- Shape meatballs: Add all ingredients for the meatballs (EXCEPT for the oil) to a large bowl. Mix well, then shape into firm meatballs (I use about 2 teaspoons of mixture per meatball).
- Brown meatballs: Heat oil in a large skillet over medium-high heat, then brown the meatballs in batches on all sides. Be very careful when flipping them - slide a spatula underneath to keep them from breaking up. Set browned meatballs aside on a plate.
- Make the gravy: Lower heat to medium. Add butter to the skillet and melt, then add sliced onion and cook for 5-10 minutes, until very softened and golden brown. Stir in the flour, then stir in the beef broth until smooth.
- Simmer gravy: Simmer gravy until thickened, then carefully add the meatballs and finish simmering until meatballs are done in the middle. Serve over mashed potatoes.

- MEATBALL DIRECTIONS.
- In food processor chop onions, garlic, parsley. Soak bread in milk, then put in food processor with eggs and cheese. Add this mixture to ground beef with salt and pepper. Add bread crumbs to make soft firm ball. Roll meatballs, place on baking sheet and bake in 350 degree oven 30-40 minutes. Put in gravy and simmer for 1-2 hours.
- TOMATO GRAVY DIRECTIONS:.
- Sautee' onions and garlic until soft. Add remaining ingredients, stir and simmer 1 hour. Add meatballs and simmer another hour.
RUTH'S GERMAN BOILED MEATBALLS AND GRAVY
This is my Mom's version of German meatballs. Her mother used to make these but of course never used a recipe - she never even had a stove - always used a coal burning stove! Mom kept working on it and used a few more conventional ingredients and came up with this recipe. She always served it over extra-wide egg noodles.

- Mix the veal, pork, beef, egg, 1 teaspoons salt, pepper and onion together thoroughly.
- Shape mixture into 1 1/2 inch balls.
- To boiling water, add onion soup mix, bay leaf and 1/2 tsp salt - stir until mixed.
- Drop meatballs into boiling water; cover pan, reduce heat and simmer for 1/2 hour.
- Combine flour and cold water to make a thickening agent.
- Add to simmering meat stock and bring back to a boil.
- Boil one minute uncovered or until gravy is slightly thickened. (If you would like a little more gravy, add a bit more water and thickening agent).
- Serve over noodles, rice or mashed potatoes.
OVEN MEATBALLS AND GRAVY
Made this last night after watching Tyler's Ultimate. I just changed it up a little bit. These are so incredibly tender and moist. I served with plain white rice, vegetable and garlic bread.

Steps:
- Cube french bread and soak in milk about 10 minutes or until soft.
- Crumble meat in large bowl and add eggs, onion, garlic Italian seasoning, salt and pepper.
- Squeeze milk out of bread and crumble bread into meat mixture.
- Mix well.
- Shape into balls and roll in bread crumbs.
- In dutch oven, heat olive oil.
- Brown meatballs in batches, turning to brown all sides.
- After browning, drain off all but about 1 tbsp oil and add butter and beef broth to pot.
- Add meatballs back in.
- Cover and bake in a 350 oven for 45 minutes-1 hour.
- When meatballs are done-- remove to platter and keep warm.
- Add cornstarch to the beef broth (I pour about 1/2 cup of broth into measuring cup and add the cornstarch, then pour back into pot).
- Bring to a boil over medium heat and cook, stirring until thickened for gravy.
- Serve over meatballs.

We used to have this every Wednesday. This is essentially my grandma's recipe, I just add more cheese to the meatballs than she did. Sometimes I leave the neckbones out and add some Italian sausage.

- Place ground beef, pork, bread crumbs, Romano cheese, eggs, milk, seasoned salt and basil into a large bowl.
- Mix well with hands; shape into 24 balls.
- Brown meatballs in pan, making sure to keep a thin layer of water on the bottom of the pan at all times to prevent burning.
- While meatballs are cooking, start the gravy.
- Brown onion lightly in olive oil in a large pot.
- Add garlic and cook 1 or 2 minutes.(Do not burn.).
- Add tomato paste and water.
- Stir until tomato paste is thinned.
- Add remaining ingredients and mix well.
- Bring to a slow boil and reduce heat.
- When meatballs are done, add to sauce.
- Simmer, covered loosely, over low heat about 2 hours, stirring frequently to prevent burning.
- If sauce is too thick water may be added.

