½ pound raw shrimp (peeled and deveined)
½ pound squid or calamari (cut into slices)
½ pound bay scallops
2 tablespoons of butter
2 tablespoons of finely chopped white onion
6 garlic cloves (crushed or minced)
¼ cup white wine
½ cup heavy cream
Salt and pepper to taste
Chopped parsley
Patacones/tostones (or fried green plantains)
Rice (Latin style)
Tomato and onion curtido side salad
Bread

Steps:

  • Season the seafood with a sprinkle of salt.
  • Melt the butter over medium heat in a large skillet.
  • Add the onion and garlic, cook for about two minutes.
  • Add the shrimp and cook for 1 minute.
  • Add the white wine, mix well and cook over high heat for 1 minute.
  • Add the heavy cream and cook until the shrimp are almost done.
  • Add the squid and bay scallops, cook for about two minutes or until done, and immediately remove from heat.
  • Taste and add salt if needed. Add ground black pepper to taste.
  • Mix in the chopped parsley.
  • Serve the mixed seafood in garlic sauce immediately. You can serve it as an appetizer with bread. It can also be served as a main dish with rice, fried green plantains, salad, etc.

Stir in the cream, parsley, paprika, salt and pepper., Butterfly shrimp, by cutting lengthwise almost in half, but leaving shrimp attached at opposite side. Spread to butterfly. Place cut side down in a greased 13-in. x 9-in. baking dish. Pour cream sauce over shrimp. Bake, uncovered, at 400° for 15-18 minutes or until shrimp turn pink. Serve with noodles or rice.

1 cup milk

1 package (8 oz) sliced fresh mushrooms (3 cups)
4 medium green onions, chopped (1/4 cup)

1/2 cup chopped fresh parsley
Salt and pepper to taste, if desired
1/2 cup shredded Parmesan cheese (2 oz), if desired

Steps:

  • In 5- to 6-quart Dutch oven, cook linguine as directed on package. Drain well; return to Dutch oven and cover to keep warm.
  • Meanwhile, in blender, place clam chowder, milk, 1/2 cup Parmesan cheese and the garlic; blend on medium speed until mixture is smooth. Set aside.
  • In 12-inch nonstick skillet or wok, heat oil over medium-high heat until hot. Add shrimp, mushrooms and onions; cook about 5 minutes, stirring frequently, until shrimp turn pink.

1 tbsp olive oil
1 onion , chopped
2 celery sticks, chopped
1 garlic clove , crushed
175ml white wine
300ml chicken stock
1 tbsp cornflour , mixed to a paste with 1 tbsp cold water
400g bag frozen seafood mix , defrosted
small bunch dill , chopped
5 tbsp half-fat crème fraîche
garlic bread, to serve

Steps:

  • Heat the oil in a large frying pan and cook the onion and celery until soft but not coloured, about 10 mins. Throw in the garlic and cook for 1 min more. Pour in the wine and simmer on a high heat until most has disappeared.
  • Pour in the stock and cornflour mix and simmer for 5-10 mins, stirring often until thickened. Season, then add the seafood and most of the dill. Simmer for a few mins until piping hot, then stir in the crème fraîche.
  • Meanwhile, cook the garlic bread following pack instructions. Divide the stew into warm bowls and scatter with the remaining dill. Serve with garlic bread for dipping into the stew.

2 tbsp olive oil
250 g (½lb) shrimp / prawns (peeled and deveined)
150 g (5oz) mussel meat ((approximately 500g with shells) )
150 g (5oz) calamari tubes / squid heads
2 tbsp butter
4 garlic cloves (crushed)
½ tsp chilli flakes
½ cup white wine
1-2 tsp lemon juice
1 cup cream
salt and pepper (to taste )
½ cup parsley (finely chopped)
500 g (1lb) pasta (cooked + 1 cup cooking water reserved)

Steps:

  • In a large pan, add a splash of oil and allow to heat up.
  • Season the seafood with salt and pepper then cook in batches until golden brown.
  • The shrimp/prawns should take no more than a minute per side (depending on size) and the calamari and mussels will take only a few minutes to cook. Take care not to overcook the seafood as they will go tough and rubbery. Rather undercook slightly as it will cook a little more while being tossed with the sauce and pasta.
  • Remove the seafood from the pan and set aside.
  • In the same pan, melt the butter and add the garlic and chilli flakes. Cook until fragrant then pour in the lemon juice and wine.
  • Bring to a simmer and allow to reduce by half.
  • Pour in the cream and allow to come to a simmer. Allow to cook for 5 minutes or until the sauce coats the back of a spoon.
  • Add the seafood (and any of its resting juices) and parsley and stir to combine.
  • Toss the sauce with cooked pasta and a splash of the pasta cooking water and toss to coat the pasta. Serve sprinkled with parsley.

