A great all rounder Asian Marinade that infuses chicken with sweet/savoury flavours. This Asian chicken can be grilled, baked or cooked on the stove! MINIMUM MARINADE TIME: 1 hour (or overnight)

1 - 1.5 lb / 500 - 750g chicken thigh fillets (, skinless boneless)
3 cloves garlic (, minced)
2 tsp ginger (, freshly grated)
2 tbsp soy sauce
2 tbsp tomato ketchup
2 tbsp Oyster sauce
1 1/2 tbsp Chinese cooking wine OR Mirin ((Note 1))
1 - 3 tbsp Sriracha ((adjust spiciness to taste))
2 tbsp brown sugar
1 tsp sesame oil
2 tsp oil
Sesame seeds
Finely sliced shallots / green onions
Finely sliced red chilies

Steps:

  • Mix Marinade ingredients together. Add chicken and mix to coat. Marinade in the fridge for a minimum of 1 hour or up to overnight.
  • Heat oil in a large non stick skillet or BBQ over medium high heat. (See notes for other cooking methods) Add chicken and cook until each side is dark golden brown and chicken is cooked through (about 3 minutes each side). Transfer to plate, cover loosely with foil and rest for 3 minutes.
  • Garnish with chillies, shallots and sesame seeds if desired. Serve with white rice and slices of cucumber.

3 tbsp soy sauce
1 tbsp honey

1/2 tsp red pepper flakes
1/4 cup neutral oil
1 tbsp sesame oil

Steps:

  • Combine all ingredients in a small mixing bowl. Whisk well to combine.
  • Transfer the marinade to a ziptop freezer bag. Add the chicken pieces and store in the refrigerator on a tray to catch the drips.
  • Allow the chicken to marinate for 2 to 24 hours.
  • When ready to serve, remove the chicken from the marinade and cook on a hot grill.
  • Discard the marinade or boil it in a saucepan to use as a sauce. (See post note.)

2 tablespoons soy sauce
1 tablespoon vinegar
1 teaspoon sugar
1 teaspoon garlic powder
1/8 teaspoon crushed red pepper
4 skinless, boneless chicken breast halves

Steps:

  • Stir the stock, soy sauce, vinegar, sugar, garlic powder and red pepper in a shallow nonmetallic dish or a gallon-size resealable plastic bag. Add the chicken and turn to coat. Cover the dish or close the bag and refrigerate for 1 hour. Remove the chicken from the marinade.
  • Lightly oil the grill rack and heat the grill to medium. Grill the chicken for 15 minutes or until it's cooked though, turning and brushing often with the marinade.
  • Heat the remaining marinade in a 1-quart saucepan over medium-high heat to a boil and serve with the chicken.

This Asian Chicken Marinade combines the best Asian flavors to bring you juicy grilled chicken, coated in a sweet and savory glaze.

1 ½ lbs. boneless skinless chicken breasts or thighs
½ cup low sodium soy sauce
⅓ cup honey
¼ cup rice vinegar
1 tablespoon brown sugar
1 tablespoon sesame oil
1 tablespoon minced garlic
1 teaspoon minced ginger
2 teaspoons salt
Sriracha hot sauce, optional
Toasted sesame seeds, optional
Chopped green onions

Steps:

  • Combine the soy sauce, honey, vinegar, brown sugar, sesame oil, garlic, and ginger in a mixing bowl and whisk together.
  • Place chicken in a resealable plastic bag and pour marinade mixture over top. Carefully remove excess air, seal the bag, and lay flat.
  • Let the chicken marinate in the refrigerator for at least 2 hours or overnight.
  • Place marinated chicken on a plate and salt lightly. Leave at room temperature while the grill preheats. Set aside leftover marinade in the plastic bag-do not throw it away!
  • Clean and oil the grill grates then preheat to high heat (about 500° F).
  • Place chicken on the grill and cook for 5 minutes. Flip, and cook for an additional 5-6 minutes (or until meat thermometer reads an internal temp of 165° F.
  • Remove chicken from the grill and tent with foil for 5-10 minutes before serving.
  • Pour the marinade that remains in the plastic bag into a large shallow non-stick pan and bring to a full boil.
  • Immediately reduce heat to a simmer, and stir constantly with a wooden spoon until sauce has thickened and will coat the back of a spoon. It should be thinner than honey but not watery. Do not overheat as sugars will burn! Add drips of Sriracha hot sauce to taste.
  • Drizzle (or brush) the finished sauce over the grilled chicken. Garnish with toasted sesame seeds and/or chopped green onions and serve.

  • In a small bowl, combine the first six ingredients. Set aside 1/4 cup for basting chicken; cover and refrigerate. Pound chicken breasts to 3/8-in. thickness. Place in a resealable plastic bag; pour remaining marinade over chicken. Seal bag and refrigerate overnight. This is SO good! Plan ahead the chicken needs to marinate about 8 hours. This chicken is delicious both hot or cold! If you are doubling this recipe, and I suggest you do, this chicken is very good, prepare two separate marinades in two bowls and use two separate bags for marinating (10 drumsticks in each bag).

1/3 cup fresh lemon juice
1/2 cup liquid honey
1/4 cup sesame oil

10 chicken drumsticks
1/4 cup peanut oil

  • In a bowl whisk together the first 8 ingredients.
  • Add in green onions.
  • Place the chicken drumsticks in a large resealable bag.
  • Pour the marinade on top and seal bag; turn to coat evenly with marinade.
  • Refrigerate for a minimum of 8 hours, turning occasionally.
  • Set grill to medium heat.
  • Remove the chicken and discard the marinade.
  • Place the chicken on a baking sheet, and pat any excess marinade off with a paper towel.
  • Rub the drumsticks with peanut oil on all sides.
  • Season chicken with seasoned salt or white salt and pepper.
