Steps:
- Shape meatballs: Add all ingredients for the meatballs (EXCEPT for the oil) to a large bowl. Mix well, then shape into firm meatballs (I use about 2 teaspoons of mixture per meatball).
- Brown meatballs: Heat oil in a large skillet over medium-high heat, then brown the meatballs in batches on all sides. Be very careful when flipping them - slide a spatula underneath to keep them from breaking up. Set browned meatballs aside on a plate.
- Make the gravy: Lower heat to medium. Add butter to the skillet and melt, then add sliced onion and cook for 5-10 minutes, until very softened and golden brown. Stir in the flour, then stir in the beef broth until smooth.
- Simmer gravy: Simmer gravy until thickened, then carefully add the meatballs and finish simmering until meatballs are done in the middle. Serve over mashed potatoes.

BONNIE'S ITALIAN MEATBALLS
This is the way I make my basic meatballs. They are very flavorful and just wonderful in gravy, soups, spaghetti sauce, meatball sandwiches or eaten as a snack or appetizer. This recipe makes about 75 meatballs. I freeze cooked meatballs, 10 to a package, which is just the right amount for us for a meal. Great to have on hand...

- 1. Meatballs 101, Cook's Advice: Use a gentle hand when it comes to making meatballs. If you over mix them, they will be tough. For the most tender meatballs, mix the meat with the binder of milk and breadcrumbs and other ingredients just until everything is combined. Use a scoop to measure meatballs the same size. When making balls, don't pack them together too tightly, or they will cook up tough, rubbery, and chewy. Again, use a gentle hand when mixing and forming meatballs.
- 2. Lightly mix the meats, spices, Worcestershire sauce, garlic and cheese together.
- 3. Mix breadcrumbs with the milk. Add beaten eggs to the meat mixture.
- 4. Lightly mix by hand.
- 5. Forming the Meatballs: Using a 1 ½ inch or 2 inch scoop, make meatballs by scooping the mixture into your hand and gently forming a ball without packing the meat mixture.
- 6. Place the meatballs on the prepared pan.
- 7. Cooking the Meatballs: You can brown the meatballs on all sides in a heavy skillet, or you can use this oven method: Take a large sheet pan and line it with foil (reflective side up and they won't stick) and spray the pan with kitchen spray. Bake in a 375 oven about 30 minutes until the thermometer reaches 165 degrees. Do NOT overcook. Remember, some oven temps may vary.
- 8. These meatballs are delicious in soups or sauces. They don't fall apart.
VINNY'S GRAVY

- To make the meatballs: Put the bread in a bowl and drench with milk. Let soak for a few minutes, and squeeze the bread out like a sponge.
- In bowl, mix together the beef, pork, and veal until well combined.
- In another bowl, whisk together the Parmesan, breadcrumbs, parsley, salt, pepper, eggs, and garlic.
- Add the cheese mixture and soaked bread to the meat and mix well. Form into meatballs.
- Heat a large skillet over medium-high heat. A little olive oil and fry the meatballs in batches until well-browned and "hard", as Vinny says.
- Vinny says, "Eat a few."
- To make the sauce: Heat a pot over medium heat and add enough oil to cover the bottom. Add the garlic and onion and cook, stirring, until lightly browned. Add the tomato paste. Fill the tomato paste can with wine and pour into the pot. Add the tomatoes, and fill the can with water¿add the water. Add the parsley and salt and pepper. Stir well and bring to a boil. Lower the heat to a simmer and simmer, stirring occasionally, until slightly thick and fragrant, about 1 hour and 15 minutes.
- To make the sausage: Wipe out the skillet you fried the meatball in, and heat over medium-high heat. Add a little olive oil and brown the sausages in batches.
- Add the meatballs and sausages to the sauce and simmer, stirring occasionally, for 25 minutes.
- When ready to serve, cook the spaghetti according to the package instructions. Drain.
- Transfer the spaghetti to a large bowl and add a few spoonfuls of the sauce (without the meatballs and sausages). Mix to coat the spaghetti¿it should be only lightly coated with the sauce, adjust with more accordingly.
- Transfer the sauce to a platter and serve alongside the spaghetti at the table.
MEATBALLS IN BEEF GRAVY
For the best flavor I recommended to brown the meatballs in the skillet, the browned bits in the skillet will add flavor to the gravy, I have listed the yield for 4 please be aware that it is for four smaller size portions if you like lots of gravy then you may want to double the recipe ---prep time does not include preparing the meatballs --- serve with mashed potatoes

- Mix all meatball ingredients in a bowl using clean hands.
- Shape into 1-inch balls.
- Heat oil and butter in a skillet over medium-high heat (use a skillet with high sides to hold in the gravy and meatballs or use a saucepan) add in the meatballs in two batches and brown until almost cooked through turning frequently for even browning (about 10 minutes) remove to a plate.
- You may drain some fat from the skillet but leave in about 3 tablespoons.
- Add in onion and saute until softened (about 3-4 minutes) scraping any browned bits that have accumulated on the bottom of the skillet while cooking.
- Add in mushrooms cook stirring until softened.
- Add in flour and stir for 1 minute.
- Slowly add in beef broth; bring to a boil stirring/whisking constantly until smooth, bubbly and thickened.
- Add in Worcestershire sauce, ketchup and black pepper; bring back to a simmer stirring (if using add in the beef bouillon powder, start with 3 tablespoons ketchup you may add in more if desired).
- Add in cooked meatballs and simmer uncovered for about 20-25 minutes over low heat, stirring frequently.
- Season with salt to taste if desired.
- At the end of cooking stir in 1/4 cup sour cream until combined and heated through (do not boil).

We used to have this every Wednesday. This is essentially my grandma's recipe, I just add more cheese to the meatballs than she did. Sometimes I leave the neckbones out and add some Italian sausage.

- Place ground beef, pork, bread crumbs, Romano cheese, eggs, milk, seasoned salt and basil into a large bowl.
- Mix well with hands; shape into 24 balls.
- Brown meatballs in pan, making sure to keep a thin layer of water on the bottom of the pan at all times to prevent burning.
- While meatballs are cooking, start the gravy.
- Brown onion lightly in olive oil in a large pot.
- Add garlic and cook 1 or 2 minutes.(Do not burn.).
- Add tomato paste and water.
- Stir until tomato paste is thinned.
- Add remaining ingredients and mix well.
- Bring to a slow boil and reduce heat.
- When meatballs are done, add to sauce.
- Simmer, covered loosely, over low heat about 2 hours, stirring frequently to prevent burning.
- If sauce is too thick water may be added.
