CINNAMON ALMOND SHORTBREAD PEAR

On the first day of Christmas my true love gave to me a partridge in a pear tree.... These shortbread pears remind me of the 12 days of Christmas song. I was given something similar to these for Christmas and the whole family really enjoyed them so I wanted to tried to make them myself and here is what I came up with.. These are prefect for gifts not only Christmas time. It's also my families tradition to serve shortbread biscuits to visitors who go to visit a new born baby, these would be ideal.

Yield 10 Shortbread Pears

Number Of Ingredients 8

125 g unsalted butter, chopped
1/4 cup caster sugar
1 teaspoon vanilla essence
1 cup plain flour, sifted
1 teaspoon ground cinnamon, sifted
1/4 cup almond meal
10 whole cloves
icing sugar, sifted for dusting

Steps:

  • Preheat oven to 150°C/300oF/Mark2.
  • Line oven trays with baking parchment and put the tray in the oven.
  • In a large bowl sifted flour, cinnamon and almond meal. Mix well. Set aside.
  • In another bowl beat butter, caster sugar and vanilla essence until light and creamy.
  • Combine flour mixture and butter mixture, (may need to use hands) to form a dough.
  • Roll the mixture into a large plum size or walnut sized balls and then shape each ball into a pear. (The more smaller you make them the more cloves you would need).
  • Place the base of the clove (star shape end) on the top of the pear to the form the core.
  • Place the pears on hot tray and bake in the oven for 12 minutes or until pale golden. (Please note if you are making them plum size baked them for 12 minutes or until pale golden, but if you are making walnut size it would be quicker).
  • Remove tray and allow pears to stand on trays for 10 minutes before transferring to wire rack to cool.
  • Dust lightly with icing sugar. Store.
  • Note: Please let everyone who is eating the shortbread pear knows it's a real clove on the top because they may want to remove it before eating.

3 (16 ounce) cans pear halves in juice
1 (2.25 ounce) package cinnamon red hot candies
¼ teaspoon red food coloring
6 leaves butterhead lettuce

Steps:

  • Drain the liquid from the cans of pears into a saucepan. Add red hot candies to the juice. Cook over medium heat, stirring constantly, until the candy has dissolved. Stir in the food coloring, remove from heat, and allow to cool.
  • Place the pear halves in a deep bowl. Pour the liquid over the pears, cover, and refrigerate overnight. You may want to stir a couple of times to evenly distribute the color. Serve pear halves cold on top of a leaf of lettuce.

POACHED PEARS IN CINNAMON-SPICE SAUCE



Poached Pears in Cinnamon-Spice Sauce image

These poached pears are especially luscious with their Pacific Rim accent. Locally grown, in-season, organic pears are far superior for this slow-cooked dessert than store-bought fruit shipped from far away.

Yield serves 4

Number Of Ingredients 6

3 cups water
2 cinnamon sticks
2 allspice berries
One 1-inch piece fresh ginger, peeled and thinly sliced
1 2/3 cup sugar
4 very firm pears, sliced in half lengthwise and seeded

Steps:

  • Add the water, cinnamon, allspice, ginger, and sugar to the slow cooker and cook on high for 1 hour.
  • Remove and discard the spices and ginger. Place the pear halves in the slow cooker and cook on low for 4 hours, until the pears are just tender when pierced with a fork. Turn carefully once or twice during the cooking to ensure the flavors are evenly distributed.
  • To serve, place the pears on a serving platter or individual plates and spoon the poaching liquid over the top. Serve piping hot or chilled.

Steps:

  • Peel and core Pear.
  • Cut in half.
  • Combine Water, Sugar Replacment, Food Color and Cinnamon in saucepan.
  • Bring to a boil, add the Pear, reduce heat and simmer for 3 minutes.
  • Turn Pear several times to completely color.
  • Remove with slotted spoon.
  • Serve Hot or Cold.
