2 (8 ounce) packages reduced-fat cream cheese, softened
1/2 cup sugar, plus
1 tablespoon sugar
3 eggs
1 teaspoon vanilla extract, divided
1/2 teaspoon fresh lemon juice, divided
1 cup low-fat sour cream

Steps:

  • Preheat the oven to 325 degrees, coat an 8 inch square baking dish with nonstick cooking spray.
  • In a large bowl, combine the cream cheese and 1/2 C sugar; beat well, beat in the eggs, one at a time, then beat in 1/2 tsp vanilla and 1/4 tsp lemon juice until well combined.
  • Spoon mixture into the baking dish and bake for 40-45 minutes, or until golden; remove from the oven and let cool for 10 minutes, do not turn off the oven.
  • Meanwhile in a small bowl, combine the sour cream and the remaining 1 TBS sugar, 1/2 tsp vanilla, and 1/4 tsp lemon juice; mix well, spread over the top of the cheesecake and bake for 10 minutes.
  • Let the cheesecake cool, then cover and chill for at least 4 hours, or overnight.

  • Pre-heat oven 350 F.
  • Use hand mixer.
  • Large mixing bowl beat cream cheese until fluffy.
  • add artificial sweetener, sour cream, vanilla and lemon zest mix for 3 mins.
  • Add eggs and mix for 1 minute.
  • Pour filling in a lightly greased pie pan or 9 springform pan.
  • Bake for 50-55 minutes or until lightly brown.
  • Cool for an 1 to 2 hours and chill for 4 hours.

I hope you like it, please tell me what you think! NOTES: - You can make it on a pre-baked crust. - It's nice to serve it with some berries or berry jam, that's up to you. - You can use whole products and/or sugar if you really don't mind, but the idea was to make it lighter and healthier :) Enjoy!

200 g fat-free ricotta cheese
5 tablespoons fat free cream
1 tablespoon white cheese (or fat-free cream cheese)
1 tablespoon honey (you can skip it to save calories, but it does make a difference)
1 tablespoon liquid low-calorie sweetener (or to taste)
100 ml water
1 (7 g) package unflavored gelatin
1 teaspoon vanilla essence

Steps:

  • Dissolve gelatin in water and heat until it's completely dissolved.
  • In a bowl, combine all the other ingredients: ricotta, cream, white cheese, honey, artificial sweetener.
  • Mix them: if you do like the texture of ricotta, just mix it well with a spoon or spatula. If you don't, use an electric mixer to soften the ricotta and remove all possible lumps.
  • Add the dissolved jello to the mixture and stir well.
  • Pour mixture in a glass container and refrigerate until set. (it takes around 3 hours, counted as cooking time).

I came up with this recipe when I had quite some dairy products to use up and was craving cheesecake. I didnt want this to be a diet-breaker, though, so I tried to reduce the amount of fat, sugar and flour used. The result was creamy yet firm with a lovely vanilla taste to it. I hope youll enjoy it, too!

Number Of Ingredients 6

3 eggs
1/2 cup sugar substitute (I used erythritol)
2 teaspoons vanilla bean paste
750 g low-fat Quark (or use a low-fat ricotta)
250 g low-fat yogurt (I used 0.3%)
1 tablespoon psyllium husks, ground (you might try it with flax seeds, but I cant vouch for that)

Steps:

  • In a large bowl beat eggs with sugar and vanilla bean paste for 7 minutes with your electric mixer. It should be a very frothy, thick mixture after that.
  • Beat in the remaining ingredients in the order listed.
  • Pour into a greased springform pan (26 cm/10 inches in diameter) and bake in the preheated oven at 160°C/320°F for 1 hour and 45 minutes or until centre is no longer jiggly. Check after 50 minutes or so and cover if it gets too dark.
  • Turn off oven and leave the cheesecake inside with the oven door slightly ajar (I stick a wooden spoon in there to keep it open) for 30 minutes.
  • Allow to cool completely and then carefully remove from the pan.

1 cup heavy whipping cream
1 1/2 packages cream cheese
1/2 box sugar-free jello (I prefer strawberry)
1 teaspoon vanilla extract
4 -5 packages artificial sweetener, to taste

Steps:

  • Allow cream cheese to soften at room temperature.
  • Prepare whipping cream by adding vanilla and half of the jello and some sweetner.
  • Beat using a handheld mixer until it forms peaks.
  • Mix the cream cheese, remaining jello and sweetner until smooth.
  • Fold in the whipped cream.
  • Let cool in the fridge for about an hour.
  • Will last in the fridge for over a week!

24 oz. cream cheese at room temperature
3/4 Cups Stevia sweetener (OR sugar as you wish)
3/4 Cups Sour Cream
4 eggs
1 tsp. vanilla OR 1 Tablespoon lemon zest

Steps:

  • Preheat oven to 325 degrees
  • Wrap the outside of a 9 inch springform pan with heavy tinfoil to make it waterproof.
  • Thoroughly oil the entire interior of the pan with coconut oil or butter
  • In a stand mixer, beat the cream cheese. Add the sugar and mix.
  • Add sour cream, scrape down the bowl as needed, and mix thoroughly.
  • Crack the eggs and add in one at time, mixing GENTLY* (see notes) after each addition.
  • Mix in the remaining ingredients and mix until smooth.
  • Pour the cheesecake batter into the pan and put the pan into a one/half inch water bath(I used my roasting pan).
  • Bake for 75 to 90 minutes until set and golden brown. The top should NOT jiggle a LOT when set. But it may move a LITTLE BIT. Turn off oven and crack the door slightly for 30 minutes . Then remove cake to counter and let cool until the cake is at room temperature. Remove the sides of your pan and continue to cool in the refrigerator until completely set. Several hours.

  • Combine the ricotta, mascarpone, sugar, whole eggs, 40 g of potato starch and vanilla extract in a bowl and mix with a hand mixer at medium speed for about 5 minutes or until the sugar has dissolved to the touch.
  • Zest and juice the lemon. Add the zest from the whole lemon and 40 ml of the juice to the batter and stir in. Drain the peaches (save the light syrup for later) and dice them.
  • Pour the batter into a springform pan lined with a sheet of baking paper. Gently place the peach bits over the top of the cake making sure not to press them down. Ideally you want them to stay on the top of the cake.
  • Bake in the preheated oven at 150°C for 75 minutes. When the time is up, turn off the oven and leave the cake inside without opening the oven door for an extra half hour. This will help the cake to set.
