1 lb small new potatoes (halved (cut larger ones into quarters))
1 T extra virgin olive oil
1 t prepared horseradish
1 t kosher salt
1/4 t fresh cracked pepper
1 T fresh chopped parsley

Steps:

  • Heat oven to 400F.
  • Put the potatoes on a rimmed bake sheet. Drizzle with the oil and sprinkle over the horseradish, salt, and pepper. Toss the potatoes to coat and evenly distribute horseradish and seasonings.
  • Bake at 400F for 20-25 minutes or until potatoes are toasty and cooked through. Sprinkle over the parsley and serve. Yield: 4 servings.

These beautiful roasted potatoes with a flavorful baked-on coating of grainy mustard mixed with horseradish make it the most perfect pairing ever created for roast beef, corned beef, or pot roast.

4 large Russet potatoes, peeled or unpeeled, cut in half, then in quarters, then into roughly equal 2-3-inch (5-8-cm) pieces
1 tablespoon (18 g) kosher salt
1/3 cup (80 ml) olive oil, divided
3 tablespoon (45 ml) whole grain mustard
3 tablespoon (45 ml) prepared horseradish
3 tablespoon (11 g) chopped fresh parsley

Steps:

  • Preheat the oven to 450°F (232°C). Line a baking sheet with heavy-duty foil, dull side up, and set aside.
  • Place the potatoes in a pot with the salt, cover with water by 1 inch (3 cm), and bring to a boil over high heat. Boil until the potatoes are fork tender, about 10 minutes. Pour the potatoes into a colander and let them air dry for 2 minutes or so, then bang them around a bit by shaking the colander. You want the edges to be a bit rough looking.
  • Dump the potatoes into a pile on the prepared pan. Drizzle 1⁄4 cup (60 ml) of the oil over the potatoes and toss to coat. Spread the potatoes out on the pan, trying to leave a little space between them.
  • Roast the potatoes in the preheated oven for 20 minutes, shake the pan, and roast for another 20 to 25 minutes, or until they are crisp-edged and deeply golden brown. While the potatoes roast, whisk together the mustard, horseradish, and remaining oil in a large, heat-proof mixing bowl.
  • Transfer the potatoes into the bowl with the horseradish mustard mixture, and toss gently to coat before returning to the pan and roasting for 10 more minutes. Serve hot, warm, or at room temperature, garnished with chopped fresh parsley.

1 teaspoon garlic (minced)
1 teaspoon parsley (chopped)

1/2 teaspoon fresh horseradish
1/2 cup mayonnaise
1 tablespoon lemon juice
1 garlic clove (minced)
salt and pepper to taste

Steps:

  • Preheat oven to 400 degrees.
  • Add potatoes to a baking sheet.
  • Drizzle with olive oil and sprinkle with garlic. Toss to combine (I usually just use my hands).
  • Place in the oven and cook for 30 minutes.
  • Take out of the oven and sprinkle with chopped parsley and salt and pepper to taste.
  • Drizzle with horseradish aioli or serve it on the side. Serve immediately.
  • Add horseradish, mayonnaise, lemon juice and garlic to a small bowl. Whisk to combine

1 boneless beef chuck roast (2 to 3 pounds)
1/2 teaspoon salt
1/2 teaspoon pepper
2 medium onions, thinly sliced into rings
1 jar (6 to 6-1/2 ounces) prepared horseradish
1/4 cup dry white wine or beef broth
1 tablespoon butter, melted
1 garlic clove, minced
1 tablespoon sugar
2 tablespoons all-purpose flour
2 tablespoons cold water
Hot cooked egg noodles
Minced fresh thyme, optional

Steps:

  • Place roast in a 6-qt. slow cooker; sprinkle with salt and pepper. Top roast with onions. In a small bowl, combine next five ingredients; pour over roast and onions. Cook, covered, on low until meat is tender, 7-8 hours. , Remove roast; cool slightly and shred with two forks. Skim fat from cooking juices. Mix flour and water until smooth; gradually stir into juices. Return beef to the slow cooker. Cook, covered, on high 15-30 minutes or until sauce is thickened. Serve with noodles. If desired, top with minced thyme.

2 teaspoons salt
1/4 cup coarse grained brown mustard
1/4 cup prepared horseradish
1/3 cup canola oil or 1/3 cup olive oil
1/4 cup parmesan cheese

Steps:

  • Preheat oven to 400º.
  • Slice potatoes 1/2-inch thick.
  • Boil in salted water to cover until just tender. About 10 minutes
  • Drain and arrange overlapping lightly in a sprayed shallow 1 1/2 quart baking dish. Stir mustard and horseradish together and blend in oil.
  • Spoon evenly over potatoes, try to get some between layers.
  • Sprinkle with parmesan and bake 30 to 40 minutes or until golden and crusty.

  • Preheat oven to 400°F. Brush 2 large baking sheets with oil. Toss potatoes with 2 tablespoons oil in large bowl. Season with salt and pepper. Spread potatoes on sheets in single layer. Roast until almost tender, about 30 minutes.

Olive oil spray
Kosher salt
Freshly ground black pepper
1/2 cup low-fat cottage cheese
2 tablespoons light sour cream
2 tablespoons prepared horseradish
2 tablespoons chopped fresh chives

Steps:

  • Preheat oven to 425 degrees F.
  • Cut each potato, lengthwise, into 8 wedges. Trim all but 1/4-inch of the potato flesh with a pairing knife. Lay the skins on a baking sheet, skin side down , and spray the flesh side with the olive oil spray. Season with salt and pepper, to taste. Roast until golden and crispy, about 35 minutes.
  • Meanwhile, puree the cottage cheese, sour cream, and horseradish in a blender. Transfer to a small serving bowl and season with salt and pepper, to taste. Sprinkle chives on top.

1/3 cup freshly grated parmesan cheese, about 1 1/4 ounce

1/2 cup finely chopped onion
3 tablespoons all-purpose flour
4 tablespoons butter
3 cups milk
1/4 cup prepared horseradish

  • Preheat oven to 400 degrees. Lightly butter 13 x 9 x 2 glass baking dish.

1/3 cup prepared horseradish
2 tablespoons olive oil
1 teaspoon fresh coarse ground black pepper

2 cups baby carrots
1/4 cup dry white wine or 1/4 cup beef broth

  • 1. Place meat, fat side up, in a 15-1/2x10-1/2x2-inch roasting pan. Insert a meat thermometer into center of meat. In a large bowl combine horseradish, olive oil, pepper, the 1 teaspoon thyme, and the salt. Spoon half of the mixture over beef. Set remaining horseradish mixture aside. Roast beef in a 350 degree F oven for 30 minutes.
  • 2. Meanwhile, peel a strip from the center of each potato; cut larger potatoes in half. Toss potatoes and carrots with reserved horseradish mixture. Arrange vegetables in pan around roast. Roast 1-1/4 to 1-1/2 hours more or until the thermometer registers 145 degree F for medium-rare, stirring vegetables once. Remove from pan. Cover with foil. Let stand 15 minutes before carving meat. (The meat's temperature will rise 5 degrees during standing.)
  • 3. For sauce, add wine to roasting pan and stir up the brown bits. In a medium saucepan stir the 1-1/4 cups broth into the flour and 1/4 teaspoon thyme until smooth. Stir in wine from roasting pan. Cook and stir until thickened and bubbly; cook and stir 1 minute more. Serve sauce with meat and vegetables. If desired, garnish wtih fresh thyme sprigs. Makes 8 to 10 servings.
