GERMAN PANCAKES II
A childhood favorite of mine. We eat it every Sunday morning. Golden pan style egg dish, with lots of big bubbles while baking. Serve with maple syrup.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Melt butter in a medium baking dish.
- In a medium bowl, mix flour, milk, eggs and salt. Pour the mixture into the prepared baking dish.
- Bake on center rack in the preheated oven for 30 to 40 minutes, until golden brown.

Steps:
- Make Apple Filling: melt butter in a large skillet over med-high heat; add in apples; cook, stirring constantly, 12 minutes, until tender.
- Gently stir in honey; cook just until thoroughly heated; keep warm.
- Make pancake: heat a 12-inch cast-iron skillet in a 450° oven for 5 minutes.
- Combine the eggs, milk, and vanilla in a bowl; beat at medium speed using an electric mixer, until smooth.
- Add in flour and salt; beat 5 minutes.
- Melt butter in skillet; pour batter into hot skillet.
- Bake at 450° for 15 minutes; decrease temperature to 350°; bake 8 minutes or until puffed and browned.
- Remove from oven; spoon Apple Filling over pancake (pancake will deflate).
- Sprinkle with powdered sugar and dollop with whipped cream; cut into wedges and serve.

OVEN BAKED GERMAN APPLE PECAN PANCAKE
A wonderful change from the ordinary breakfast or brunch dish. Easy to prepare and delicious! Found on another website.

Steps:
- Preheat oven to 450 degrees.
- Combine pancake mix, water, eggs and 1 tsp sugar and mix well.
- Saute apples in melted butter in 9 or 10" ovenproof skillet over medium high heat until tender.
- Remove skillet from heat and sprinkle apples with pecans.
- Pour batter over skillet mixture.
- Combine remaining sugar and cinnamon and sprinkle over batter.
- Cover skillet with lid or foil and bake for 12 to 14 minutes or until pancake is puffed and sugar is melted.
- Loosen sides of pancake from skillet and cool slightly.
- Cut into wedges and serve with maple syrup and bacon or sausage if desired.

SUPER PUFFY GERMAN PANCAKE
This is a family special I grew up with my mom making almost every saturday. It puffs beautifully and looks so complicated, but I've found (with my own family) it's easier than any other breakfast I can make, besides cereal. It impresses guests like you wouldn't believe. My husband still brags about how his wife is such the gourmet...no one needs to know how easy it really is

Steps:
- Preheat oven to 425.
- While oven is heating, pour all the milk into blender, and set on the lowest speed. Just let it run, the more bubbles the milk has, the puffier the pancake will be.
- When oven is hot, put butter in large cast iron skillet and set into the oven, until the butter is bubbly in the pan.
- Crack eggs in a separate cup, and pour one at a time into blender (while it's still blending).
- Pour in the flour and the vanilla (if desired) and once it's mixed, pour immediately into hot cast iron skillet.
- Cook for 20 minutes.
- Now we're high altitude at 5000ft -- so if your lower, you may need to cook it longer. Just watch it, and when the edges are browned and it's all puffy, your ready to roll.
- Eat it just like any pancake, or some I know like it with lemon juice and powdered sugar. But either way, you'll love it! =D.
- Note: If you want to show it off, you'll have to make sure you have an audience as soon as it comes out of the oven, because it begins to collapse as it cools. It will keep some of its shape, but the real 'pow' is first thing out of the oven.
GERMAN PANCAKE
I absolutely LOVE these! Traditionally served with lemon wedges - but MUCH better with lime! Easy to make, and great reheated!

- Preheat oven to 425.
- Beat first three ingredients just enough to moisten flour.
- Melt butter in ~12" oven proof non stick skillet then add oil. Tip pan to coat bottom and sides of pan.
- Pour mixture in prepared pan.
- Bake at 425 for 25-30 minutes until golden brown.
- Cut pancake into 4 wedges and serve by sprinkling liberally with lemon (or lime) juice and powdered sugar.

Steps:
- Whip eggs in blender, you want them to be frothy.
- Add milk, nutmeg, cinnamon, sugar, salt, oil, vanilla and flour. Mix just until beaten.
- Place butter in 8x8 inch baking dish or skillet.
- Place in a 400 degree oven until butter just melts. Swish butter around so that it coats the bottom and sides of pan.
- Pour batter in hot pan and bake for 15 min at 400 degrees.
- Turn down oven to 350 degrees and bake for another 6-8 minutes.
