1 cup sour cream
1/4 cup grated fresh horseradish
1 tablespoon Dijon mustard
1 teaspoon white wine vinegar
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper

Steps:

  • Place all of the ingredients into a medium mixing bowl and whisk until the mixture is smooth and creamy. Place in the refrigerator for at least 4 hours or overnight to allow flavors to meld. Sauce can be stored in the refrigerator in an airtight container for 2 to 3 weeks.

2 ounces angel hair pasta
2 tablespoons butter
3 tablespoons chopped sweet onion
1 clove garlic, minced
⅔ cup heavy cream
¼ cup grated Parmesan cheese
¼ cup chopped fresh basil
1 pinch salt and ground black pepper to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Add the angel hair pasta and cook for 8 to 10 minutes or until al dente. Once done, set aside 1/2 cup of the pasta water, then drain the pasta in a colander in the sink. Keep warm.
  • While the pasta is cooking, melt the butter in a saucepan over medium heat. Stir in the onion, and cook for 3 minutes, then stir in the garlic, and continue cooking until the onion has softened and turned translucent, 1 to 2 minutes more.
  • Pour in the heavy cream, and stir in the Parmesan cheese, basil, salt, and pepper. Bring to a simmer, then reduce heat to medium-low, and simmer for 2 minutes. Dilute with the reserved pasta water if the sauce is too thick for your taste. Pour the sauce over the angel hair pasta to serve.

3/4 lbs. angel hair pasta
2 strips of bacon
2 tbsp unsalted butter
1 large shallot
1 cup heavy cream
1/3 cup chopped parsley
1/4 cup parmesan cheese
1 small bag frozen broccoli florets
2 medium cloves garlic minced
1 1/2 tbsp crushed pepper
1 1/2 tbsp horseradish
1/2 cup beef, chicken or vegetable broth
1/2 cup cherry or grape tomatoes, halved
1 tsp flour
juice from 1/2 lemon
1 tbsp lemon zest
2 tbsp chives, finely chopped

Steps:

  • Fry the 2 strips of bacon over medium heat in a medium skillet until crisp. Remove the bacon and reserve the fat in the skillet. Chop the bacon into 1/2 inch pieces. Add the butter to the skillet. When butter starts to foam, add the shallot and cook on medium heat until tender. About half way through cooking the shallot, add the garlic. Once tender, add the heavy cream, and broth gradually, whisking constantly. Sprinkle flour and continue whisking. When the flour is fully integrated, add cheese, horseradish and red pepper, whisking. Add broccoli, parsley and lemon juice, lemon zest and continue whisking until slightly thick. (When you streak the whisk across the bottom of the skillet quickly, you should see the bottom, but not for very long. Salt and pepper to taste Meanwhile, boil 6 cups of salted water over high heat. Cook pasta for 6 to 8 minutes over medium high heat, or until al dente. Scoop out about a cup of the cooking liquid and set aside. Strain the noodles, add to sauce in skillet and toss. If pasta seems dry, add cooking liquid. Top with parmesan cheese, tomato halves and chives. Garnish with parsley and serve.

Since I live off the coast of North Carolina I am always looking for seafood recipes. This is not only great it is VERY easy to prepare. The original recipe came from one of my favorite cookbooks, "Cook Healthy, Cook Quick". It called for lobster but I have substituted all types of seafood, (whatever I can find fresh!) and they all taste wonderful!! Serve with a salad and bread for a great light summer time meal!!

8 ounces fresh seafood (shrimp, scallops, lobster or crabmeat..even imitation crabmeat will work)
8 ounces angel hair pasta, uncooked
3/4 cup sliced fresh mushrooms
1/3 cup chopped green onion
1/3 cup dry white wine
1 clove garlic, minced
2 tablespoons reduced-calorie stick margarine
2 tablespoons flour
1 cup skim milk
1/3 cup nonfat sour cream
2 tablespoons grated parmesan cheese
1/2 teaspoon paprika

Steps:

  • Cook pasta according to package directions, omitting salt and fat.
  • Drain well.
  • Set aside and keep warm.
  • Combine mushrooms, green onions, white wine and garlic in a large nonstick skillet.
  • Bring to a boil.
  • Reduce heat, and simmer, uncovered until liquid evaporates.
  • Add margarine, stirring to melt.
  • Add flour and cook stirring constantly for 1 minute.
  • Gradually stir in milk.
  • Cook over medium heat, stirring constantly until mixture thickens and begins to boil.
  • Stir in your choice of seafood and sour cream; cook an additional 2-4 minutes until seafood is opaque and thorougly heated.
  • Spoon over pasta; sprinkle with cheese and paprika.

1/3 cup balsamic vinegar
1/2 teaspoon basil
1/2 teaspoon oregano
1 teaspoon sea salt
1/2 teaspoon ground pepper
2 medium onions
2 red peppers
1 yellow pepper
2 cups mushrooms
1 small eggplants or 1 small zucchini
8 garlic cloves, peeled (Wrap in foil)
2 (28 ounce) cans diced tomatoes (Italian flavored works well, but omit oregano or basil)
1 tablespoon oregano
2 tablespoons basil
1 teaspoon salt
1/2 teaspoon ground pepper
1/4 cup cups red wine
roasted garlic
angel hair pasta (cook as directed)

Steps:

  • Mix veggies with marinade
  • place with the foil wrapped garlic in a jelly roll pan (or cookie sheet) at 400 for about 45 minutes, depending how small your veggies are cut (your garlic may need longer cooking time than the veggies).
  • After veggies are cooked, mash garlic with fork (or garlic press) and mix half in with the veggies and save half for the tomato sauce.
  • Mix sauce ingredients in large saucepan (including roasted garlic).
  • add red wine after tomatoes have cooked down a bit.
  • Simmer for about 30 minutes.
  • Ladle sauce over hot noodles.
  • top with veggies and grated Parmesan cheese.

  • Cook pasta according to package directions; drain.

4 5- to 6-ounce red snapper fillets

Steps:

  • Heat 2 tablespoons oil in heavy medium skillet over medium-high heat. Add shallots and garlic; sauté 30 seconds. Add clam juice, cream, wine, orange juice, sun-dried tomatoes, lime juice, herbes de Provence, Worcestershire sauce, 1/2 teaspoon orange peel, and lime peel; boil until sauce is reduced to 1 1/2 cups, stirring occasionally, about 10 minutes. (Sauce can be made 1 day ahead. Cover and refrigerate. Rewarm before using.)
  • Place flour in shallow dish. Sprinkle snapper fillets with salt and pepper. Dredge snapper in flour, turning to coat; shake off excess. Heat remaining 2 tablespoons oil in heavy large skillet over medium-high heat. Add snapper and cook until brown and cooked through, about 4 minutes per side. Transfer to plate. Add sauce to skillet and bring to simmer.
  • Meanwhile, cook pasta in large pot of boiling salted water until tender but still firm to bite, stirring occasionally. Drain well. Return pasta to pot. Add half of sauce and toss to coat.
  • Divide pasta equally among 4 plates. Top with snapper, then drizzle with sauce and sprinkle with basil and additional minced orange peel.
  • A dried herb mixture available at specialty foods stores and in the spice section of some supermarkets. If unavailable, a combination of dried thyme, basil, savory, and fennel seeds can be substituted.
