This recipe was shown to me by my husband's grandmother. I make this on the family cookouts and holidays. It's very easy and only takes a few minutes to complete it. The family just loves it.

2 cups warm water
1 cup instant potato flakes
1 tablespoon mayonnaise
½ cup milk
1 tablespoon dill pickle relish
1 teaspoon prepared yellow mustard
1 small onion, chopped
salt and pepper to taste

Steps:

  • Pour 2 cups of warm water into a bowl. Stir in the instant potato flakes until well blended. Mix in the mayonnaise, milk, relish, mustard and onion. Season with salt and pepper. Mix well, and refrigerate until needed.

3 lbs idaho potatoes (peeled and diced)
1 cup sweet onion (finely diced)
1/2 cup celery (finely diced)
6 large eggs (boiled, dice only 4 eggs for the salad and slice and save 2 for the top.)
1/4 cup diced pimento (but adds color, it's not enough to add any flavor.) (optional)
1 cup sweet gherkins (diced) or 1 cup relish (diced)
1/4 cup yellow mustard (just for color, adds no flavor.)
1/4 cup sugar
1 tablespoon salt
1 tablespoon pepper
1 -1 1/2 cup Miracle Whip (depends on how thick you like it.)
1 teaspoon paprika (for the top.)

Steps:

  • Boil potatoes until they are tender but firm, do not over cook or the salad will be like mashed potatoes.
  • Drain potatoes immediately and let them cool completely.
  • Add (to the cooled potatoes) all other ingredients.
  • Toss lightly until thoroughly mixed making sure not to mash the potatoes.
  • Top the salad with the sliced eggs and sprinkle with Paprika.
  • We love it while it's still warm.
  • Refrigerate if you like it cold for 2 hours.
  • Enjoy!

This is one of the easiest and quickest potato salads you can make. Try it once as posted and next time add or substract items that you think would improve the dish. Do not add too much water to the mixture--add only enough to moisten the potatoes. I can almost guarantee that anyone eating this salad will not know it was made from instant potato flakes. NOTE: Do not use potato buds in recipe--they change the texture.

3 cups instant potato flakes
hot water
2 teaspoons prepared mustard
1 teaspoon salt
1/2 cup dill pickle cubes, chopped
1 teaspoon celery salt
6 eggs, hard-boiled and chopped
1/2 teaspoon garlic powder
4 -6 stalks chopped celery (I sometimes add 1 can chopped water chestnuts in place of celery, for the crunch) (optional)
1 teaspoon dill weed
1 small onion, chopped
2 cups mayonnaise
1/2 cup chopped olive

Steps:

  • In a large bowl, mix potato flakes, mustard, salt, pickles and celery salt.
  • Add enough hot water to mixture--about two cups--to mix the ingredients.
  • Mixture should be fairly stiff.
  • Cover and let stand about five minutes.
  • Add eggs, garlic powder, celery (if using), dill weed, onion, mayonnaise and chopped olives.
  • Mix well and chill three or more hours.
  • Keep unused portion in refrigerator; will stay fresh up to a week if covered and chilled.
  • NOTE: Cooking time refers primarily to chilling time.

5 lb bag potatoes
4 eggs, hard boiled
1/2 cup salad olives, chopped
1/2 cup sweet pickle relish
2 tablespoons mustard
1 cup mayonnaise
Salt to taste

Steps:

  • Peel potatoes and put in large pot to boil until soft. Hard boil eggs, rinse in cold water and peel.
  • When potatoes are cooled enough to handle, cut into large bite size chunks, put in large bowl. Chop up eggs and put in bowl with potatoes. Add chopped olives and sweet pickle relish. Add mustard, mayo, and salt to taste.
  • Mix everything until well blended. If mixture seems dry add more mayo, consistency should be moist.