BONNIE'S ITALIAN MEATBALLS
This is the way I make my basic meatballs. They are very flavorful and just wonderful in gravy, soups, spaghetti sauce, meatball sandwiches or eaten as a snack or appetizer. - 1. Meatballs 101, Cook's Advice: Use a gentle hand when it comes to making meatballs. If you over mix them, they will be tough. For the most tender meatballs, mix the meat with the binder of milk and breadcrumbs and other ingredients just until everything is combined. Use a scoop to measure meatballs the same size. When making balls, don't pack them together too tightly, or they will cook up tough, rubbery, and chewy. Again, use a gentle hand when mixing and forming meatballs.
- 2. Lightly mix the meats, spices, Worcestershire sauce, garlic and cheese together.
- 3. Mix breadcrumbs with the milk. Add beaten eggs to the meat mixture.
- 4. Lightly mix by hand.
- 5. Forming the Meatballs: Using a 1 ½ inch or 2 inch scoop, make meatballs by scooping the mixture into your hand and gently forming a ball without packing the meat mixture.
- 6. Place the meatballs on the prepared pan.
- 7. Cooking the Meatballs: You can brown the meatballs on all sides in a heavy skillet, or you can use this oven method: Take a large sheet pan and line it with foil (reflective side up and they won't stick) and spray the pan with kitchen spray. Bake in a 375 oven about 30 minutes until the thermometer reaches 165 degrees. Do NOT overcook. Remember, some oven temps may vary.
- 8. These meatballs are delicious in soups or sauces. They don't fall apart.
FRANKIE'S MEATBALLS (PASTA SAUCE)

- Mix the eggs and meat thoroughly to evenly distribute. Add the Pecorino Romano cheese, breadcrumbs, chopped parsley, garlic, salt and pepper.
- Mix thoroughly together by hand in order to combine all the ingredients.
- Then, start making your balls. Remember to compress the ball with your hands so they are very compact and will not crack. This is important because a ball with any cracks, or not compact enough, may break during the shallow frying stage.
- Now, heat the olive oil in a large frying pan and fry the meatballs over medium heat until golden brown. If the meatballs stick to the bottom of the pan, you may use a non-stick frying pan or you can fry the meatballs two at a time and keep rolling then in the hot oil.
- Place the meatballs on a new clean plate or a tray.
- Do not discard the olive oil but filter it into a small bowl in order to remove the residue created when frying the meatballs. Return filtered oil to the pan, heat, and add the chopped onion and garlic. Sweat off for about 2 minutes.
- Add the tomato puree and cook on medium heat for about 3 minutes, stirring constantly.
- Add 150 ml (5 fl oz or 5/8 cup) of hot water to the frying pan and cook for one minute, stirring. The gravy is done, so remove the pan from the heat and set aside.
- In a large saucepan (a casserole would do the job), add the chopped tomatoes and cook on medium heat for 5 minutes.
- Then, add the gravy (tomato puree mixture) from the frying pan. Add the reserved browned meatballs. Cover with hot water. In my case, I used a very large saucepan so to cover the meatballs, I needed 2 ½ cups of water. A slightly smaller saucepan would probably require less water, I would say 1 2/3 cups.
- Add the chopped parsley, a pinch each of salt and pepper. Mix thoroughly, but carefully, with a wooden spoon, so as to not break the meatballs. Now, cook on medium heat for about 15 minutes.
- Cover (leaving one side of the lid slightly open) and simmer for about 2 ½ hours, stirring every 20 minutes to prevent sticking on bottom of the pan. Also, when doing that, turn the meatballs so the part that was face up will get the next 20 minutes cooking facing the bottom and keep going like that until the end. After 1 ½ hours simmering, check for seasoning; usually you need to add some salt.
- Serve the meatballs over al dente pasta and use the red sauce from the pan to coat the pasta. Finally, sprinkle with freshly grated Pecorino Romano cheese (alternatively Parmesan cheese).

