1 tbsp. Shallots, minced. 1 tbsp. Ginger, minced. 1 tbsp. Sesame Oil. 10 oz. Apricot Preserves. 1/4 c. Lite Soy Sauce. 1 tbsp. Chilli Paste. Heat sesame oil in a sauce pan and lightly saute shallots and ginger. Add apricot preserves and lightly cook until melted. Add soy sauce and chilli paste. Brush over cooked salmon. store in refrigerator for 1 month.

4 cinnamon sticks (3 in each)
2 tablespoons ginger, chopped
1 (12 ounce) can apricot nectar
2 tablespoons reduced sodium soy sauce
4 pieces fresh salmon (4 oz each)

Steps:

  • Mix cinnamon sticks, ginger, apricot nectar, and soy sauce in medium sauce pan. Boil gently and reduce volume by 1/2 (about 20 minutes). Strain and keep the juice and cinnamon sticks.
  • Brush fish with juice and bake for 4-5 minutes in 350 degree oven.
  • Brush tops with more juice and broil for another 5-7 minutes until fish is done. Fish should be blackened when done.
  • Pour some juice on each plate and place fish on plate. Garnish with pieces of cinnamon sticks.
  • Serve with your favorite rice, asparagus, or string bean side dish.

Apricot salmon baked until sticky and glossy is the most delicious, easiest dinner recipe served with broccoli and is perfect for meal prep.

800 g (1,7lbs) salmon ((trimmed into 4 skin-on fillets) )
¾ cup (180ml) apricot jam/preserves
1-2 tbsp (15-30ml) soy sauce
2 tbsp (30ml) lemon juice
pinch of chilli flakes/red pepper flakes ((optional) )
½ tsp garlic powder
2 tbsp (30ml) water
salt and pepper (to taste )

Steps:

  • Pre-heat the oven to 220ºC/430ºF.
  • Combine all the glaze ingredients and bring to a simmer in a small saucepan. Allow to cook for a few minutes until the glaze has thickened and coats the back of a spoon easily. Adjust seasoning (add more soy or lemon juice if necessary) and allow to cool slightly.
  • Line a baking tray with foil and grease with a little oil/cooking spray. Place the salmon fillets on the tray, skin-side down. Pour over the glaze and place in the oven.
  • Allow to bake for 7-10 minutes, spooning the glaze over the salmon every 2-3 minutes, until the salmon is cooked to your preference, and is glossy and sticky.
  • Remove from the oven and allow to rest for a few minutes before serving with sides of your choice.

2 tablespoons oil
2 jalapenos, cut into rings
1 tablespoon garlic, minced
1/2 cup white wine
3 tablespoons whole-grain mustard
1 cup apricot preserves
Four 6-ounce salmon fillets, skinned and boned
2 teaspoons sea salt
1 teaspoon freshly ground black pepper
Four 3-inch fresh rosemary sprigs
1 lemon, zested

Steps:

  • Preheat oven to 400 degrees F.
  • In a small saute pan over medium heat, heat oil. When hot, add jalapenos and saute until caramelized. Add garlic, and before it begins to brown, deglaze with white wine. Next add mustard and apricot preserves and bring to a simmer. Simmer over low heat for 20 minutes and let completely cool.
  • Place parchment paper on planks, add salmon, lightly salt and pepper, place a rosemary sprig on each fillet, and liberally apply cooled apricot mixture.
  • Place cedar plank on gas burner. When plank has begun to smoke, place into preheated oven.
  • Cook salmon until medium-rare; remove from oven and let sit for 2 to 3 minutes until serving. Garnish with lemon zest.

2 teaspoons cornstarch
1/4 teaspoon salt
1 dash ground red pepper
1 (5 1/2 ounce) can apricot nectar
1 tablespoon honey
1 tablespoon vinegar
2 cups shredded romaine lettuce or 2 cups spinach
1/2 cucumber, thinly sliced (optional)
1 tablespoon white wine vinegar
2 green onions, sliced (1/4 cup)

Steps:

  • Rinse salmon; pat dry.
  • Spray the unheated rack of a boiler pan with nonstick spray.
  • place salmon on rack.
  • Broil 4 to 5 in from heat for 8 to 12 minutes or until salmon flakes easily with fork.
  • This can also be cooked on outside grill or basket.

  • Meanwhile, for sauce, in a small saucepan combine the cornstarch, salt and ground red pepper.
  • Gradually stir in nectar; add honey and 1 tablespoon vinegar.

  • Cook and stir for 2 minutes more.
  • Remove from heat.
  • Cover; keep warm.
  • In a large bowl toss together the spinach or romaine; cucumber and 1 tablespoon vinegar.
  • Divide among 4 plates.
  • To serve, place salmon on romaine mixture and spoon sauce over each serving.
  • Sprinkle with green onions.
