This cheesy and creamy hot dip is perfect for entertaining and can also be served as an appetizer. Serve with pita bread, baguette, tortilla chips, or veggies.

1 (8 ounce) package cream cheese, softened
½ cup mayonnaise
½ cup sour cream
2 teaspoons minced garlic
2 cups grated Asiago cheese
½ cup minced fresh parsley
1 ½ cups frozen chopped spinach, thawed and drained

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Combine the cream cheese, mayonnaise, sour cream, and garlic in a mixing bowl. Add the Asiago cheese and parsley; mix well. Press as much moisture out of the spinach as you can; stir into the mixture. Spread into the bottom of an 8 1/2 x 10 baking dish.
  • Bake in the preheated oven until the middle is bubbling and the edges are golden brown, 20 to 25 minutes.

10 oz Boxes of frozen Spinach. (Cooked properly and water poured out.)
2 tsp Garlic, minced.
2 cups Heavy cream.
½ stick Butter.
2 tbsp Onion, minced.
8 oz Asiago cheese, grated.
6 oz Parmesan, grated.
4 oz Cream Cheese.
½ cup Cup of Chicken Stock.

Steps:

  • Use a large, deep pan on low flame, pour some olive oil (we prefer Vito and Joe's extra virgin olive oil) in the pan, and then put the chicken stock. Let the mixture boil.
  • Simultaneously, in another pan, melt some butter, add onions and garlic. Wait till the onions get translucent and the garlic turns into a golden brown color.
  • I use chopped spinach but if you are using fresh spinach then roughly chop it and put it in the chicken stock mixture. Cover the pan for 3-4 minutes and then uncover it. Stir the mixture.
  • Lower the flame and continue to cook the spinach for another 5-7 till you see the spinach cooking properly.
  • Once the garlic turns into golden brown color and onions are translucent, add asiago cheese, cream cheese, and parmesan into the pan. Make sure the flame is low, continue to cook. Add some salt and pepper, according to your taste. Cook till the sauce is thick.
  • Once the spinach is cooked, drain it properly so that there is no moisture left as it will not give the same texture when being served. As the Spinach is drained properly, add the spinach to the sauce.
  • Cook the dish for another 2-3 minutes until it cooks down and the sauce is thickened.
  • Enjoy the delicious dish.

NB There was a wrong amount for the mace in the recipe - It said 1 tsp. It is now corrected to the correct amount of 1/4 tsp. Easy Tasty appetizer. Can be a "Do ahead" recipe. If you wish you can make this as a side dish for dinner just double the size of the crepes. The crepes as appetizers should be apprx 6" across. The recipe may be cut in half or doubled. Make a large batch of crepes they freeze really well. Just layer them with wax paper between each and wrap well in plastic . Then you will have them on hand for any easy appetizer - Enjoy!

2 eggs
1/2 cup all-purpose white flour
1/2 cup milk
1 tablespoon water
1 1/2 teaspoons cayenne, peppers ground
1 medium tomatoes, chopped
6 tablespoons cooking onions, chopped
8 tablespoons white mushrooms, chopped
1/4 teaspoon mace, ground
salt & pepper
4 cups spinach, fresh, chopped, firmly pressed into the cup
2 slices bacon, fried, crumbled (optional)
8 tablespoons asiago cheese, grated

Steps:

  • Beat together the crepe ingredients.(Egg, Flour, Milk & water).
  • Pour approx 3 tbsp of batter into a no stick heated pan (medium High heat) swirl around to form a 6" crepe.
  • Cook 1 minute flip and cook a further 1/2 minute.
  • Remove & place on a plate with a pieces of wax paper covering it. Continue til you have cooked all the crepes.
  • Filling:.
  • Saute the tomato, onion & mushrooms in a medium size fry pan until the onion is translucent (approx 5 minutes).
  • Add Salt & Pepper & Mace.
  • Add spinach and stir until the spinach has wilted - (add bacon if using).
  • Place 2 1/2 tbsp of filling on edge of each crepe, roll up and place it in an oven proof dish.
  • You may now set the ready crepes aside until 10 minutes before serving or continue to the end of the recipe.
  • Sprinkle the Asiago over the crepes.
  • Bake in 375 oven for 10 minutes. If the asiago isn't golden broil for a minute.
  • Serve warm.

1 teaspoon chopped garlic
2 tablespoons all-purpose flour
1 3/4 cups chicken broth
2 1/4 cups heavy cream

1 teaspoon black pepper
1 pinch cayenne pepper
1/4 cup white wine
1/4 cup shredded asiago cheese
1 ounce butter

Steps:

  • In a saucepan melt 2 ounces butter.
  • Add onions and chopped garlic.
  • Saute over medium heat for 5 minutes.
  • Add flour and mix thoroughly.
  • Cook for 4 minutes, then add the chicken broth, let thicken and add the cream and reduce for 20 minutes.
  • Add the salt, pepper and cayenne.
  • Whisk in white wine and let simmer for another 5 minutes.
  • Turn off the flame and whisk in the other 1 ounce of butter and asiago cheese.
  • Cool in refrigerator.