A hand me down recipe of true Italian origin that was shared with me by a good friend. The recipe has been in his Italian family for years. Very simple to make with a fairly short cooking time as compared with others!!!!

- In a large pot combine tomato sauce, tomato puree, tomato paste, water, sugar, oregano, 2 tspn salt, 1 tspn pepper, garlic cloves and bring to a simmer on low heat.
- Combine ground beef, bread, eggs, Romano cheese, 1 1/2 tspn salt, garlic powder and 1/4 tspn pepper.
- Mix ingredients and form into meatballs 2-3" in diameter.
- In a large skillet use enough of the veg oil to have approx 1/8" covering bottom
- Heat on medium.
- When oil is hot enough, brown meatballs on all sides and add to pot with sauce.
- Brown pork neck or ribs in same pan and add to sauce.
- Add at least 1/2 of remaining oil in skillet to pot.
- Don't forget to add all of those small cooked bits from skillet bottom.
- (Great Flavor!!!) Any excess oil or fat can be spooned off of sauce after cooking.
- Cook uncovered (simmer) for 1 1/2 hrs.

BONNIE'S MEATBALLS AND GRAVY
These meatballs are one of my Dad's favorite meals. He calls them... "Those little meatballs". This dish is very versatile. You can serve it in a well of mashed potatoes like my photo, or you can serve it over rice or egg noodles. Comfort food at its best! You can also make these up ahead of time, put them in a crockpot to keep warm for the party. These are excellent as open-face style meatball sandwiches the next day. Enjoy! The Photo is my own. - Using a large mixing bowl, add 1/4 cup of milk to it and place a slice of bread in it, soak it up, then squeeze the milk out. Discard any remaining milk. Add the egg and beat slightly with a fork. Add the ground beef and the rest of the ingredients and mix well.
- Shape the mixture with your hands into walnut sized meat balls. (wet your hands if you need to) Heat some Canola oil in a large skillet over medium high heat. Add the meatballs and brown them all over. Remove with a slotted spoon to a paper towel lined plate to drain. Cover loosely with foil to keep them warm. Brown the meatballs in batches, don't crowd them in the pan. They should be a nice golden brown. After you have fried all the meatballs, measure out 2 tablespoons of grease, discard the rest, leaving the brown bits in the pan. Add the 2 tablespoons of grease back to the pan and make the gravy. Over medium heat, whisk the flour into the grease, let it cook one minute, then add the beef broth, milk, lemon zest, thyme, creamed horseradish and kitchen bouquet. Cook the gravy until it thickens. It will be sort of white. Add more salt if needed.
- Place the meatballs into a shallow casserole dish. Pour the gravy over the top of the meatballs, Bake uncovered for 25 minutes in a 350 degree, pre-heated oven until bubbling and the gravy turns brown. Serve hot and spooned over mashed potatoes, buttered noodles or steamed white rice. This is delicious! Enjoy!

- In a large bowl, mix ground beef, breakfast sausage, baby Bella mushrooms, onion, garlic and herb breadcrumbs, 1 egg beaten, and a dash of Worcestershire sauce until well incorporated.
- Roll the meat mixture into medium-sized balls. I like mine the size where I need to cut them in half to eat them like a lady, but you can make them whatever size you prefer.
- In a large skillet (and I do mean large) heat about 2 TBLS of olive oil over medium heat. Brown meatballs on all sides and set aside. - After removing all of the meatballs from the pan, it’s time to make the gravy! With the pan on medium heat and without discarding any of the meat drippings, add the butter and flour to the pan. Whisk for a minute or so until it’s free of lumps and then slowly add the beef broth whisking as you go. Once the gravy is free of lumps turn the temperature to low and simmer for 30 minutes, stirring occasionally.
