APPLE PIE WEDGES
This is an apple pie flavored shortbread cookie. It is wonderful for a holiday brunch, as well as a simple dessert for an intimate holiday dinner. They are also simple to make.

Steps:
- In a large mixing bowl, beat butter and sugar at medium speed until fluffy. Beat in egg yolk and apple butter. Add flour, cinnamon, apple pie spice, and vanilla. Beat at low speed until well blended.
- Divide dough in half. Shape each half into a 6-inch disc on waxed paper. Refrigerate for 30 minutes.
- Preheat oven to 350 degrees F (175 degrees C).
- Invert one disc of dough into ungreased 9-inch round pie plate. Press dough into plate with lightly floured hands, covering plate completely. Flute edges using the handle of a wooden spoon. Deeply score into 8 wedges. Prick surface using tines of fork. Repeat steps with remaining disc of dough and another pie plate.
- Bake 35 minutes, or until golden brown. Remove to wire rack. Cool completely and cut into wedges.

MAPLE PEAR UPSIDE-DOWN CAKE

- Heat oven to 350 degrees. Melt 3 tablespoons butter in a small pan over medium heat; add maple syrup and brown sugar and cook, stirring, until sugar dissolves. Bring to a boil and cook for another 2 minutes; remove from heat and set aside. When mixture has cooled a bit, pour it into a 9-inch baking pan and arrange pear slices in an overlapping circle on top.
- With a handheld or standing mixer, beat remaining 8 tablespoons butter and the sugar until light and fluffy. Add vanilla and eggs, one egg at a time, continuing to mix until smooth. In a separate bowl, combine flour, baking powder and salt.
- Add flour mixture to butter mixture in three batches, alternating with milk; do not overmix. Carefully spread batter over pears, using a spatula to make sure it is evenly distributed. Bake until top of cake is golden brown and edges begin to pull away from sides of pan, about 45 to 50 minutes; a toothpick inserted into center should come out clean. Let cake cool for 5 minutes.
- Run a knife around edge of pan; put a plate on top of cake and carefully flip it so plate is on bottom and pan is on top. Serve warm or at room temperature.

- Heat syrup until boiling, and pour it into a rectangular oven proof dish that is about 2 inches deep, with dimensions of about 6" X 10".
- Cream butter and sugar til fluffy. Beat in egg.
- Sift flour, baking powder and salt, and add to butter mixture, alternating with additions of the milk.
- Pour batter into the hot syrup.
- Bake at 375 F for 25 - 30 minutes, or until a toothpick inserted in center comes out clean.
- Cool cake 10 minutes, and heat a platter. Run a knife around the edges to loosen it. Flip the cake onto the heated platter. Dot the top with the pecan halves and cut into portions. Serve warm with whipped cream.

- Preheat oven to 350 degrees.
- Measure butter, sugar, and egg into a bowl, and beat with a wooden spoon or electric mixer until creamy.
- Mix flour, baking powder, salt, and cinnamon (or nutmeg) together. Add the dry ingredients and the milk, a little at a time and alternating between the two, to the creamed butter mixture. Stir until well blended.
- Measure syrup into a small saucepan. Heat the syrup until it boils, and pour into a generously buttered 8-inch square baking pan. If using chopped walnuts, add them to the hot syrup.
- Scoop up the dough in four large balls and drop them into the hot maple syrup. Using two forks, stretch dough balls to the edges until the dough forms one large mass. Bake at 350 degrees for 30 minutes.
- Serve warm with ice cream or whipped topping if desired.

- Preheat oven to 350°.
- Bring syrup to a boil in a medium nonstick skillet over medium-high heat; cook 2 minutes.
- Remove from heat; arrange pears in pan in a spokelike fashion.
- Place pan over medium-high heat, and cook until syrup thickens (about 4 minutes), gently shaking pan frequently.
- Lightly spoon flour into a dry measuring cup; level with a knife.
- Combine flour and next 4 ingredients (flour through salt); stirring well with a whisk.

- Bake at 350° for 30 minutes or until cake springs back when touched lightly in center.
- Run a knife around outside edge.

- Heat oven to 350 degrees. Sprinkle 1 tablespoon brown sugar over a baking sheet. Combine oats, remaining 2 tablespoons sugar, and spices in the work bowl of a food processor and blend until smooth. Add half the almonds and process until finely chopped. Add remaining almonds; process until coarsely chopped. Transfer to a shallow bowl.
- Peel apples and cut into quarters. Cut out cores. Dip apples into egg mixture, letting excess drip off. Coat well with the oatmeal-nut mixture and transfer to prepared baking sheet.
- Bake for 20 to 25 minutes, or until soft. Serve warm with whipped cream or ice cream, if desired. Garnish with mint leaves.

- Melt 3 TBS butter in an 8" X 8" pan.
- With a small piece of wax paper, butter the sides as well.
- Add the syrup.
- Remove from heat and sprinkle in the rum.
- Divide apple into eighths, core and arrange in neat rows in syrup mixture.
- Cream 1/3 cup butter, add 1/2 cup sugar and beat until light.
- Beat in egg yolks, one at a time.

- Preheat oven to 350°F. Generously grease the inside of a 11 3/4-inch or 12-inch cast-iron skillet with extra virgin coconut oil. Pour the maple syrup into the bottom of the pan. Arrange the apple slices in concentric circles on the bottom of the pan.
- In a mixing bowl, whisk together the flour, sucanat or sugar, baking powder, and kosher salt until even. In a separate bowl, whisk together the almond milk, coconut oil, and vanilla extract. Pour into the flour mixture and use a silicone spatula or wooden spoon to stir the two mixtures together until no dry pockets remain. Scoop in dollops over the apples and gently spread toward the edges to level. Bake for 35 to 38 minutes, or until the top has browned a bit and a toothpick inserted in the center comes out clean. - To transfer to a plate or cake stand, run a thin knife or spatula around the inside of the pan. Invert a plate or cake stand that is larger than the circumference of the pan over it. Carefully hold the plate to the pan as you invert the whole shebang. The cake should come out of the pan easily, but if it needs a little encouragement, smack the back of the pan firmly with your hand a couple of times. Carefully remove the pan. The maple syrup will run down the sides of the pan onto the platter. Serve warm, room temperature, or cool. Leftovers can be stored tightly wrapped at room temperature for up to 5 days.
