Steps:
- In a large pot of boiling salted water, cook pasta until al dente according to package directions. Drain, reserving 1 cup of pasta water. Return pasta to pot.
- Meanwhile, in a large skillet, heat 1 tablespoon oil over medium-high. Add onion and garlic, season with salt and pepper, cook, stirring occasionally until browned, 3 to 4 minutes. Add wine and cook until evaporated, about 2 minutes.
- Stir in artichokes and cook until starting to brown, 2 to 3 minutes. Add olives and half of the tomatoes; cook until tomatoes start to break down, 1 to 2 minutes. Add pasta to skillet. Stir in remaining tomatoes, oil, cheese, and basil. Thin with reserved pasta water if necessary to coat the spaghetti. Serve with additional cheese.

- Fill a 6-qt. stockpot three-fourths full with water; add 2 teaspoons salt and bring to a boil. Add asparagus; cook, uncovered, 1-2 minutes or just until crisp-tender. Remove asparagus and immediately drop into ice water. Drain and pat dry., In same pot of water, cook pasta according to package directions for al dente. Drain, reserving 1 cup pasta water. Return pasta to pot., Meanwhile, in a large skillet, heat 1 tablespoon oil over medium-high heat. Add artichoke hearts; cook and stir 3-4 minutes or until lightly browned. Add garlic; cook 1 minute longer. Add to pasta., Add asparagus, goat cheese, parsley, lemon peel, lemon juice and the remaining salt and oil; toss to combine, adding enough reserved pasta water to coat. Heat through. Serve with Parmesan cheese.

HEALTHY MEDITERRANEAN PASTA WITH ARTICHOKES AND OLIVES

Steps:
- Bring 3-4 quarts of water to boil. Add 2-3 tsp salt and raw pasta. Let it cook for 7 mins (or based on package instructions). Drain and rinse with cold water. Keep it aside.
- While the pasta is getting cooked, heat some cooking oil in a large skillet over medium heat. Add chopped garlic and saute until fragrant for about 30-40 seconds.
- Then add diced zucchini, halved grape or cherry tomatoes (reserve some for garnishing later) and cook them for about 5 mins or until tender.
- Season with salt and black pepper.
- Now add cooked pasta, artichoke hearts, olives, and fresh basil leaves. Drizzle some extra virgin olive oil and gently mix everything well.
- Finally, garnish with fresh basil leaves and cherry tomatoes. Serve warm.

Steps:
- Bring a pot of water to a boil and add salt.
- Add pasta, cook for 8 to.10 minutes, until almost done and drain, reserving 1/4 cup water.
- Heat the olive oil and melt the butter in a skillet over medium heat.
- Add the garlic, and artichoke hearts and cook 5 minutes, until heated through.
- Add the cooked pasta to the pan and toss for a few minutes.
- Add pasta water and Parmesan cheese to taste and stir thoroughly before serving.

- In a large pot, bring 4 quarts water to a boil. Add the pasta and 1 tablespoon salt, then cook, stirring occasionally, until just shy of al dente. Reserve about 1 cup of the cooking water, then drain.
- Return the pot to medium and add the oil, anchovies and garlic. Cook, stirring occasionally and breaking up the anchovies, until the mixture is sizzling and fragrant, 30 to 60 seconds. Add the artichokes and cook, stirring occasionally, until beginning to brown, about 3 minutes. Add the olives, capers, lemon zest and juice, the pasta and ½ cup of the reserved cooking water; cook over medium-high, stirring occasionally and adding more reserved water as needed, until the pasta is lightly sauced, 2 to 3 minutes.
- Off heat, stir in the cheese and basil, then taste and season with salt and pepper. Serve drizzled with additional oil and sprinkled with additional Parmesan.

- Preheat broiler.
- Arrange bread slices in 1 layer on a baking sheet and brush tops with 1 1/2 tablespoons oil (total). Broil 4 to 6 inches from heat until golden on top, about 30 seconds. Turn toasts over and broil until golden, about 30 seconds more. Transfer toasts to a rack to cool.
- Pulse artichokes with cream in a food processor until finely chopped. Transfer mixture to a bowl and stir in salt and pepper to taste.
- Stir together olives, onion, and 1/2 tablespoon oil in a small bowl. Spread toasts evenly with artichoke cream and top with olive mixture. Drizzle with remaining 1 1/2 tablespoons oil just before serving.

- Add the pasta to 3 quarts boiling water; add salt to taste. Wait for the water to reboil and stir frequently for 9-11 minutes until the pasta is al dente.
- Remove from heat and drain.
- In a large skiller heat olive oil, add the garlic and cook stirring every 30 seconds, add tomatoes and simmer for 5 minutes.
- Stir in artichokes, olives, salt and sugar.
- Cook stirring 2 minutes to blend the favors. Toss half of the tomato mixture with pasta; spoon remaining tomato mixture over top. Sprinkle with cheese.

ARTICHOKE AND OLIVE FARRO SALAD
Farro, a nutty Italian grain with a chewy texture, is an excellent candidate for a savory, herb-flecked pantry salad that travels well. The grain is not intimidated by bold flavors: Tangy oil-marinated artichokes, briny kalamata olives, feta and crisp red onion take wholesome farro by the hand and lead it straight to the dance floor. Cook times vary depending on the type of farro. Quick-cooking, pearled or semi-pearled all work well, but hulled is not recommended here, as it would need soaking and takes a long time to cook. Don't be shy with the oil and vinegar: The farro absorbs them the longer it sits. If farro is not available, you can use orzo (see Tip), or other hearty grains like barley, wheat berries or freekeh.

- Set aside a sheet pan or a large plate. Bring a medium pot of well-salted water to a boil. Add the farro and give it a stir. Reduce the heat to medium-high and cook according to package instructions, skimming off any foam that rises, until the grains are tender and plump. Depending on the type of farro used, this can take anywhere from 15 to 45 minutes. Drain the farro and transfer to the sheet pan or plate; spread out and cool to room temperature, 10 to 15 minutes. (If the farro is left to cool in the strainer, it will keep cooking, take longer to cool and turn mushy.)
- Transfer the farro to a medium mixing bowl. Add the vinegar, oil and ½ teaspoon salt, and stir to combine. Add the olives, artichoke, feta, dill, red onion and chives, and season with black pepper to taste. Stir and taste. Add more salt, vinegar and oil, as needed.
- Serve right away or store in the fridge for up to 2 days. The farro will absorb the vinegar and oil the longer it sits. Adjust seasoning, vinegar and oil before serving.

I used to work in a fabulous Italian restaurant, and the cooks taught me how to make this dish. I have modified it a bit, but it's very similar, and incredibly delicious.
