APPLE UGLY CAKE
Don't let the name of this recipe fool you. It may not be the prettiest cake you've ever seen, but it sure is the delicious! I've made this for a tea party, office luncheon, brunch and dessert. It's always a hit. Delicious served with vanilla ice cream.

Steps:
- Preheat the oven to 325 degrees F (165 degrees C). Grease a 9x13 inch pan.
- In a large bowl, stir together the sugar, flour, baking soda, salt, and cinnamon. Make a well in the center, and pour in the oil, eggs and vanilla. Mix until well blended. Fold in the raisins and apples. Spread evenly in the prepared pan.
- Bake for 1 1/2 hours in the preheated oven, until firm and lightly browned.

THE APPLE LADY'S APPLE CAKE (GATEAU AUX POMMES DE LA REINE DES POMMES)
Steps:
- Preheat the oven to 400 degrees F.
- Butter a 9-inch springform pan and set it aside.
- In a large bowl, combine the flour, sugar, baking powder, and sea salt, and stir to blend. Add the vanilla extract, eggs, oil, and milk, and stir until well blended. Add the apples and stir to thoroughly coat them with the batter.
- Spoon the mixture into the prepared cake pan. Place the pan in the center of the oven and bake until fairly firm and golden, about 25 minutes.
- Meanwhile, prepare the topping: In a small bowl, combine the sugar, egg, and melted butter, and stir to blend. Set it aside.
- Remove the cake from the oven and pour the topping mixture over it. Return the cake to the oven and bake until the top is a deep golden brown and the cake feels quite firm when pressed with a fingertip, about 10 minutes.
- Transfer the cake pan to a rack and allow to cool for 10 minutes. Then run a knife around the sides of the pan, and release and remove the springform side, leaving the cake on the pan base. Serve at room temperature, cut into thin wedges.

- Preheat the oven to 325 °F. Line a 9x13 inch baking pan with parchment paper, lightly grease it.
- Mix the sugar, flour, baking soda, salt, and cinnamon in a bowl.
- In a separate bowl, mix oil, eggs and vanilla together.
- In the centre of the flour mixture, make a well. Pour in the oil, eggs and vanilla and stir well until the ingredients are fully combined.
- Fold the apples and raisins into the mix.
- Put the cake mixture in the prepared baking pan and spread it out evenly.
- Bake for 50 minutes. Remove from the oven when the cake feels firm and is a light brown color on top.
- Leave the apple ugly cake to cool on a wire rack.
- Serve the cake with a spoonful of cream on top.

GRANDMA'S APPLE CAKE
This is a favorite of my late grandma's recipes. She passed away a year ago October 27 and I am just now able to look at her cookbooks and make what I call my memory food. This is a very simple cake and is delicious iced or not. Enjoy!

- Combine next 4 ingredients and add to creamed mixture.

- Preheat oven to 350°F
- Place 1/3 cup butter in a 9x9x2-inch baking pan.
- Place in oven 5 minutes or until butter melts.
- Sprinkle brown sugar over butter; stir. Arrange 9 apple halves in mixture, cut sides down.
- Bake in oven 10 to 15 minutes or until bubbly.
- Meanwhile, peel remaining apples.
- Coarsely shred; set aside.
- In bowl combine flour, granulated sugar, baking powder, ginger, and cinnamon.
- Add shredded apple, milk, 1/4 cup butter, egg, and vanilla.

- Cool in pan on wire rack for 5 minutes. Loosen edges; invert onto platter. Spoon any topping in pan over top.
- Cool 20 minutes; serve with ice cream.
