FRENCH ONION DEVILED EGGS
French onion dip adds flavor to the creamy filling in these popular appetizers. For a pretty presentation, pipe the filling into the egg whites and sprinkle with paprika, suggests Joyce Turley of Slaughters, Kentucky.

- Slice eggs in half lengthwise; remove yolks and set whites aside. In a small bowl, mash yolks. Add the mayonnaise, onion dip, milk and mustard; mix well. , Pipe or stuff into egg whites. Sprinkle with paprika if desired. Refrigerate until serving.

Steps:
- Place eggs in a medium saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool and peel.
- Cut eggs in half. Remove yolks and place in a medium bowl. Mash together with celery, onion, mayonnaise, salt and hot pepper sauce.
- Stuff the egg white halves with the egg yolk mixture. Sprinkle eggs with paprika. Chill covered in the refrigerator until serving.

This is a new creative way I've discovered to use onion soup mix! When adding the soup mix, I find it easier to just pour it directly from the envelope and eye it. This way, you get more of the powder and less of the onion.

- Cool and peel 6 hard-boiled eggs.
- Cut in half lengthwise, and place yolks in a separate small bowl; mash with fork.

CLASSIC DEVILLED EGGS

- Put the eggs in a pan of just simmering water and cook for 10 mins. Turn off the heat, and leave the eggs to rest in the hot water for 2 mins. Drain, then transfer the eggs to a bowl of ice-cold water and leave to cool. Peel the eggs and slice in half, then scoop the yolks out into a bowl with the mayonnaise, yogurt, mustard, spring onions, celery salt and cayenne pepper. Mash everything together until smooth, then spoon into a piping bag fitted with a plain round nozzle.
- Pipe the mixture into the hollowed-out eggs, or carefully spoon into the middles using a small spoon. Sprinkle over some chives, if using, then serve.

- Place a skillet over medium heat. Add the oil and shallots and saute for 5-8 minutes until soft and golden. Salt and pepper to taste, and turn the heat off.
- Meanwhile, peel the hard boiled eggs. Cut them in half and remove the yolks. Place the yolks in the food processor, and lay the empty whites on a plate or serving board.
- Drain (or strain) the sour cream so it is as thick as possible. Place it in the food processor along with the sautéed onions. Puree until totally smooth, then stir in 2 tablespoons of fresh chopped chive. Salt and pepper to taste.
- Scoop the sour cream and onion dip filling into a plastic zip bag. Snip off one corner and use the bag to pipe the filling into the centers of each egg white. Garnish with chopped chive or crumbled potato chips, or both. Cover and refrigerate until ready to serve.
