RADISH TOP SOUP
This is an easy recipe that uses an unlikely part of a vegetable we love to eat. It's thick and rich, and so hearty. I recommend eating it with a loaf of crusty bread!

Steps:
- Melt butter in a large saucepan over medium heat. Stir in the onion, and saute until tender. Mix in the potatoes and radish greens, coating them with the butter. Pour in chicken broth. Bring the mixture to a boil. Reduce heat, and simmer 30 minutes.
- Allow the soup mixture to cool slightly, and transfer to a blender. Blend until smooth.
- Return the mixture to the saucepan. Mix in the heavy cream. Cook and stir until well blended. Serve with radish slices.

RADISH TOP SOUP
Who knew? Great tasty, nutritious way to save money. I pinched this recipe from the Chicago Tribune on line. I used my radish tops as garnish or planted them for a pretty plant. Didn't know you could eat them and was glad to find out they are not only edible, but delicious and nutritious. Since we grow radishes in our garden I am going to try this. I love greens, mustard, spinach, dandelion, lambs quarters, etc.

- Germans eat large, mild, black-skinned radishes with butter and salt as an accompaniment to beer. In several Asian cuisines, the even larger white daikons are used in a variety of dishes, notably pickles. Radishes can also be braised, roasted and stir-fried. And don't throw away the fuzzy tops - you can eat them too. The greens are best cooked to tame their fiery flavor and prickly texture, as in this soup, which uses the radish from top to bottom. 1. Heat 1 teaspoon olive oil in a large saucepan over medium-high heat. Add the onions; cook just until they begin to become translucent, about 4 minutes. Remove from saucepan. Add 1 teaspoon olive oil. Add potatoes; cook, turning occasionally, 5 minutes. Remove from the saucepan. Add remaining 1 teaspoon oil. Add the greens; cook, stirring, until wilted. Return onions and potatoes to the saucepan. 2. Add 5 cups broth and the red pepper flakes. Simmer, covered, over low heat until potatoes are soft, about 25 minutes. Add salt and pepper to taste. 3. Let the soup cool 15 minutes. Puree in a blender or with an immersion blender to desired consistency. Add remaining broth, if needed. Garnish with thin slices of radish and thinly sliced radish tops. Nutrition information: Per serving: 152 calories, 2 g fat, 0 g saturated fat, 0 mg cholesterol, 30 g carbohydrates, 3 g protein, 660 mg sodium, 4 g fiber.
- Bet this would be good with Ham Hocks and/or a ham bone..maybe bacon too.
RADISH LEAF / RADISH TOP PESTO
Had farmer's market radishes and wondered if something could be made from their good-looking (edible but bitter) leaves. This was the result. Its NOT going to be mistaken for basil pesto, but its still delicious in its own way and can be used for the same applications. By using the radish leaves you're turning one veggie into two--very budget friendly! I made this with the good leaves from two bunches, maybe 2 or so unpacked cups of leaves. Just separate the radish leaves from the radishes, keeping the leaves that are bright and crisp and discarding any that are discolored or wilted. You'll probably have the best to choose from with your own homegrown radishes or from the farmer's market (probably not going to be as fresh at the grocery store). Wash them well and pat dry, then you're ready to pulverize...Note: I found the pesto to be okay when I first made it, but really a bit bitter. The tsp of sugar really goes a long way! It will still be slightly bitter, but in an enjoyable, kind of peppery/tart way more like arugula. Give it a try and don't be afraid to adjust sugar/salt/pepper to find the balance you prefer.

- Drop the first four ingredients (leaves, garlic, olive oil, lemon juice) to the bowl of your food processor and pulse to form a thick paste. Add more olive oil if necessary to bring to your desired consistency.
- Add the sugar, cheese, nuts, salt and pepper and pulse to combine. Adjust the salt and pepper to taste. If the pesto is still a bit bitter, add 1/2 tsp of sugar and pulse.
- Chill to combine flavors and use in your favorite pesto application.
RADISH GREENS SOUP
Did you know radish greens can be eaten? Smaller new leaves are a great addition to salads and such. As they grow bigger they can be bitter, but I like to use them in this simple soup that is easy to customize to your personal tastes. The radish leaves give the soup a peppery taste, which is why I don't have other seasonings in the ingredient list, but I sometimes add different ingredients depending on what I feel like that day.

- Over medium heat, melt the butter in a large saucepan and saute the onions until tender.
- Stir in the potatoes and radish greens.
- Pour in the chicken broth (Use less if you want a thicker soup, you can always add broth later to thin it).
- Bring to a boil, then reduce heat and simmer for 20-30 minutes, or until potatoes and stems are tender.
- Remove from heat and allow to cool a bit. Pour into a blender and blend until smooth. (My upright blender works great, my immersion blender didn't work as well.).
- Return to the saucepan. Reheat on low if needed. Stir in the yogurt (this makes it creamier, but it is tasty without it too). Optional is to dish up the soup first, then put a small dollop of yogurt into the bowl and give it a little swirl.
- I find this soup is very versatile. If the radish leaves are younger, then the soup more mild so I may add different seasonings. Our family has wide tastes, so I'll serve it as is and let individuals add a dash of tobasco or other seasonings, or sprinkle on some cheese. Sometimes I add in a carrot or other leftover veggies with the potatoes.

- In a medium stockpot, melt butter over medium heat. Stir in onions, and saute until transparent, about 4 minutes. Add radish greens, and cook until wilted, about 4 minutes. Add potatoes and chicken stock, and cook, stirring occasionally, until potatoes are tender, about 35 minutes.
- Working in batches, pass the mixture through a food mill into a medium bowl. Stir in cream, and season with salt and pepper. Strain the pureed mixture through a fine-mesh sieve into the original pot. Bring soup just to a simmer over medium heat. Serve garnished with radish zest and chervil.
