ROASTED SALMON WITH SHALLOT GRAPEFRUIT SAUCE

Roasted Salmon with Shallot Grapefruit Sauce image

Provided by Ellie Krieger

Categories     main-dish

Time 33m

Yield 4 servings

Number Of Ingredients 10

4 skinless salmon fillets, 5 to 6 ounces each
1/4 teaspoon salt, plus more for seasoning
2 ruby red grapefruits
2 teaspoons olive oil
1 tablespoon minced shallot
1 teaspoon freshly grated ginger
2 1/2 teaspoons honey
Pinch cayenne pepper
2 teaspoons lemon juice
2 tablespoons thinly sliced basil leaves

Steps:

  • Preheat the oven to 350 degrees F.
  • Season the salmon with 1/4 teaspoon salt, place in a baking dish and roast until cooked through, about 18 minutes.
  • While the salmon is cooking prepare the sauce. Cut 1 of the grapefruits into sections by cutting off the top and bottom of the fruit, then standing it on 1 end, cut down the skin to remove the pith and peel. Then, with a paring knife, remove each segment of fruit from its casing and cut the segments in half. Set the segment pieces aside. Juice the other grapefruit and set the juice aside.
  • In a medium skillet, heat the oil over a medium heat. Add the shallot and saute until softened, about 2 minutes. Add the ginger, grapefruit juice, honey, and cayenne pepper and bring to simmer. Cook until sauce is reduced by about half about, 10 minutes. Add lemon juice and season with salt, to taste. Right before serving, toss the grapefruit pieces and basil into the sauce. Put the salmon onto a serving dish. Spoon sauce over the salmon and serve.

FISH FILLETS

Fish Fillets image

I adopted this recipe in the recipe adoption of February 2005. The only major change I made to this recipe is to change the cooking method from microwave to oven. I prefer to cook fish in the oven, and it only takes a couple of minutes longer. I also added measurements to the spices. DH doesn't like curry powder, so I made the curry powder optional. This recipe is easy to double for 2 servings.

Provided by Ginny Sue

Categories     Very Low Carbs

Time 20m

Yield 1 serving(s)

Number Of Ingredients 8

1/2 lb fish fillet (any kind-I used Tilapia)

  • Place fillets in a baking dish sprayed with cooking spray.
  • Sprinkle with lemon juice, curry, cayenne, garlic, Mrs. Dash, and boullion.
  • Drizzle melted butter over the top.

FISH FILLETS WITH GRAPEFRUIT TARRAGON BEURRE BLANC

Fish Fillets with Grapefruit Tarragon Beurre Blanc image

Categories     Fish     Bake     Grapefruit     White Wine     Tarragon     Gourmet

Yield Serves 4

Number Of Ingredients 9

1/4 cup minced shallot
four 6- to 8-ounce white fish fillets such as red snapper or scrod
1/4 cup plus 2 tablespoons dry white wine
1/4 cup plus 2 tablespoons bottled clam juice
2/3 cup fresh grapefruit juice
1/4 cup heavy cream
3/4 stick (6 tablespoons) cold unsalted butter, cut into bits
2 teaspoons minced fresh tarragon leaves or 1/4 teaspoon crumbled dried, or to taste
fresh grapefruit sections as an accompaniment

Steps:

  • Sprinkle the shallot into a buttered shallow baking dish just large enough to hold the fish fillets in one layer, on the shallot arrange the fillets, skin sides down, and pour the wine and the clam juice over them. Sprinkle the fillets with salt and pepper to taste and bake them, covered with a buttered piece of wax paper, in the middle of a preheated 425°F. oven for 10 to 12 minutes, or until they are just cooked through. Transfer the fillets with a slotted spatula to a platter and keep them warm, covered.
  • Strain the cooking liquid through a fine sieve into a small saucepan, add the grapefruit juice, and boil the mixture until it is reduced to about 2/3 cup. Add the cream and boil the mixture until it is reduced by half. Reduce the heat to low and whisk in the butter, 1 bit at a time, lifting the pan from the heat occasionally to let the mixture cool and adding each new bit of butter before the previous one has melted completely. (The sauce should not get hot enough to liquefy. It should be the consistency of thin hollandaise.) Whisk in the tarragon and salt and pepper to taste. With the slotted spatula transfer each fillet, skin side down, to a plate. Pour one fourth of the sauce over each fillet and arrange some of the grapefruit sections around each plate.

Sautéed Fluke With Grapefruit Vinaigrette image

Provided by Roy Blount Jr.

Categories     dinner, easy, quick, main course

Time 20m

Yield Serves 4

Number Of Ingredients 13

2 tablespoons olive oil
2 tablespoons soy sauce
2 tablespoons balsamic vinegar
1/4 teaspoon harissa paste
1 1/4-inch piece of ginger, peeled and grated
1/2 clove garlic, finely chopped
1 red or pink grapefruit, peeled, white pith removed
4 6-ounce fluke fillets
Salt and freshly ground pepper
2 tablespoons canola oil
1 teaspoon thinly sliced mint
1/4 teaspoon chopped rosemary
4 ounces frisée, white and light green parts only (about 3 cups)

Steps:

  • Preheat the oven to 450 degrees. In a small saucepan, whisk together the olive oil, soy sauce, vinegar, harissa, ginger and garlic. Over a bowl to catch the juices, cut the grapefruit segments free from the membrane. Set the segments aside and squeeze the remaining juice from the membrane into the bowl. Whisk 3 tablespoons grapefruit juice into the olive oil mixture.
  • Lightly season the fluke on both sides with salt and pepper. Heat 1 tablespoon canola oil in a large nonstick skillet. When the oil shimmers, add 2 fluke fillets and cook for about 1 minute. Flip and cook for 30 more seconds. Transfer the skillet to the oven and cook for about 2 minutes. Keep the fish warm, and repeat with the remaining canola oil and 2 fillets.
  • To serve, warm the vinaigrette over medium-low heat. Just before serving the fish, add the mint, rosemary and grapefruit segments and warm for about 1 minute, or until the segments are heated through. Lay a handful of frisee on each plate, followed by a piece of fish. Top the fish and frisee with grapefruit segments and a few spoonfuls of vinaigrette.

THE ULTIMATE FISH FILLET SANDWICH

The Ultimate Fish Fillet Sandwich image

This recipe was inspired to me by Tyler Florence from the Food Network show. I wanted to share the recipe here but with a few changes that suits our families taste. Only changes that I made was replacing the tarter cream sauce he made, which was made up of mayonnaise, lemon juice, fresh parsley, basil, and chives, black pepper and olive oil and replacing it with my recipe for Recipe #114732 and replacing romaine lettuce for the arugula he used on the sandwich.

Provided by Marsha D.

Categories     Lunch/Snacks

Number Of Ingredients 14

butter, soften to taste

Steps:

  • Preheat oven to 350'.

  • In the 2nd containter, add egg and milk , whipped up together and adding a touch of salt and black pepper , and set aside.

  • Dip each halibut fillet into the flour mixture first than into the egg mixture, and than into the panko breading.
  • Set each fillet onto a cutting board or a plate to let rest 5 minutes.
  • (this is to let the breading mixture settle on the fish fillet).
  • Bring out baking sheet from oven and sprinkle some olive oil over the pan.
  • Place halibut fillets on hot baking sheet ( it should sizzle when placing on sleet).
  • Bake 30 minutes or until a golden brown.
  • Split open the french bread and spread butter over each slice of french bread.
