ASIAN BEEF SKEWERS
Ginger flavored beef skewers are excellent as an appetizer as well as an entree.

Steps:
- In a small bowl, mix together hoisin sauce, sherry, soy sauce, barbeque sauce, green onions, garlic, and ginger.
- Cut flank steak across grain on a diagonal into 1/4 inch slices. Place slices in a 1 gallon resealable plastic bag. Pour hoisin sauce mixture over slices, and mix well. Refrigerate 2 hours, or overnight.
- Preheat an outdoor grill for high heat. Discard marinade, and thread steak on skewers.
- Oil the grill grate. Grill skewers 3 minutes per side, or to desired doneness.

JAPANESE BEEF SKEWERS (KUSHIYAKI)
Steps:
- Gather the ingredients.
- Soak bamboo skewers in water for a few hours. Alternatively, metal shish kebob skewers may be used.
- Combine sugar, soy sauce, sake, ginger, garlic, sesame seeds, oil, and green onions in a resealable storage bag or large secure container.
- Shake or mix ingredients together and refrigerate.
- Slice beef flank steak into thin 2 x 2 inch pieces.
- Marinate sliced beef with prepared marinade in resealable storage bag or plastic storage container in refrigerator. For best flavor, marinate beef at least two hours. Marinating beef for over four hours or even overnight will result in meat that is overly salty given the potency of the soy sauce in marinade.
- Remove bamboo skewers from water, and skewer several pieces of beef onto bamboo sticks. Discard marinade after meat has been skewered.
- Grill beef kushiyaki on barbecue over medium to high heat until beef is cooked to desired wellness, about three minutes on each side. Because meat is thinly sliced, you'll find that it cooks fairly quickly. Be careful not to overcook or burn meat, as it will become tough.

BIG BAD BEEF SKEWERS

- For the skewers: Preheat a grill pan over medium-high heat.
- Cut off the ends of the zucchini, then trim off the sides lengthwise, creating 4 flat sides. Cut crosswise to create 1 1/2-inch cubes.
- Using six 14-inch metal skewers, skewer the beef, zucchini, tomatoes and onions, distributing the ingredients evenly among the skewers.
- For the spice mix: In a small bowl, mix together the salt, black pepper, garlic powder, lemon pepper, fennel seeds and thyme. Drizzle the skewers with the vegetable oil and season with the spice mixture. Grill the skewers until well-marked on all sides, 1 to 2 minutes per side. Allow to rest while making the salad.
- For the blue cheese sauce: In a mason jar, mix together the mayonnaise, lemon juice, milk, blue cheese and some hot sauce, salt and pepper. Put on the lid and shake until evenly combined.
- For serving: Mix together the olive oil and lemon juice in a bowl.
- Add the salad greens to a serving platter and drizzle with the lemon dressing. Place the skewers over the salad greens and drizzle with the blue cheese sauce. Garnish with the parsley and blue cheese.

- Heat broiler, with rack set 4 inches from heat; line a rimmed baking sheet with aluminum foil. Soak four 12-inch (or eight 6-inch) wooden skewers in a pan of warm water; set aside. Bring a large pot of salted water to a boil.
- Meanwhile, make sauce: In a small bowl, whisk together honey, brown sugar, soy sauce, 2 tablespoons vinegar, curry paste, and 1 tablespoon oil. Reserve half the sauce for serving.
- Thread beef, onion, and pineapple onto skewers. Place on prepared baking sheet, and brush with sauce. Broil, brushing occasionally with sauce, until beef is medium-rare and onion begins to char, 7 to 10 minutes.
- Meanwhile, cook noodles in boiling salted water, according to package instructions. Drain, and place in a medium bowl. Add cilantro and remaining vinegar and oil; season with salt, and toss to combine. Serve skewers with noodles, reserved sauce, and, if desired, red-pepper flakes.
KOREAN BEEF KABOBS (ASIAN)
I've been making this dish for years and it never fails to draw rave reviews. Using a good cut of meat is key, so it will be very tender. I use beef tenderloin or sirloin (choice at the minimum). The longer you marinate the beef the better the flavor (over night at a minimum). Cooking time does not include time to marinate.

- Cut tenderloin or sirloin beef up into big chunks (2" x 2" cubes). Score 1/4' deep all sides with a sharp knife (several slices per side). Using a two prong fork, pierce the meet repeatedly on all sides (3 or 4 times per side). This will allow the juices to work their way deep into the meat.
- Chop the scallions (just the white part) and mince the garlic.
- Add all the ingrediences together and pour over the meat in a non-reactive container. I use a large zip lock bag.
- Marinate the meet for at least 12 hrs (24 is best).
- Place the meat on skewers with your choice of veggies in between. I like onions, bell peppers, and mushrooms.
- Grill over hot coals turning occasionally and brushing often with remaining marinade. Cook to desired doneness.

- Trim all fat from steak. Cut steak crosswise into 1/4-inch thick strips.
- Make marinade by combining brown sugar, sherry, soy sauce, sesame oil, garlic and ginger.
- Place beef and half of the marinade mixture in sealable plastic bag, turning to coat. Close securely and marinate in refrigerator 20 minutes. Reserve remaining marinade.
- Meanwhile, soak 16 bamboo skewers (6") in water 10 minutes.
- Remove beef from marinade and discard marinade.
- Alternately thread beef (weaving back and forth) and green onion onto skewers.
- Place kabobs on rack in broiler pan so surface of kabobs is 3-4 inches from heat. Broil 5-6 minutes, turning once.
- Brush kabobs with reserved marinade during last 2 minutes.

- Preheat a grill. If you are using wooden skewers, soak in water 30 minutes.
- In a gallon size sealable plastic bag, combine all of the ingredients, including the beef. Seal the bag, squeezing out the air. Marinate 15 minutes.
- With tongs, remove the beef from the marinade; discard the remaining marinade. On each of 16, six-inch, metal or wooden skewers, thread one beef strip, piercing the beef in several places.
- Grill until cooked through, about 5 minutes on each side.
- Serve with either chinese mustard, duck sauce and/ or soy sauce to dip the skewers inches.

- In a large bowl, mix garlic, ginger, soy sauce, vinegar, oil and sugar. Remove the fat from the steak and cut the meat in dices of 1 inch. Add beef to the marinade and let rest for 10 minutes.
- On metal skewers or presoaked bamboo skewers, thread beef cubes by alternating with green onion. Set the barbecue to medium high. Brush the beef skewers with the marinade and put on a oiled grill of the barbecue. Close cover and cook about 10 minutes or until beef is grilled but still pink inside (flip the skewers 3 times during cooking time).
