SPICY PLUM & APPLE CHUTNEY



Spicy plum & apple chutney image

This multi-purpose chutney can add zing to sandwiches or makes a great dip for poppadums

Number Of Ingredients 12

1 garlic bulb
thumb-size piece fresh root ginger
2 large onions
1kg Bramley apples
3 star anise
1 tsp cumin seed
1 cinnamon stick
500ml bottle cider vinegar
1 tbsp salt
1kg plums
450g golden caster sugar
4-5 sterilised jars

Steps:

  • To sterilise the jars: run them with the lids and any rubber seals through the hottest cycle of your dishwasher. If you don't have a dishwasher, give the jars a good wash, then heat them in the oven at 150C/130C fan/ gas 2 for 30 mins. Don't bake seals - boil them in a pan of water for 10 mins. If you don't have lids you can buy jam pot covers from cook shops which you can then cover with fabric.
  • Prepare the ingredients: first, peel the garlic cloves and cut them into slivers. Peel and thinly shred the ginger. Halve, peel and thinly slice the onions, then put them in a large, wide saucepan or a preserving pan with the garlic and ginger. Peel, core and chop the apples, then add to the pan with the spices, vinegar and salt.
  • Bring the pan to the boil over a gentle heat, give everything a good stir, then turn down the heat and cover the pan (if you don't have a lid use foil). Simmer for 30 mins until the apples are cooked and pulpy.
  • While the apples are simmering, stone and quarter the plums, then add them to the cooked apples with the sugar. Stir well and leave to bubble away, this time uncovered, for another 40 mins stirring regularly until the plums are cooked but still retain some of their shape. Ladle into the sterilised jars, seal and label. Use our downloadable Christmas labels if you like.
  • This chutney is best kept for about a month before eating as the vinegar needs a bit of time to mellow. If you don't want the flavour of the spices to develop any more, then take out the cinnamon and star anise before potting. It will keep for 1 year in a cool place but once opened store in the fridge and use within a month.

2 pounds tart apples, peeled and quartered
2 pounds plums, pitted and quartered
1 cup water
3 cups sugar
1-1/2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
1/4 teaspoon ground allspice

Steps:

  • Place apples, plums and water in a large kettle; cover and simmer until tender, about 15 minutes. Cool. , Puree in batches in a food processor or blender; return all to the kettle. Add sugar and spices. Simmer, uncovered, for 20-30 minutes or until thickened, stirring frequently. Cool completely. Pour into jars. , Cover and store in the refrigerator for up to 3 weeks.

Found this recipe in Gourmet (Sept 2006). My Italian Plum trees were bursting and I was looking for quick and tasty ways to use them up. This was the perfect recipe! I made some minor adjustments (like adding cinnamon). You can use any kind of plum you have access to. If you use a small plum like Italian, just pit and halve them, instead of quartering them. Gala or McIntosh are recommended because they are a bit softer and lend themselves to a applesauce (I used Gala). Quick, easy and yummy, my favorite kind of recipe!!

2 lbs gala apples, quartered and seeded and left unpeeled (can substitute McIntosh)
2 lbs plums, quartered and pitted (red, black or Italian plums)
1/4 cup water
1/4 cup sugar
1 teaspoon cinnamon

Steps:

  • Cook first 4 ingredients in a 4 -5 quart heavy pot, covered, over moderately low heat, stirring occasionally, until fruit is very tender and falling apart, 1 to 1 1/4 hours.
  • Force mixture through a food mill using the finest blade.
  • Add cinnamon and stir to incorporate.
  • Will keep one week covered and chilled.
  • Note: My cooked mixture created a LOT of liquid. I did not want a runny sauce, so before putting through the food mill, I put mixture in a sieve to separate out the liquid. AFTER using the food mill, I added just a bit of the liquid back until the sauce was a consistency I liked.

Arrange plum and apple slices over batter., For streusel, combine the flour and brown sugar. Cut in butter until mixture resembles coarse crumbs; stir in pecans. Sprinkle over fruit. , Bake at 350° for 40-45 minutes or until lightly browned. Cool on a wire rack. For glaze, whisk confectioners' sugar and milk until smooth. Drizzle over streusel.

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Grease a 9-inch square baking pan.

6 tablespoons unsalted butter, softened
1 pound Italian prune plums, pitted and halved
3 tart apples (about 1 1/2 pounds), peeled, cored and sliced
3/4 cup oat bran
1 cup dark brown sugar, packed
1 teaspoon ground cinnamon
Vanilla ice cream

Steps:

  • Preheat oven to 350 degrees. Use a little of the butter to grease a five- to six-cup baking dish. Melt two tablespoons of the butter.
  • Toss plums and apples together in a bowl with melted butter, a quarter cup oat bran, a half cup brown sugar and a half teaspoon cinnamon. Spread in baking dish.
  • Use fork or pastry blender to combine remaining oat bran, sugar and cinnamon with remaining butter unti crumbly. Spread over fruit. Bake about 40 minutes, until bubbly. Allow to cool to just warm and serve with ice cream.

