CHINESE BARBEQUE PORK (CHAR SIU)

Chinese Barbeque Pork (Char Siu) image

In addition to its impressive high-gloss appearance and savory taste, this Chinese barbeque pork is quite easy to make at home--even without a fancy ceramic grill.

Provided by Chef John

Categories     World Cuisine Recipes     Asian     Chinese

Time 5h10m

Yield 6

Number Of Ingredients 14

⅔ cup soy sauce
½ cup honey
½ cup Chinese rice wine (or sake or dry sherry)
⅓ cup hoisin sauce
⅓ cup ketchup
⅓ cup brown sugar
4 cloves garlic, crushed
1 teaspoon Chinese five-spice powder
½ teaspoon freshly ground black pepper
¼ teaspoon cayenne pepper
⅛ teaspoon pink curing salt
1 (3 pound) boneless pork butt (shoulder)
1 teaspoon red food coloring, or as desired
1 teaspoon kosher salt, or to taste

Steps:

  • Place soy sauce, honey, rice wine, hoisin sauce, ketchup, brown sugar, garlic, five-spice powder, black pepper, cayenne pepper, and curing salt in a saucepan. Bring to a boil on high heat; reduce heat to medium-high. Cook for 1 minute. Remove from heat. Cool to room temperature.
  • Cut pork roast in half lengthwise. Cut each half again lengthwise forming 4 long, thick pieces of pork.
  • Transfer cooled sauce to a large mixing bowl. Stir in red food coloring. Place pork sections into sauce and coat each piece. Cover with plastic wrap and refrigerate 4 to 12 hours.
  • Preheat grill for medium heat, 275 to 300 degrees F (135 to 150 degrees C) and lightly oil the grate. Line a baking sheet with parchment paper.
  • Remove sections of pork from marinade and let excess drip off. Place on prepared baking sheet. Sprinkle with kosher salt to taste.
  • Transfer pork sections to grate over indirect heat on prepared grill. Cover and cook about 45 minutes. Brush with marinade; turn. Continue cooking until an instant-read thermometer inserted into the center reads 185 and 190 degrees F, about 1 hour and 15 minutes more. Do not use any more marinade on cooked meat until after you boil it.
  • Place leftover marinade in saucepan; bring to a boil; let simmer 1 minutes. Remove from heat. Now you can use it to brush over the cooked pork.

Categories     Chinese

Time 4h15m

Yield 4-5 serving(s)

Number Of Ingredients 8

5 -6 minced fresh garlic cloves
1 piece fresh ginger, minced
1 cup hoisin sauce
1/2 cup sherry wine
1/2 cup soy sauce (low-sodium works too-)
1/2 cup sugar
1/2 teaspoon Chinese five spice powder
3 teaspoons red food coloring

Steps:

  • Mix all ingredients in a bowl,( or a jar with a tight fitting lid), until the sugar is dissolved. Refrigerate until you are ready to use it.
  • *You can set aside some for use as a dipping sauce, but you must first bring it to a full rolling boil, over med. heat, then reduce the heat to low, and simmer until it is thick, and slightly reduced.
  • **When you are ready to cook, marinate meat for 4-24 hours, turning once every two hours. You then grill or broil the meat until it is cooked through,(and slightly charred- this adds to the flavor!).

SWEET AND SPICY ASIAN BARBECUED RIBS

Sweet and Spicy Asian Barbecued Ribs image

Provided by Food Network

Time 2h15m

Yield 4 servings

Number Of Ingredients 15

2 slabs baby back ribs, trimmed of excess fat, about 3 pounds
1/3 cup Chinese five-spice powder
1 strip thick cut bacon, cut into 1-inch pieces
1/2 shallot, finely chopped
1 clove garlic, minced
3 tablespoons light soy sauce
1 tablespoon rice vinegar
1 tablespoon hoisin sauce
1/3 cup ketchup
2 heaping tablespoons honey
2 heaping tablespoons apricot preserves
2 heaping tablespoons brown sugar
1 teaspoon freshly grated ginger
1 1/2 teaspoons chili sauce (recommended: Sriracha)
2 green onions, chopped, for garnish

Steps:

