2 tablespoons red wine vinegar
2 1/2 tablespoons orange juice
1 orange, zested
1/2 cup raisins
4 apples, preferably use 2 to 3 different kinds
2 pears, preferably red and green
2/3 cup walnuts, toasted and coarsely chopped
2 tablespoons extra-virgin olive oil
Salt and freshly ground black pepper

Steps:

  • In a large bowl whisk together vinegar, orange juice, zest, and raisins. Core and cube apples and pears. Add fruit and walnuts to a bowl and drizzle with oil. Toss well to combine. Season, to taste, with salt and pepper. Refrigerate 1 hour before serving.

La Isla's Stuffed French Toast image

2 tablespoons soft unsalted butter, plus additional for sauteing
4 ounces cream cheese, room temperature
1 1/2 tablespoons guava marmalade, plus additional for drizzling (recommended: LaFe)
5 ounces diced strawberries
3 ounces guava shells (recommended: LaFe)
4 thick slices Pullman-style bread, refrigerated
Powdered sugar, for dusting
6 extra-large eggs
1 tablespoon ground cinnamon
1/4 teaspoon freshly grated nutmeg
2 tablespoons sugar
1 teaspoon vanilla extract
4 ounces whole milk
4 ounces evaporated milk
10 ounces corn cereal (recommended: Cornflakes)
6 ounces sliced almonds

Steps:

  • In a medium bowl, using a hand beater, beat the 2 tablespoons of butter, and the cream cheese until combined. Add the marmalade and mix until incorporated, then fold in the strawberries and guava shells, using a rubber scraper. Transfer the mixture to a pastry bag fitted with a large tip.
  • Make an incision (pocket) on the crust side of the 4 pieces of bread about 3/4 of the way through. The incision will allow you to stuff the pocket. Leave the slices with the incision, covered, at room temperature before stuffing. Gently stuff the room temperature slices with the filling. Refrigerate the stuffed slices with the pocket opening facing up for 20 to 30 minutes.
  • Preheat oven to 375 degrees F.
  • Egg batter:
  • Add all the ingredients to a medium shallow bowl and mix well.
  • French Toast:
  • Add the corn cereal and almonds to a sheet pan and crush together. Dip the bread slices in the egg batter and then into the cereal mixture.
  • Put a large skillet on medium-high heat and add 3 to 4 tablespoons butter. When the butter has melted add the stuffed bread slices and brown on 1 side, then flip and put the skillet in oven for 8 minutes. Remove the skillet from the oven and transfer the toast to a serving platter. Drizzle with guava marmalade and a dusting of powdered sugar before serving.

2 red apples, such as Macintosh, cored and diced
3 teaspoons Truvia® natural sweetener spoonable*
1/4 teaspoon ground cinnamon
4 ounces 1/3 less fat cream cheese, softened
1/2 cup walnuts, toasted and chopped
1/4 cup dried cherries, coarsely chopped
3/4 teaspoon vanilla extract
8 slices Pepperidge Farm 80 calorie cinnamon swirl bread
2/3 cup 1% milk
2 large eggs
1/8 teaspoon salt
*May substitute with 3 1/2 packets Truvia® natural sweetener

Steps:

  • 1. In a medium microwave-safe bowl, combine apples, 4 tablespoons water, 1 teaspoon Truvia® natural sweetener, and cinnamon. Cover and cook until apples are tender and juicy, about 6 minutes. Uncover, toss and set aside.
  • 2. In a medium bowl, stir together the cream cheese, walnuts, cherries, 1 teaspoon Truvia® natural sweetener, and 1/4 teaspoon vanilla. Put 4 slices bread on a cutting board and evenly spread with cream cheese mixture, about 1/4 cup per slice. Firmly press a second piece on top of each to form a sandwich.
  • 3. In a shallow bowl, whisk the milk, eggs, remaining 1 teaspoon Truvia® natural sweetener and vanilla, and a pinch of salt. Heat a heavy nonstick skillet over medium heat until a drop of water skitters around the pan. Soak each sandwich in the milk mixture for 1 minute, turning once and pressing edges of bread together. Allow excess to drip off and place sandwiches in the hot skillet. Cook, turning once until browned and crisp on both sides, 8 to 10 minutes. Serve the French toast with the apples on top.

6 medium Granny Smith apples - peeled, cored, and thinly sliced
½ cup white sugar
2 tablespoons ground cinnamon
1 cup unsalted butter
2 cups packed brown sugar
1 tablespoon water
1 cup chopped walnuts
12 slices day-old French bread
6 large eggs
1 ½ cups milk
2 tablespoons vanilla extract

Steps:

  • Set a rack in the lower third of the oven and preheat to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan.
  • Place apples in a saucepan; cover with water. Bring to a boil; allow to cook for 2 to 3 minutes. Drain apples and toss with white sugar and cinnamon. Set aside.
  • Melt butter with brown sugar and 1 tablespoon of water in a saucepan over medium-low heat. Add walnuts and simmer for 10 minutes. Pour into the prepared baking pan and let cool, about 10 minutes.
  • Cover butter mixture with a layer of bread. Spread apple mixture evenly on top.
  • Beat eggs, milk, and vanilla extract together in a large mixing bowl. Dip remaining bread slices in egg mixture, then place in a layer over the apple mixture. Pour remaining egg mixture over bread, filling the pan nearly to the top.
  • Bake in the preheated oven until golden and puffed and a knife inserted into the center comes out clean, 40 to 50 minutes. Remove from the oven and let cool for 10 minutes, then turn out onto a cookie sheet. Slice and serve.

7 tablespoons unsalted butter, softened, plus more for serving
2 pears, peeled, cored, and finely chopped
12 large eggs
2 cups heavy cream, half-and-half, or milk
2 teaspoons pure vanilla extract
1 loaf challah or other soft, thick bread, cut into 1-inch slices
Pure maple syrup, warmed, for serving

Steps:

  • Mash together 5 tablespoons of the butter with the chopped pears and chill.
  • In a large flat dish, whisk together the eggs, cream, and vanilla.
  • In the side of each bread slice, make a deep slice into the center to form a pocket. Stuff a spoonful of pear butter into each piece. Place the stuffed bread into the egg mixture and let soak for a few minutes. Turn each piece and continue soaking until the bread has absorbed enough of the egg mixture to be completely moistened but not falling apart.
  • Heat a large skillet and swirl in 1 tablespoon of the butter. Working in batches, cook the soaked bread until golden brown and cooked through, 2 to 3 minutes per side. Add the remaining tablespoon of butter to the skillet as needed. Serve warm with more butter and the maple syrup.
