One 7- to 8-pound cured smoked ham, bone in
2 cups apricot jam
2 tablespoons unsalted butter, plus more for greasing the foil
2 tablespoons Dijon mustard
2 tablespoons minced fresh sage
1 tablespoon red wine vinegar
1 bay leaf
Pinch of ground cloves
Pinch of cinnamon

Steps:

  • Preheat the oven to 375 degree F.
  • Place the ham on a roasting rack in a roasting pan with the fat-side up. Use a knife to lightly score the fat in a diamond pattern, taking care not to cut into the meat. Bake the ham for 1 hour.
  • While the ham is baking, make the glaze. In a small saucepan, combine the jam, butter, mustard, sage, vinegar, bay leaf, cloves and cinnamon over medium-low heat. Cook, stirring, until the glaze is thin and syrupy.
  • After the ham has baked 1 hour, brush with about half of the glaze and return to the oven. Cook, glazing the ham every 15 to 20 minutes, until the internal temperature reaches about 130 degrees F, 1 to 1 1/2 hours longer. If the glaze starts to burn, tent with a piece of greased foil.
  • Remove the ham from the oven and tent with a piece of greased foil. Let rest for about 10 minutes before carving.

One 8-pound spiral-cut ham
1/2 cup apricot jam
2 tablespoons maple syrup
2 tablespoons Louisiana-style hot sauce
1 tablespoon Dijon mustard
Bread and butter pickles, for serving, plus 1 tablespoon pickle brine
Parker House-style rolls, for serving

Steps:

  • Preheat the oven to 300 degrees F. Line a baking sheet with aluminum foil. Place the ham on the baking sheet.
  • Stir together the jam, maple syrup, hot sauce, Dijon and pickle brine in a small pan over medium heat. Cook until everything is combined and the mixture is pourable, 2 to 3 minutes. Brush the mixture onto the ham, reserving any excess for a final glaze at the end.
  • Bake, rotating and basting the ham with the glaze and juices every hour, until browned on top and warmed through, 1 1/2 to 2 hours. Serve as mini sandwiches on the rolls with pickles.

One 4- to 5-pound spiral-cut ham
1 large onion, quartered, root end intact
3/4 cup apricot preserves
3 tablespoons yellow mustard
2 teaspoons molasses
1/2 teaspoon Worcestershire sauce
1/4 teaspoon ground allspice
Pinch of ground cloves
8 sprigs fresh thyme, stripped
4 tablespoons cider vinegar
1 1/2 cups low-sodium chicken broth
1 tablespoon unsalted butter, at room temperature
1 tablespoon all-purpose flour
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees F. Line a rimmed baking sheet or large roasting pan with foil.
  • Put the ham cut-side down on the foil and scatter the onion pieces around it. Cover the ham loosely with foil and bake for 30 minutes.
  • Meanwhile, whisk together the apricot preserves, mustard, molasses, Worcestershire, allspice, cloves, thyme leaves, 3 tablespoons of the vinegar and 1/4 cup water in a small saucepan. Cook, whisking, over medium heat until the preserves dissolve and the glaze is smooth, about 4 minutes.
  • After 30 minutes, remove the foil from the ham and continue to bake, brushing the ham with the glaze every 15 minutes until nicely glazed and heated through, about 1 hour more. Transfer the ham to a serving platter, tent with foil and set aside while making the sauce.
  • Pour the pan juices into a medium skillet. Add the broth and bring to a boil over high heat. Mix the butter and flour together in a small bowl until you form a paste. Whisk the paste into the pan juices and let the sauce simmer until thickened like gravy. Finish with the remaining 1 tablespoon vinegar and season with salt and pepper. Serve the ham with the sauce.

  • Place ham on a rack in a shallow roasting pan. Score the surface of the ham, making diamond shapes 1/2 in. deep. Combine brown sugar and mustard; rub over surface of ham. Insert a clove in the center of each diamond. , Place ham on a rack in a shallow roasting pan. Bake, uncovered, at 325° for 1 hour. Spoon preserves over ham. Bake 15-30 minutes longer or until a thermometer reads 140° and ham is heated through.

9 lbs spiral cut ham (fully cooked)
2 cups water
1 cup pear nectar or 1 cup pear juice
2/3 cup apricot jam
1/3 cup brown sugar, packed
1 tablespoon mustard powder
1 tablespoon cider vinegar
1 teaspoon ginger, ground
1/4 teaspoon allspice, ground

Steps:

  • Preheat oven to 325°F (160°C).
  • Place ham, flat side down, on a rack in a roasting pan.
  • Add two cups of water to the pan.
  • Cover the pan with aluminum foil and bake in oven for three hours (or until it reaches an internal temperature of 130°F (55°C)).
  • On the stove, mix the pear juice, apricot jam, brown sugar, mustard powder, cider vinegar, ginger, and allspice. Heat over medium heat until the jam is dissolved.
  • Brush half the glaze onto the ham--get into all those slices!
  • Continue to bake the ham, covered, for one more hour. Brush with the remaining glaze halfway through.
  • Remove the ham from the oven and let sit, covered, for twenty minutes before serving.
  • Slice and enjoy!

This succulent ham is a family favorite that I've adapted for my own tastes. This makes an amazing Easter dinner ham that complements many side dishes.

1 (10 pound) fully-cooked spiral cut ham
⅔ cup brown sugar
⅓ cup apricot jam
1 teaspoon dry mustard powder

Steps:

  • Preheat the oven to 275 degrees F (135 degrees C).
  • Place the ham cut side down onto a sheet of aluminum foil. I like to put the shiny side up. Mix together the brown sugar, apricot jam and mustard powder in a small bowl. Brush onto the ham using a pastry or barbeque brush. Reserve any leftover glaze. Enclose the foil around the ham and place on a rimmed baking sheet.
  • Roast for 2 hours in the preheated oven, or if your ham is a different size, figure 14 minutes per pound. Apply the remaining glaze 20 minutes before the ham is done.

I am always ready to try something new, so I developed this glaze for our Christmas ham this year. It packs a punch of flavor and would make a fine condiment for those left over Ham sliders. Yum

15 ounce(s) apricot preserves (for alternative, see note below)
1/2 to 3/4 cup(s) dark rum (i like myers)
2-3 tablespoon(s) coarse ground dijon mustard (grey poupon with whole mustard seeds)
- a few grinds of black pepper
2 teaspoon(s) soy sauce, dark
1 to 2 tablespoon(s) vegetable oil (something with no dominant taste)
2 teaspoon(s) lemon juice, fresh (optional)
1/8 teaspoon(s) salt (optonal)
NOTE: IF YOU CAN'T FIND GOOD APRICOT PRESERVE WITH PIECES OF APRICOT IN IT, USE APRICOT JAM AND COOK/SOFTEN ABOUT 8-10 DRIED APRICOTS IN WATER TO COVER AND THEN WHIZ WITH A STICK BLENDER OR CHOP FINE.

Steps:

  • Place all ingredients into a deep bowl or large measuring cup and blend with a stick blender. Adjust to taste and store in an airtight container in the fridge.
  • When ready to use, heat slightly to make glaze pourable for ease of coverage of the ham during the last 30-45 minutes of heating. Brush or pour glaze over ham 2-3 times to develop a nice crusty exterior. Save some to pass at the table for guests who want more sauce.
