Applesauce Bundt Cake image

An applesauce spice bundt cake with unbeatable flavor and texture!

1/2 cup butter ((room temperature))
1 cup sugar
1 large egg
1 cup raisins
1 cup black walnuts ((or English walnuts))
2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon cloves
1/2 teaspoon nutmeg
1 teaspoon cinnamon
1 1/2 cups unsweetened applesauce

Steps:

  • Grease a 10 cup bundt cake pan generously with shortening, then dust with flour (or use our perfect cake release). Preheat the oven to 350º Fahrenheit.
  • In the bowl of a stand mixer (or using a hand mixer), cream the butter and sugar until well blended and smooth, scraping the sides of the bowl as needed.
  • Add the egg. Mix until blended.
  • Mix in the raisins and walnuts.
  • In a small bowl, whisk together the flour, soda, salt, cloves , nutmeg and cinnamon.
  • Add the applesauce and flour to the butter mixture alternately, mixing well between each addition. Batter will be thick.
  • Add the batter to the pan by large spoonfuls and smooth out evenly.
  • Bake for 45 minutes or until the top of the cake springs back when you touch it. The exact time will depend on the shape of your bundt cake pan. If it makes a thicker cake, it could take up to an hour to bake. Ours took 45 minutes in the Autumn Wreath Bundt Pan.
  • Allow the cake to cool in the pan for 5 minutes, then turn out on a cake plate to cool completely.
  • Dust with powdered sugar if desired.

½ cup raisins
⅓ cup dark rum
½ cup butter, softened
1 cup white sugar

  • Place all the raisins in a small bowl with the rum and let sit overnight or at least 4 hours.

  • In a large bowl, beat butter and sugar with an electric mixer until light and fluffy. Beat in the eggs one at a time; mix in applesauce.

Steps:

  • Bring the water to a boil in a medium-size saucepan over moderately high heat. Stir in the oats. When the liquid returns to a boil, stir in the raisins and salt. Reduce the heat and simmer 4 to 5 minutes, stirring occasionally, until the oats are soft and the water is absorbed. Remove from heat, stir in the sugar, applesauce, and oil. Cool to lukewarm. Meanwhile, heat the oven to 350 degrees, and grease the pan. Put the flour, baking soda, cinnamon, and nutmeg into a large bowl. Stir to mix well. Stir the eggs into the oat mixture. Add the flour mixture, and stir just until moistened. Steps:

  • Preheat oven to 350°F. Grease and flour a 9- by 3-inch tube pan, knocking out excess flour.
  • In a small saucepan heat rum and raisins over moderate heat just until hot. Remove pan from heat and cool mixture. Strain mixture through a sieve and reserve raisins.
  • Into a bowl sift together flour, cinnamon, cloves, baking soda, nutmeg and salt. In a large bowl with an electric mixer beat butter with granulated and brown sugars until light and fluffy and add eggs, 1 at a time, beating well after each addition. Feel free to use what suits your tastebuds the best. It is a great cake to have when you expect company as it is light and goes great with a mug of coffee.

1 large egg, room temperature

6 tablespoons fresh lemon juice
2 cups confectioners' sugar

Steps:

  • Preheat oven to 350F and butter a 9x5" loaf pan and line bottom with parchment paper and butter paper. (This makes removing it from the pan so much easier).
  • Beat butter and sugar with an electric mixer until light and fluffy. Beat in egg.
  • Stir baking soda into applesauce in a separate bowl.
  • Mix dry ingredients together.
  • Add dry ingredients in to butter mixture alternating with the applesauce. Mix just until blended well - don't overmix or the cake will be dense.
  • Gently stir in raisins.
  • Pour batter into pan and bake until top springs back when pressed - about 50 minutes (check at 45 minutes).
  • Cool in pan on a wire rack for 10 minutes then turn out onto the rack to cool completely.
  • Make glaze by mixing the lemon juice with the confectioner's sugar until smooth. Spoon glaze over the cooled cake and let set up before serving.

If you can't find pastry flour, you can mix you own by combining cake flour and all-purpose flour in a ratio somewhere between two parts cake flour to one part all-purpose and one part cake flour to one part all-purpose.

1 teaspoon cinnamon
2 cups sugar
1/2 teaspoon nutmeg
2 eggs
1/4 teaspoon allspice
2 1/2 cups sifted all-purpose flour
1 1/2 cups applesauce
1 1/2 teaspoons baking soda
1/2 cup raisins
1 teaspoon salt
1/2 cup pecans

Steps:

  • Cream butter and sugar till light.
  • Add eggs, beating well after each addition.
  • Sift dry ingredients together and add to creamed mixture alternately with applesauce.
  • Stir in raisins and pecans.
  • Turn batter into greased and lightly floured pan (13 x 9 x 2-inch).
  • Bake at 350 F about 45 minutes to till done.
  • Cool in pan.
  • (an additional 1/3 cup raisins can be substituted for the 1/2 cup of pecans, if desired).