1 pound shrimp (or more)
8 ounces crab, scallops, or lobster meat (thawed, drained, and diced)
2 tablespoons dry sherry
2 teaspoons lemon juice
1/8 teaspoon nutmeg
3/4 stick (6 tablespoons) unsalted butter
1/3 cup all-purpose flour
2 cups half-and-half (warmed)
1/2 teaspoon salt (or to taste)
1/4 cup heavy cream
1 large egg yolk
1/2 cup mild cheddar cheese (shredded)
Optional: ground paprika
Optional: fresh chopped parsley

Steps:

  • Gather the ingredients.
  • Remove the shells from the shrimp. With a sharp knife, make a shallow cut down the back of a shrimp and pull the dark vein out . If the vein doesn't come out easily, scrape it out with the tip of the knife. The vein is the digestive system of the shrimp, so it should be removed. Repeat with the remaining shrimp.
  • Rinse well, chop large shrimp coarsely. Leave small to medium shrimp whole, if desired. Transfer the shrimp to a large bowl.
  • To the bowl with the shrimp, add the lobster, scallops, or crabmeat along with the sherry, lemon juice, and nutmeg.
  • Cover the bowl and refrigerate for about 45 minutes to 1 hour.
  • Melt the butter in a medium saucepan over medium-low heat.
  • Add the flour and continue cooking for about 3 minutes while stirring constantly.
  • Gradually whisk in about 1/4 cup of the half-and-half. Gradually add the remaining half-and-half, whisking constantly. Add the salt and continue cooking until bubbling and thickened.
  • In a bowl, whisk the heavy cream with the egg yolk.
  • Add to the thickened sauce while whisking constantly.
  • Stir in the cheese and continue cooking until the cheese has melted.
  • Add the seafood to the sauce and cook for about 10 minutes, or until the seafood is thoroughly cooked.
  • Spoon the seafood Newburg over toast points , puff pastry shells, or hot cooked rice or noodles. Or serve the seafood over freshly baked biscuits.
  • Sprinkle with paprika or garnish with fresh chopped parsley , as desired.

4 cloves shallots, chopped
2 cups white wine

2 cups heavy cream
1 1/2 pounds (20/30 count) sea scallops

1/2 cup grated Pecorino Romano

Steps:

  • In a large saute pan, heat 1/4 cup oil and cook garlic and shallot until translucent, about 2 minutes. Deglaze the pan with the wine, and add parsley, basil and thyme and let the liquid reduce by half. Using a fine strainer, strain the reduction into a clean saucepan and add the cream. Over low heat, let the sauce reduce to medium thickness. To the now empty saute pan, add 2 tablespoons olive oil, saute scallops, cook until opaque and remove to a utility platter in a warm place. Then use the same pan to saute shrimp just until pink, and remove to the utility platter. Add cream sauce to saute pan to toss the drained pasta or rice with the cream sauce and seafood, reserving a few scallops and shrimp for the top. Transfer to a serving dish, and sprinkle with cheese, as garnish. Arrange shrimp and scallops on top and garnish with basil sprigs.

Steps:

