1 cup cold butter, cubed
2 cups all-purpose flour
1 egg yolk
1/2 cup sour cream
1/2 cup apricot preserves
1/2 cup sweetened shredded coconut
1/4 cup finely chopped pecans

Steps:

  • In a large bowl, cut butter into flour until the mixture resembles coarse crumbs. Beat egg yolk and sour cream; add to crumb mixture and mix well. Chill several hours or overnight. , Divide dough into fourths. On a sugared surface, roll each portion into a 10-in. circle. Turn dough over to sugar top side. Combine preserves, coconut and pecans; spread over circles. Cut each circle into 12 wedges and roll each wedge into a crescent shape, starting at the wide end. Sprinkle with sugar. , Place points down 1 in. apart on ungreased baking sheets. Bake at 350° for 15-17 minutes or until set and very lightly browned. Immediately remove to wire racks to cool.

This apricot crescent cookie recipe was given to me by my cousin back in the late 70's. It's been a must-have for the holidays ever since, and a big hit whenever I serve them at parties.

1 cup unsalted butter, softened
1 (8 ounce) package cream cheese, softened
1 tablespoon sour cream
2 cups all-purpose flour
½ cup powdered sugar
¼ teaspoon salt
½ cup apricot preserves
2 tablespoons powdered sugar, or to taste

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Blend butter, cream cheese, and sour cream together in a large bowl with an electric mixer. Stir in flour, 1/2 cup powdered sugar, and salt until well blended.
  • Wrap dough in waxed paper and chill until firm enough to roll, at least 3 hours, or overnight.
  • Divide dough into thirds. Keep dough in the refrigerator while working on one portion at a time. Roll each portion into a 12 1/2x10-inch rectangle. Cut into 2 1/2-inch squares using a fluted pastry wheel.
  • Place a dot, about 1/4 teaspoon, of preserves in the center of each square. Bring up two diagonal corners to the center, pinching together to seal, or secure with a toothpick. Place on ungreased cookie sheets.
  • Bake in the preheated oven until firm, but not brown, about 12 minutes. Cool on the baking sheet for 1 minute before removing to a wire rack to cool, 8 to 10 minutes more. Sift remaining powdered sugar over the cooled cookies.

2 cups all-purpose flour
1/2 teaspoon salt
1 cup cold butter
1 cup 4% cottage cheese
FILLING:
1 package (6 ounces) dried apricots
1/2 cup water
1/2 cup sugar
TOPPING:
3/4 cup finely chopped almonds
1/2 cup sugar
1 large egg white, lightly beaten

Steps:

  • In a large bowl, combine flour and salt; cut in butter until crumbly. Add cottage cheese; mix well. Shape into 1-in. balls. Cover and refrigerate several hours or overnight. , For the filling, combine apricots and water in a saucepan. Cover and simmer for 20 minutes. Cool for 10 minutes. , Pour into a blender; cover and process on high speed until smooth. Transfer to a bowl; stir in sugar. Cover and chill. , For topping, combine almonds and sugar; set aside. On a floured surface, roll the balls into 2-1/2-in. circles. Spoon about 1 teaspoon of filling onto each. Fold dough over filling and pinch edges to seal. , Place on greased baking sheets. Brush tops with egg white; sprinkle with almond mixture. Bake at 375° for 12-15 minutes or until lightly browned.

1 c. cold butter

1 egg yolk
1/2 c. sour cream
1/2 c. apricot preserves
1/2 c. flaked coconut
1/4 c. pecans (finely chopped)
granulated sugar (for rolling dough in)

Steps:

  • In a large bowl, using a pastry cutter, cut cold butter into flour until the mixture resembles coarse crumbs.
  • In a small bowl, whisk together egg yolk and sour cream. Add the cream mixture to crumb mixture. Using a hand mixer, beat until well combined. Cover and chill overnight.
  • The next day, combine preserves, coconut, and pecans in a small bowl; set aside.
  • Divide dough into fourths. On a well sugared surface, roll each portion into a 10-inch circle. Cut each circle into 8 wedges. Spread a 1/2 teaspoon of filling over each wedge.
  • Roll each wedge into a crescent shape, starting at the wide end. Place points down 1-inch apart on baking sheets lined with parchment paper.
  • Bake at 350 degrees for 15 to 20 minutes or until set and very lightly browned. Immediately remove from pans to wire racks to cool.

Steps:

  • Heat oven to 350°F Spray large cookie sheet with CRISCO Original No-Stick Cooking Spray.
  • If using crescent rolls: Unroll dough; place on cookie sheet. Press dough into 13x9-inch rectangle. Firmly press perforations to seal. If using dough sheet: Unroll dough; place on cookie sheet. Press dough into 13x9-inch rectangle.
  • In small microwavable bowl, microwave preserves and butter uncovered on High about 30 seconds or until butter is melted; stir until smooth. Spread preserves mixture evenly over dough. Top evenly with cheese and pecans. Sprinkle evenly with pepper.
  • Bake 13 to 19 minutes or until crust is deep golden brown. Cool 10 minutes. Cut into 12 squares. Serve warm.

I made this by combining a recipe found on here previously (#188466) with a baked brie recipe found in Pillsbury's Complete CookBook. DELICIOUS! The warm brie is complemented by fruity sweetness and savory crescent roll top.

8 ounces round brie cheese
1 (8 ounce) can refrigerated crescent dinner rolls
1 egg, beaten
1 1/2 tablespoons minced dried apricots
2 tablespoons apricot preserves
2 teaspoons dried cranberries
2 teaspoons sliced almonds

Steps:

  • Heat oven to 350°F Unroll dough, separate crosswise into 2 sections, seal perforations. Place one square on ungreased cookie sheet.
  • Cut brie horizontally using a very sharp knife to create 2 equally thick rounds. Place one round (cut side up) in the middle of the pastry square on the cookie sheet.
  • In a small bowl, combine apricots, preserves, cranberries and almonds. Spread fruit mixture on the cut center of the brie, top with the other half (cut side down).
  • Place the other square of crescent roll dough on top of the cheese round. Press dough evenly around the cheese and fold the bottom edges over the top, to seal. Seal completely.
  • Brush with beaten egg.
  • Bake at 350 F for 20-25 minutes until golden brown. Cool for 15-20 minutes before serving.

1 cup sour cream
1 large egg
1/2 cup apricot preserves
1/2 cup walnuts, chopped

Steps:

  • Combine the flour, sugar, and salt in a bowl.
  • Cut in the vegetable shortening until the mixture resembles coarse crumbs.
  • With a fork stir in the sour cream and egg until a stiff dough forms.
  • Cover and chill for a least 4 hours or overnight.
  • Preheat the oven to 350 degrees F.
  • Grease 2 baking sheets.
  • Divide the dough into 3 pieces.
  • On a floured surface, roll out each piece to an 11-inch round.

1/4 cup orange marmalade
1 egg
Splash of water
1 tablespoon sesame seeds

Steps:

  • Preheat oven to package directions and roll out dough on a nonstick cookie sheet. Cut and separate dough into perforated triangles. Combine the apricot jam or fruit spread and the orange marmalade in a small bowl. Place bowl in microwave and cook on HIGH 15 seconds to loosen the preserves. Beat egg with water to thin it out a little for an egg wash. Use the back of a teaspoon to spread a thin layer of apricot-orange jam across each piece of dough.   • Cut together butter and cream cheese.
