PINEAPPLE UPSIDE-DOWN CAKE IN A MUG



Pineapple Upside-Down Cake in a Mug image

For those moments when you need cake ASAP, just grab a mug and you'll be digging into this adorable individual serving of pineapple upside-down cake in minutes.

2 tablespoons maple syrup or dark amber agave syrup
1 pineapple ring, well drained and patted dry
1 maraschino cherry, stemmed and patted dry
3 tablespoons all-purpose flour
1 tablespoon sugar
1/2 teaspoon baking powder
Pinch kosher salt
1 tablespoon plus 1 teaspoon milk
1 tablespoon plain Greek yogurt
1 1/2 teaspoons coconut oil, at room temperature
Whipped cream, for serving, optional

Steps:

  • Pour the syrup into the bottom of a microwave-safe mug wide enough to fit the pineapple ring. Put the pineapple ring in the mug and put the cherry in the middle of the ring.
  • Whisk together the flour, sugar, baking powder and salt in a small bowl.
  • Mix the milk, yogurt and coconut oil in a small bowl to combine. Add the dry ingredients to the wet and mix until just combined.
  • Spread the batter over the pineapple. Microwave in 30-second intervals until the cake is slightly domed and a toothpick inserted in the center comes out clean, about 90 seconds. Cool slightly; the cake should easily pull away from the sides of the mug. Invert the cake onto a plate and uncover. Serve with whipped cream if desired.

3 tablespoons self rising flour
2 tablespoons brown sugar
1/4 teaspoon ground cinnamon
1/2 egg, beaten
2 tablespoons grated apples
1 tablespoon milk
1 tablespoon oil

Steps:

  • Place dry ingredients in a large coffee mug and mix with a fork. Add egg.
  • Add remaining ingredients and combine well making sure there is no pockets of dry ingredients.
  • Cover loosely with cling wrap and microwave on high 2 minutes. Allow to stand for 1 minute then run a knife around to loosen.
  • Tip cake out onto plate. Serve with butter and a sprinkle of cinnamon and white sugar.

4 tbsp self-raising flour
4 tbsp caster sugar
2 tbsp cocoa powder
1 medium egg
3 tbsp milk
3 tbsp vegetable oil or sunflower oil
a few drops of vanilla essence or other essence (orange or peppermint work well)
2 tbsp chocolate chips, nuts, or raisins etc (optional)

Steps:

  • Add 4 tbsp self-raising flour, 4 tbsp caster sugar and 2 tbsp cocoa powder to the largest mug you have (to stop it overflowing in the microwave) and mix.
  • Add 1 medium egg and mix in as much as you can, but don't worry if there's still dry mix left.
  • Add the 3 tbsp milk, 3 tbsp vegetable or sunflower oil and a few drops of vanilla essence and mix until smooth, before adding 2 tbsp chocolate chips, nuts, or raisins, if using, and mix again.
  • Centre your mug in the middle of the microwave oven and cook on High for 1½ -2 mins, or until it has stopped rising and is firm to the touch.