  • GARLIC CREAM SAUCE (with OPTIONAL PARMESAN) Heat the olive oil in a sauce pan over medium heat. Add the minced garlic and while constantly moving it around with a wooden spoon, sauté if for 30-40 seconds or until fragrant and just beginning to turn golden. Add the heavy cream, stir, bring to gentle simmer and simmer until the sauce thickens to your liking. Remove from heat. Add the grated Parmesan (optional) and stir until it melts and blends in with the sauce. Season with salt and pepper to taste. CHORIZO CREAM SAUCE In a non-stick pan over medium heat begin to brown the chorizo while gently breaking it up with a wooden spoon. When mostly cooked through, remove any excess fat with a small spoon (may not need to). Add the heavy cream, stir, bring to simmer and cook for another couple of minutes. Taste and adjust seasonings. HONEY MUSTARD CREAM SAUCE In a sauce pan over medium heat add the heavy cream, mustard and honey. Whisk until combined and simmer briefly until the sauce thickens to your liking. Season with salt and pepper to taste. SPICY CREAM SAUCE (CAJUN OR RED PEPPER FLAKES) In a sauce pan over medium heat add heavy cream and chicken base. Stir to combine and bring to simmer. Add Cajun seasoning OR red pepper flakes (plus optional Parmesan). Simmer until sauce thickens to your liking or thicken with slurry. SIMPLE CHEESE CREAM SAUCE Add the heavy cream to a sauce pan, place on stove and heat over the highest setting of low available before you get to medium-low. Add garlic salt and dried oregano and stir. Once you observe the cream forming a skin on the surface, it is hot enough. In batches add the shredded cheese and stir to combine. Add the next batch only after the previous one has been incorporated. When the sauce is smooth, remove from the heat and serve immediately. Leftovers of this sauce must be warmed up on low, with a bit of extra heavy cream, otherwise the fat from the cheese might cause it to separate. WHOLE GRAIN MUSTARD CREAM SAUCE In a small saucepan over medium heat combine the heavy cream and the whole grain mustard. Bring bring to simmer and let reduce for a couple of minutes until it reaches your desired thickness.

½ package (8 ounces) linguine pasta
2 tablespoons butter
1 tablespoon oil
1 medium onion, diced
2 garlic cloves, minced
½ pound raw shrimp, peeled and deveined
½ pound mussels, cleaned and debearded
½ pound scallops
1 cup heavy cream
1/2 cup chicken broth or dry white wine
1 teaspoon chili flakes, or less, to taste
1 cup grated parmesan cheese, plus more for serving
¼ cup minced parsley, plus more for serving
salt and pepper, to taste

Steps:

  • Rinse the mussels and remove the beards if necessary, discarding any that remain open even after tapping on them.
  • Clean the shrimp.
  • Dice the onion and mince the garlic and parsley.
  • Cook the pasta according to the package instructions. Drain and set aside, adding a touch of olive oil to help prevent it from sticking together.
  • Bring a large pan to medium heat. Add 2 tablespoons of butter and 1 tablespoon of oil. Add the onion and garlic and sauté for 3 minutes, until onion turns translucent.
  • Add the shrimp and scallops and sauté for 4 minutes, turning the shrimp and scallops over once, until the shrimp have turned pink.
  • Add the broth and heavy cream, bring to a light boil, and lower the heat to simmer. Let the sauce cook until the cream reduces slightly, about 2 minutes.
  • Add the mussels, cover with a lid, and let them cook in the sauce for 5 minutes.
  • Stir all the ingredients to coat them in sauce. Discard any mussels that haven't fully opened.
  • Add the parmesan cheese, chili flakes, minced fresh parsley, and salt and pepper. Add the drained pasta. Stir gently to mix everything together.
  • Serve the creamy seafood pasta topped with more grated parmesan, parsley, and a pinch of chili flakes.

1-2 teaspoons pan drippings from cooking fish, shrimp or chicken
⅓ cup dry white wine
2/3 cup half and half
1 Tablespoon all purpose flour
1 teaspoon Cajun or Creole Seasoning
½ teaspoon dried oregano
¼ teaspoon smoked paprika
2-3 teaspoons lemon juice (1/2 lemon, juiced)

Steps:

  • Deglaze pan the protein has been cooked in with wine. If baked or broiled, scrape up pan drippings from baking pan and add to skillet with wine. Heat thoroughly.
  • Whisk together 1/2 and 1/2, flour and seasonings until smooth.
  • Whisk flour mixture into skillet and stir constantly over medium-low to medium heat until thickened.
  • Add lemon juice and heat throughly before pouring over fish, shrimp or chicken.

This creamy garlic shrimp recipe is a delicious and easy dinner recipe served with pasta or crusty bread to mop up the sauce.