  • Preheat a grill to approximately 250 degrees F.
  • Lightly season the ribs with the five-spice powder so it forms a light crust. Put the ribs, meat side up, over an area of the grill with indirect heat. Let the ribs cook for 2 hours.
  • While the ribs are cooking, prepare the barbecue sauce. Heat a medium saucepan over medium heat. Add the bacon and cook slowly to render its fat, about 4 to 5 minutes. Discard the particles with a slotted spoon, leaving the bacon fat in the pan. Reduce the heat to low, add the shallot and garlic, and saute until fragrant and slightly caramelized, 2 to 3 minutes. Pour in the light soy sauce and rice vinegar. Allow the liquid to deglaze the pan for a moment, and then whisk vigorously to scrape any brown bits from the bottom of the pan. Add the hoisin sauce and ketchup, and continue whisking together until well incorporated. Simmer the glaze for 2 to 3 minutes. Stir in the honey, apricot preserves and brown sugar, 1 tablespoon at a time. Simmer for an additional 2 to 3 minutes. Add the ginger, whisk and keep simmering for 2 to 3 minutes. Whisk in the chili sauce and let the sauce simmer for a final 8 to 10 minutes. Remove the pan from heat. Reserve 1/4 cup of the sauce in a separate bowl.
  • After the ribs have cooked for 1 hour, begin basting them with the barbecue sauce. Coat them well once every 15 minutes, until the ribs reach an internal temperature registers 165 degrees F on an instant-read thermometer. Remove the ribs from the grill to a cutting board and let rest, tented with aluminum foil for 5 minutes. Slice the ribs between each bone and arrange them on a serving dish. Drizzle with the reserved glaze and garnish with the chopped green onions.

ASIAN BARBECUE SAUCE

Great for ribs and poultry

Provided by G. Stephen Jones

Categories     Sauces

Time 20m

Number Of Ingredients 11

⅔ cup sugar
2 tablespoons water
¾ cup hoisin sauce
¼ cup rice vinegar
2 tablespoons fish sauce
2 tablspoons soy sauce
2 tablespoons plum jam
⅔ cup shallot (minced)
4 cloves garlic (minced)
2 tablespoons fresh ginger (peeled and minced)
1 pinch Chinese five spice powder

Steps:

  • Place the sugar and water in a large heavy-bottomed sauce pan. Stir until sugar is evenly moistened.
  • Combine the hoisin sauce, rice vinegar, fish sauce and soy sauce in a bowl. Set aside.
  • Heat on medium, stirring, until the mixture comes to a boil. Once the sugar has dissolved, stop stirring, but swirl the pan gently.
  • Cook the sugar until it reaches a medium-amber color. Immediately pour in the hoisin sauce mixture, stirring vigorously. Be careful, because the mixture will bubble up and the caramel will most likely harden.
  • Turn the heat down to medium-low and add the honey, shallot, garlic ginger and 5 spice. Whisk together until the caramel has melted back into the sauce
  • Turn the heat down to low and simmer for about 5 minutes, or until the sauce has thickened slightly.

CHAR SIU: CHINESE BARBECUE SAUCE

Char Siu: Chinese Barbecue Sauce image

Traditional Chinese barbecue sauce (char siu) is different from the American tomato-based but is still thick and delicious, perfect at any BBQ.

Provided by Derrick Riches

Categories     Sauce

Time 20m

Number Of Ingredients 8

1/2 cup/120 mL sherry
2/3 cup/160 mL hoisin sauce
2/3 cup/160 mL soy sauce
1/2 cup/120 mL sugar
4 cloves garlic (minced)
2 teaspoons/10 mL black bean paste
1 1/2 teaspoons/7 1/2 mL Chinese five spice powder
1 teaspoon salt

Steps:

  • Gather the ingredients.
  • Combine all of the ingredients, except for the salt, in a double boiler and mix well. Alternatively, you can combine the ingredients directly in a saucepan, but this method will require more frequent stirring to avoid sticking or burning on the bottom.
  • Simmer over medium to medium-low heat for 10 minutes, or until the sauce begins to thicken. Taste and add salt, if needed.
  • Once the sauce has thickened, remove from heat and allow the mixture to cool for 5 to 10 minutes. Use right away on your favorite recipes, or let cool off completely and transfer to a container with a lid to store in the fridge.

