Easy dinner in under 30 minutes. This creamy chicken and rice with veggies takes only one pan and is a entree the whole family will enjoy.

1 cup diced yellow onion ((about 1 medium onion))
2 tablespoons salted butter
2 chicken breasts ((cut into 1-2" pieces))
1 cup long grain white rice ((uncooked))
½ teaspoon garlic powder
½ teaspoon dried thyme or fresh thyme
½ teaspoon salt
3 cups low-sodium chicken broth
8 ounces frozen mixed vegetables
3/4 cup sour cream
1 cup sharp cheddar cheese ((shredded))
parsley ((optional garnish))

Steps:

  • Add butter and onion into a skillet over medium high heat and cook until onions are translucent, about 3 minutes.
  • Add in chicken and cook until chicken is opaque, about 3 more minutes. It's okay if chicken is not cooked through yet. It will continue cooking later on.
  • Stir in rice, garlic powder, thyme, salt, and chicken broth. Bring to a boil.
  • Once boiling, turn down heat, and cover. Simmer for 15 minutes.
  • Stir in frozen mixed vegetables, cover, and let cook for an additional 3-5 minutes until vegetables are cooked though.
  • Take pan off heat and stir in sour cream and cheese. Return the pan to stove and over low heat, let the mixture cook until cheese is melted, about 1-2 minutes.
  • Garnish with parsley, optional and serve. Enjoy!

Steps:

  • Cook the rice according to package instructions then drain. Rinse the meat, pat dry and cut into strips. Peel the onion and chop finely. Peel the carrots and celery and thinly slice. Thaw the peas.
  • Heat 2 tablespoons oil in a large frying pan and sear the meat on all sides, around 3 minutes. Add the vegetables and sauté for 3 minutes. Add the rice and remaining oil, sauté over high heat, stirring often, for 5 minutes and season with salt and pepper.

2 -3 chicken breasts, cubed
2 cups Minute Rice, cooked
1 cup frozen peas and carrot
2/3 cup sour cream
1 (10 1/2 ounce) can cream of chicken soup (or mushroom soup)
1 cup milk
1 tablespoon paula deen's house seasoning, divided (Paula Deen's House Seasoning Mix)
1 tablespoon dry ranch dressing mix
1 tablespoon olive oil

Steps:

  • Saute chicken seasoned with 1/2 tbsp of house seasoning in olive oil for a few minutes until brown and let cool slightly.
  • Mix chicken, remaining house seasoning and other ingredients in a medium bowl.
  • Pour into an 8x8 Pyrex dish and bake at 425 degrees for 20-25 minutes or until bubbly and beginning to brown.

1 medium red bell pepper, diced small

4 cups cooked rice (to save time use two 8.5-ounce packets precooked rice; I used Jasmine Ready Rice)
3 cups broccoli florets
1/4 cup water
1 teaspoon paprika
1 teaspoon cardamom

1 teaspoon freshly ground black pepper, or to taste
1 cup shredded cheese, optional
3 green onions, sliced into thin rounds

Steps:

  • To a large skillet, add the oil, sweet Vidalia onions, and cook over medium-high heat until onions are becoming soft and translucent, about 5 minutes; stir frequently.
  • Add the red peppers, chicken, and and cook for about 5 minutes, or until chicken is nearly cooked through; stir and flip frequently to ensure even cooking.

1 teaspoon kosher salt
½ teaspoon black pepper
1 teaspoon paprika
1 ½ pounds boneless skinless chicken thighs or breasts
1 tablespoons vegetable oil
1 tablespoon vegetable oil
1 medium size onion (chopped)
2 stalks of carrots (cut in small pieces (~½ cup))
2 stalks celery (cut in small pieces (~½ cup))
1 small bell pepper (cut into chunks (~¼ cup))
1 teaspoon ground cumin
2 cloves garlic (minced)
2 medium sized Yukon gold potatoes (cut into 1 inch cubes)
1 cup green beans (ends removed cut into 1-2 inch pieces)
1 28 oz can of diced tomatoes
1 14 oz can of tomato sauce
4 cups chicken stock
2 cups water
1 cup green peas
1 cup corn (fresh, frozen and canned would all work)
2 cups kale leaves (ribs removed)

Steps:

  • Prepare the chicken: Mix together salt, pepper, and paprika in a bowl. Pat dry chicken thighs using paper towels. Season chicken on both sides.
  • Sear the chicken: In a large heavy bottom pot (like a Dutch oven), heat 1 tablespoons of oil over medium heat. Sear chicken thighs, 3-minutes on each side. Transfer them onto a plate. At this point, they will not be fully cooked, which is fine. Do not wash the pot.
  • Sautee veggies: Heat vegetable oil in the now-empty pot over medium heat. Add in onion, carrots, celery, bell pepper, and ground cumin. Cook, stirring frequently, 8-9 minutes or until vegetables are softened.
  • Stir in the garlic and cook for 30 seconds.
  • Add in the rest of the veggies & cook: Add in potatoes, green beans, tomatoes (with their juices), tomato sauce, chicken stock, water and reserved semi-cooked chicken thighs (with their juices). Give it a large stir. Put the lid on and bring it to a boil. Once it comes to a boil, turn the heat down to medium-low and let it simmer for 15-17 minutes or until chicken thighs are fully cooked (when a thermometer inserted in the thickest part of the chicken it should at least register 165 degrees F or 74 degrees C).
  • Remove chicken from the pot onto a plate. Shred using two forks and put it back into the pot.
  • Stir in the peas, corn and kale leaves. Bring it to a one final boil and let it simmer for 4-5 more minutes.
  • Ladle into bowls and serve.

1 1/4 cups rice (uncooked)
3 tablespoons butter
2 cups chicken broth
3 tablespoons flour
1/2 cup onion (finely chopped)
1 cup cream
10 ounces frozen mixed vegetable
3 ounces French fried onion (store bought)

Steps:

  • Preheat the oven to 350 degrees F. Spray a 9 x 13-inch baking dish with non-stick cooking spray. Add the rice to the bottom of the baking dish.
  • Cut the chicken breast into bite size pieces.
  • Melt butter in a skillet and add the onion. Cook the onion until tender 2 or 3 minutes. Add the flour and stir in. Add the chicken broth and cream and cook until it starts to thicken.
  • Add the chicken to the rice and top with the frozen vegetables. Pour the sauce over the ingredients in the baking dish.
  • Cover with aluminum foil and bake for 30 minutes. Remove from the oven and remove the aluminum foil. Sprinkle the French fried onions over the top of the casserole and bake for another 15 to 20 minutes

6 boneless skinless chicken breast halves
3 tablespoons butter or margarine, divided
1 each medium green pepper, sweet red pepper and onion, julienned
1/2 pound fresh mushrooms, sliced
1 package (10 ounces) frozen cut broccoli, thawed and drained
1 can (10-3/4 ounces) condensed cream of broccoli soup, undiluted
1 cup sour cream
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon dried rosemary, crushed

Steps:

  • In a skillet over medium heat, brown chicken in 2 tablespoons butter. Set aside; discard drippings. In the same skillet, saute peppers and onion in remaining butter for 5 minutes or until crisp-tender. Add mushrooms and broccoli; cook for 3-5 minutes or until heated through. Add soup, sour cream, salt, pepper and rosemary; stir to mix. Spread half into a greased 13-in. x 9-in. baking dish. Add chicken; top with remaining vegetable mixture.
