SOUTHERN COLLARD GREENS

2 pounds collard greens, rinsed
1 tablespoon canola oil
1 cup 1/4-inch diced salt pork
1 cup diced onion
1/4 teaspoon crushed red pepper flakes, optional
1/2 teaspoon freshly cracked black pepper
1 cup low-sodium chicken stock
1/2 cup water
1/3 cup white vinegar
1 teaspoon hot pepper sauce, plus more for serving (recommended: Crystal)

Steps:

  • Cut off and discard the tough stems and discolored leaves from the greens. Cut across the leaves into 2-inch ribbons.
  • In a large stock pot, over medium-high heat, add the canola oil and the diced salt pork, and cook until light golden brown and just crisp. Remove to a paper towel lined plate and let cool.
  • Add the onion to the pot and cook until translucent, about 5 minutes, then add the red chili flakes, black pepper, and the collard greens.
  • Stir every few minutes, or until greens have wilted down. Add the chicken stock and the water and cover. Cook for 30 to 45 minutes, then remove the lid, increase the heat to high, and add the vinegar and a teaspoon of hot sauce. Adjust the seasoning, if needed, then put it into a serving bowl. Sprinkle with the salt pork and serve with additional hot pepper sauce on the side.

2 1/2 pounds collard greens
2 garlic cloves
1 tablespoon unsalted butter
1 tablespoon olive oil
1 teaspoon fresh lemon juice, or to taste

Steps:

  • Remove and discard stems and center ribs of collard greens. Cut leaves into 1-inch pieces. In a kettle of boiling water cook collards 15 minutes and drain in a colander, pressing out excess liquid with back of a wooden spoon.
  • Mince garlic. In a 12-inch heavy skillet heat butter and oil over moderately high heat until foam subsides and stir in garlic, collards, and salt and pepper to taste. Sauté collard mixture, stirring, until heated through, about 5 minutes.
  • Drizzle collards with lemon juice and toss well.

  • Stack collard-leaf halves and roll crosswise into a cigar shape. Cut crosswise into very thin slices (no thicker than 3/4 inch) with a sharp knife.
  • Cook bacon in a 12-inch nonstick skillet over moderate heat, stirring, until crisp. Add collards, tossing to coat, and cook until just bright green, about 1 minute. Season with salt and serve immediately.

I made these Collard Greens for my family for the first time, on Thanksgiving it was a hit. They really loved them, and I was happy with myself. I wanted to prepare them a different way without boiling them in water; instead I stir fried them. They were excellent!

3 bunch(es) firm collard greens
1/4 teaspoon(s) seasoning salt
1/4 tablespoon(s) sugar
1 teaspoon(s) vinegar
1 tablespoon(s) vegetable oil
1 small onion
2 dash(es) hot sauce
1 package(s) bacon
1 package(s) smoked turkey necks (cooked and boiled)

Steps:

  • Cut stems from greens, cutting/removing the stems off all the way up into the leaf. Rinse leafs well and drain all water from leafs. pile 3 to 5 leafs rolling them as if you were rolling a burrito, with a sharp knife starting at the end of your roll begin cutting shreds repeat process until all greens are shredded. take onion, cut in half, lay flat side down and cut onion in to thin slices, repeat with second half. Cut pack of bacon in half, wrap and refrigerate unused half, take half to be used and cut bacon into small squares.
  • In a large skillet cook bacon and onion till bacon is done and onions become translucent, do not discard grease, begin adding handfuls of greens stir frying them in the bacon/onion grease until the greens shrink, continue to add greens until all have been placed in skillet. stir fry until all greens are soft yet still slightly crunchy to the tooth. season with creole season salt to taste. :)
  • garnish a little white vinegar or hot sauce on top and enjoy!

This is a vegetarian recipe I've come up with, simply because I usually don't have the salt pork or hamhock traditionally included on hand. It's still got plenty of flavor!

1 lb collard greens (or 1/2 collards, 1/2 kale)
1 onion, chopped
1/2 cup prepared salsa or 1 chopped tomato
2 -4 garlic cloves, chopped
1 1/2 cups water
1/2 cup cider vinegar
1 tablespoon salt, to taste
hot sauce, to taste

Steps:

  • Wash greens in a colander.
  • Chop into bite-sized pieces.
  • Throw all ingredients into a large pot and cover.
  • Bring to a boil, stirring occasionally, the reduce heat and simmer.
  • Greens are done when they have shrunk down and are cooked through, usually about a half hour, but you can let it simmer much longer.
  • Serve with its liquid.

8 cups collard greens, tough stems removed and cleaned well

1 1/2 cups chicken stock
1/4 cup light brown sugar (optional)

Steps:

  • In a deep pot brown bacon add onion and garlic and optional sugar to fried bacon.
  • Add collards layering with spices to fried bacon add broth and cover pot and cook until tender over medium heat for about 30 minutes.
  • Taste and adjust seasonings.
