2/3 cup sugar
1 jalapeno pepper, sliced, plus more for garnish
2 cups pineapple juice
2 cups orange-flavored vodka
1 cup mango nectar
1/2 cup fresh lime juice (from 4 to 5 limes)
Pineapple and mango chunks, for garnish

Steps:

  • Make the jalapeno syrup: Bring the sugar, 2/3 cup water and half of the jalapeno slices to a simmer in a small saucepan, stirring to dissolve the sugar. Remove from the heat and let cool completely, about 20 minutes.
  • Meanwhile, muddle the remaining jalapeno slices in a large liquid measuring cup with a wooden spoon. Add the pineapple juice; let sit while the syrup cools.
  • Strain the jalapeno syrup and pineapple juice mixture into a pitcher. Stir in the vodka, mango nectar and lime juice and refrigerate until ready to serve. Pour into ice-filled glasses; garnish with skewers of pineapple, jalapeno and mango.

1 papaya, peeled, seeded, and cut into bite-size pieces
2 kiwifruit, peeled, sliced and slices cut into fourths
1 tablespoon chopped fresh cilantro
1 tablespoon lime juice
1 1/2 teaspoons sugar
1/8 teaspoon pepper
1 lb orange roughy, red snapper or cod fillets
1 tablespoon Worcestershire sauce
3/4 teaspoon chopped fresh or 1/4 teaspoon dried thyme leaves
1/8 teaspoon salt
1/8 teaspoon garlic powder
1/8 teaspoon curry powder
1/8 teaspoon crushed red pepper

Steps:

  • In small glass or plastic bowl, mix all salsa ingredients until well blended. Cover; refrigerate 1 hour.
  • Set oven control to broil. If fish fillets are large, cut into 4 serving pieces. Spray broiler pan rack with cooking spray. Brush both sides of fish with Worcestershire sauce. Place on rack in broiler pan. Sprinkle fish with thyme, salt, garlic powder, curry powder and red pepper.
  • Broil with tops about 4 inches from heat about 7 minutes or until fish flakes easily with fork. Serve with salsa.

Other combinations of fruits will also taste great in this colorful salsa. Try adding diced melon, such as cantaloupe, honeydew, or musk. Diced mango is delicious also, or, for a truly tropical and exotic salsa, add sliced star fruit (also known as carambola). 1/2 cup diced fresh papaya
1/2 cup sliced banana
1/2 cup diced pineapple
1/4 cup diced kiwi fruit
1/4 cup green bell peppers or 1/4 cup yellow bell pepper, diced
1/4 cup diced red onion (purple)
1 habanero pepper, deseeded and destemmed, minced
2 tablespoons orange juice
1 tablespoon lime juice
2 tablespoons extra virgin olive oil
2 tablespoons pomegranate arils (juice sacs)
2 tablespoons minced fresh cilantro

Steps:

  • Combine fruits in a large bowl.
  • In a small bowl, mix together the orange and lime juices and oil. Drizzle over the fruits and toss gently to mix well.
  • Allow to sit for 2 hours. Just before serving, add the pomegranate arils and toss well. Garnish with the cilantro.

1 small red onion, finely chopped
1 papaya, peeled, seeded and chopped
1 ripe mango, peeled, pitted and diced
1/2 cup fresh pineapple, peeled and chopped
1/2 lemon, juiced
1/2 lime, juiced
1 tablespoon honey
1/2 teaspoon chili powder
1 tablespoon chopped cilantro
1/4 cup olive oil or vegetable oil
Pinch salt and pepper
1/4 cup olive oil
1 tablespoon chili powder
1 tablespoon ground cumin
1/2 tablespoon curry powder
1/4 teaspoon turmeric
1/4 teaspoon paprika
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/2 teaspoon anise seed
1/2 teaspoon mustard seed, toasted in a dry saute pan for 1 minute
4 Chilean sea bass fillets, or whitefish of your choice
Salt and pepper
1/4 cup flour, for coating
Vegetable or canola oil, for saute

Steps:

  • Wearing rubber gloves, remove jalapeno seeds and membrane and discard. Prepare all the above ingredients, combine and refrigerate.
  • For the Spicy Paste: Combine the above ingredients to form a spicy paste.
  • For the Sea Bass: Preheat oven to 375 degrees. Season fish with salt and pepper and coat with flour. Brush a heavy coating of the spice paste on the skin of the fish. Add 2 tablespoons of oil to a very hot oven-safe skillet and sear the fish skin side down. When the skin is crispy, place the fish in the oven for approximately 10 to 12 minutes until done. Serve with spicy fruit salsa.

1 tablespoon cilantro, finely chopped
1 1/2 teaspoons jalapeno peppers, minced

1/4 teaspoon salt
1/2 teaspoon black pepper, coarsely ground
1/4 teaspoon red pepper

1 tomatoes, seeded and chopped
1/2 red onion, chopped
1/2 sweet red pepper, chopped
1 red chili, seeds removed and chopped finely
1 avocado (I like the salsa without the avocado) (optional)
2 tablespoons cilantro, chopped
1/2 teaspoon lime peel, shredded finely
2 tablespoons lime juice
