beans, black beans, diced tomatoes with chiles, tomato sauce, water, taco seasoning, and ranch dressing mix.
- Cover and cook on Low until flavors have melded, about 6 hours.

Steps:
- Saute onions and garlic over medium heat in the olive oil. Once onions begin to carmelize add ground turkey. Once turkey is completely cooked add taco seasoning, water, diced tomatoes and corn (do not drain corn or tomatoes). Add both beans (be sure to drain and rinse them). Simmer until warm.
- Serve with RF Mexican Blend Shredded cheese and/or RF Sour Cream.