2 Tbsp rice wine vinegar
1 Tbsp fish sauce - optional but it really brings it together

  • The Protein: Grilled Sliced Brisket. The centerpiece of any Korean barbecue is the meat. Whether you marinate or not, the first rule to getting it right remains the same: Embrace the fast and furious.
  • The Protein: Soy and Sesame Short Ribs. The Korean grill favors thin pieces of meat cooked quickly over high heat, so the proteins don’t dry out. This method works just as well for rib eye as it does for short ribs.
  • The Protein: Kalbi. “Jeolgi-jeolgi” (literally, “chewy-chewy”) is a prized texture in Korean barbecue. As it turns out, using your teeth to tear into a piece of meat feels really good.
  • The Protein: Bulgogi. For this basic bulgogi recipe, cutting the meat into very thin strips allows it to absorb the hot-sweet-salty marinade in minutes, not hours.
  • The Protein: Gochujang Pork Shoulder Steaks. Korean barbecue doesn't have to be steak; Seattle chef Rachel Yang recommends grilling pork shoulder. Keep an eye on the edge of the meat where it touches the grill: When it’s browned, turn the pork over.
  • The Protein: Korean Fried Chicken Wings. These fried chicken wings—from Edward Lee, author of Smoke and Pickles and chef at 610 Magnolia and Milkwood in Louisville, Kentucky—may not technically be barbecue, but they're goooood.
  • The Protein: Korean Braised Short Ribs. Like any good braise, this one only gets better with time. View Story.
  • The Protein: Barbecue Ribs with Gochujang Sauce. This gochujang rub is great on ribs, but would also work on a pork shoulder before braising, or bone-in pieces of chicken.
  • The Protein: Grilled Sesame Squid. For this dish from Jiyeon Lee (of Sobban and Heirloom Market BBQ in Atlanta), make sure to buy whole squid; precut rings will slip through your grill grate.
  • The Banchan (a.k.a. Sides): Pickled Carrots with Tarragon. The Korean table is almost as much about the accompaniments as it is the meat—that’s the purpose of the banchan, all those crunchy and acidic side dishes that balance your fatty, smoky proteins.

  • OYSTER SAUCE. Oyster sauce is a thick, rich, dark-colored, syrupy sauce made from (no shocker here) oysters—oyster juice, to be specific. To make oyster sauce, you use a base of oyster juice (which is what’s left over from boiling and simmering oysters in a pot for an extended period of time) and combine it with salt, sugar, and soy sauce to enhance the umami flavor.
  • SOY SAUCE. Soy sauce may just be one of the most ancient condiments, with records of its use dating back to 300 CE! Although soy sauce may seem pretty simple due to its short ingredient list (soybeans, wheat, and a yeast culture), there’s a lot of time and love that goes into making it.
  • DARK SOY SAUCE. Dark soy sauce is made the exact same way as light soy sauce, but it’s fermented for a longer period of time to achieve a richer, more full-bodied flavor.
  • PONZU SAUCE. A sauce that’s tangy, sour, sweet, bitter, and salty all at once, ponzu is made with a blend of popular Asian ingredients including rice vinegar, rice wine, soy sauce, seaweed, and bonito flakes (dried and fermented tuna).
  • THAI ROASTED RED CHILI PASTE. Thai roasted chili paste is a blend of all kinds of goodness, such as red chilies and Asian spices like tamarind.
  • FISH SAUCE. Fish sauce is made by fermenting what you would literally call “fish juice” for up to two years. I’d be lying if I said it was a sauce known for having a pleasant aroma, but it does an amazing job at adding the perfect umami flavor to the Asian classics such as pad thai, curries, and soups.
  • COCONUT AMINOS. Coconut aminos are made from the sap of coconut blossoms. If you were to compare the flavor of coconut aminos to another Asian sauce, it would be closest to soy sauce or tamari, but it’s slightly sweeter, a little saltier, thinner in texture, and darker in color.
  • HOISIN SAUCE. A slightly sweet, slightly salty, thick reddish-brown sauce. You could almost say it’s like the Asian version of ketchup or BBQ sauce.
  • SAMBAL OELEK. Sambal oelek is a fiery Indonesian sauce made from a variety of hot chili peppers, combined with fish sauce, shallot, garlic, ginger, lime juice, rice vinegar, and a slight amount of sugar.
  • HOT CHILI OIL. Dried hot chili pepper, chili flakes, or chili powder preserved in oil. Sometimes other spices, such as star anise, garlic, or paprika are added to the chilis and oil for additional flavor.