I used to LOVE to make pies-double crust, complicated beautiful pies. And then I had kids. The kids are eager bakers and always want to help, so I had to give up on perfection and find a new way to enjoy pie making that isn't stressful for me or them. Skillet pies are a perfect solution-they're very forgiving, and since you only need one crust to top the pie, I can use my standard pie dough and make two crusts-one for baking now and one to freeze or refrigerate for later in the week. Or, for company, I bake two skillet pies, side by side, at once. This crust uses rye flour for a crunchier, nuttier and slightly more rustic finish. It makes the dough super tasty but a bit fragile. For the filling, our favorite is a mix of apples and plums-just enough sweet apples and tart, juicy plums to give this pie filling a bubbly ruby color and a great tart flavor. I always use a combination of apples, and slice them thinly, rather than in thick chunks, so the plums and apples sort of melt together.

6 to 8 tablespoons ice water
1 cup rye flour
1 cup all-purpose flour, plus more for the surface
1 tablespoon sugar
1 teaspoon fine sea salt
1 teaspoon apple cider vinegar
6 black plums, pitted and halved or quartered
5 large apples, peeled, cored and thinly sliced
3/4 cup sugar, plus more for sprinkling
2 tablespoons cornstarch
1 tablespoon lemon juice
Pinch fine sea salt (about 1/8 teaspoon)
Pinch ground cinnamon
2 tablespoons unsalted butter, plus more for the pan
1 large egg, lightly beaten
1 tablespoon heavy cream, half-and-half or milk
Vanilla or maple-bourbon ice cream, for serving

Steps:

  • For the crust: Place the butter in the freezer while you measure the dry ingredients. Place the water over ice (you will drain it later) or into the freezer to chill.
  • Stir together the flours, sugar and salt in a medium bowl. Use the coarse side of a box grater to grate the butter all over the flour. Toss together with your fingers, pinching to break some of the butter into smaller bits and to coat with flour, working quickly to keep the butter cold. Continue rubbing until you have some pea-sized pieces of butter, with some slightly larger knobs. Add the vinegar, drain the water (if over ice) and add, a few tablespoons at a time, stirring with a fork to make a shaggy dough that mostly holds together (a food processor works well for this, too!). Squeeze the dough to form a ball, adding more ice water, 1 tablespoon at a time, to hold it together if needed.
  • Divide the dough in half and place each half on a generous sheet of plastic wrap. Sprinkle lightly with water if needed (if still dry and crumbly). Use the edges of the plastic wrap to pull and press the dough into a nice round disk and wrap tightly. Repeat with the remaining dough. If using right away, chill the dough in the refrigerator at least 1 hour. Otherwise, refrigerate up to 4 days or freeze up to 1 month.
  • For the filling: Toss together the plums, apples, sugar, cornstarch, lemon juice, salt and cinnamon in a large bowl and mix well. Butter a cast-iron (or other oven-proof) skillet generously with butter and transfer the filling to the skillet, taking care to scrape any juices into the pan. Dot the top of the fruit with small pieces of the butter. Set aside (or refrigerate for up to 1 hour while you prepare the dough; don't leave too long since the lemon can react with the cast iron).
  • Meanwhile, preheat the oven to 425 degrees F.
  • Remove one disk of the dough from the fridge and roll on a lightly floured surface, dusting with flour as needed to prevent sticking. Roll the dough into an 1/8-inch-thick round. Make sure the dough isn't sticking to the surface, then use a knife, pizza cutter or pastry scraper to cut the dough into 10 thick strips, each about 1 1/2 inches wide.
  • Arrange the strips over the fruit in a crosshatch pattern: First, lay 3 strips across the top of the pie in the same direction. Pull the middle strip back slightly, then overlap with a strip going the opposite direction. Repeat, lifting the strips as needed to weave the perpendicular strip up and over. (The rye flour makes the dough flaky but delicate, so once the strips are on the fruit, don't fuss with them much. Don't worry if anything tears-you can press it together and use the egg wash to repair later.) Weave any extra dough around the outside rim of the skillet and press together, using cookie cutters or your fingers to make a design.
  • Whisk together the beaten egg and cream. Brush the egg wash all over the top, using it to help repair any rips or tears. Sprinkle lightly with sugar. Bake the skillet pie for about 15 minutes. Lower the temperature to 250 degrees F and continue to bake until the filling is bubbly and the crust is evenly golden brown, another 40 to 50 minutes. Cool slightly before serving, or cool completely. Cut into eight pieces. Spoon into shallow bowls and serve with ice cream.