500 g (1lb) shrimp / prawns (shelled and deveined)
1 tsp salt
1/2 tsp pepper
2 tbsp butter
1 tbsp Cajun seasoning
4 garlic cloves (crushed )
1 cup cream
1-2 tsp lemon juice
parsley (for garnish)

Steps:

  • Pat the shrimp dry with paper towels then place in a bowl. Season generously with salt and pepper.
  • Heat a large pan over high heat then add the butter and shrimp. Cook until they shrimp are opaque and starting to brown. Remove from the pan and set aside.
  • In the same pan, add another teaspoon of butter then add the garlic and the cajun seasoning.
  • Pour the cream into the pan along with the lemon juice. Bring up to a simmer and cook for 5 minutes until the sauce has reduced and coats the back of a spoon easily.
  • Add the shrimp back into the pan then allow to heat through for 1-2 minutes. Scatter over the parsley and serve.

I copied this recipe years ago out of a cookbook a friend received for Christmas. It has been one of my favorite pasta recipes ever since. I can't stand mushrooms, so I never use them. I also use lobster meat sometimes. Imitation crab and/or lobster meat works well in a pinch. Sauce tends to thicken after removed from heat. Since the recipe was listed as a sauce, it didn't give an exact amount of pasta. It simply recommended using a shell or curly type. I'm guessing 6-8 ounces is how much I use and I usually use rotini. Cooking the pasta isn't included in cooking time.

1/2 cup Clos du Bois Chardonnay
2 tablespoons flour
2 1/2 cups milk or cream, I use milk
1 cup grated Parmesan, divided in half
Pinch salt & pepper
1/4 teaspoon dried tarragon or thyme
1 lb Barilla Penne, cooked Al Dente
2 tablespoon butter, melted
1 cup Italian bread crumbs

Steps:

  • Preheat oven to 425.
  • Heat a skillet over medium , drizzle with Olive oil.
  • Saute seafood for 1-2 minutes.
  • Slowly add wine to deglaze the pan, add shallots, garlic & butter. Stir.
  • Add flour, stir to coat seafood.
  • Pour in milk or cream, bring to a boil stirring constantly
  • Reduce to simmer, sauce should start thicken.
  • Remove from heat. Stir in 1/2 the Parmesan.
  • Cook, drain and rinse penne pasta.
  • Mix bread crumbs into melted butter.
  • Layer in casserole dish- pasta, sauce and seafood, bread crumbs, remaining Parmesan.
  • Bake 15 minutes or until top is golden and edges are bubbly.
  • Serve with a glass of Chardonnay and crusty bread.

1 tbsp olive oil
1/2 lb scallops (patted dry)
1/2 lb shrimp (peeled and deveined)
1/2 tsp kosher salt
1 tbsp butter
1 clove garlic (minced)
1 cup heavy cream
2 oz parmigiano reggiano (grated (about 1/2 cup packed) (sub grana padano or pecorino romano))
4 oz mozzarella (grated (about 1/2 cup packed))
8 oz angel hair pasta or spaghettini
1 tbsp minced fresh parsley or chives (optional)

Steps:

  • Start a pot of salted water to a boil.
  • Heat a dutch oven over medium high heat for several minutes. Heat oil until it shimmers then pat dry shrimp and scallops and sprinkle with salt. Use long tongs to carefully arrange in a single layer on the hot pan. Let cook undisturbed until well browned on the underside, flipping only when they release easily, about 3 minutes. Flip and cook about a minute more, until just opaque. Transfer to a plate.
  • Meanwhile, cook pasta according to package directions (about 4 minutes for these types).
  • Add butter and garlic to the same dutch oven (without cleaning it) and cook about 30 seconds, until garlic is softened. Whisk in cream and bring to a simmer. Turn off heat and whisk in cheeses until smooth. Add pasta to the sauce and toss to combine. Stir shrimp and scallops into the sauce or top servings individually to show off the gorgeous sear. Serve sprinkled with parsley or chives if desired.

1 1/2 cups heavy cream
1/4 cup finely chopped parsley

Steps:

  • In a saucepan bring 6 cups of water to a boil. Using a small paring knife, remove the vein along the back of each shrimp and rinse under running water. Add garlic to water and boil for two minutes. Add the shrimp to the water and cook with the garlic for 2-3 minutes. Drain the shrimp and garlic. Peel the garlic and finely chop. Heat oil in a large skillet over medium heat. Add garlic and cook for 1 minute. Pour in heavy cream and bring to a simmer. Cook until cream begins to thicken. Stir in parsley, Parmesan and shrimp. Season with salt and pepper. Pour sauce over linguine in a large bowl and toss to coat. Garnish with parsley and Parmesan.
