2 tablespoons cold-pressed virgin coconut oil
3/4 cups old fashioned rolled oats ((jumbo rolled oats) (use gluten free for gf))
1 1/2 cups (water)
1/4 teaspoon ground cinnamon
maple syrup
walnuts
pecans
pumpkin seeds

Steps:

  • In a small sauce pan on medium heat, add in the coconut oil. Once hot, add in the apples and sauté for about 5 minutes, until the apple soften and are fragrant.
  • Add in the oats and sauté for about 2 minutes to gently toast them.
  • Add in the water, and turn up the heat to bring to a boil. Mix in the cinnamon. Once the oatmeal is at a gentle boil, turn down the heat and simmer for about 5 minutes, stirring frequently (use a porridge spurtle for best the best stir) and cooking until the oats are done and the apples are tender.
  • Serve immediately with your favorite toppings.

1 1/2 cups all-purpose flour
1 1/2 cups oatmeal
1 teaspoon baking powder

1/2 teaspoon ground allspice
1/2 teaspoon ground mace
1/2 teaspoon ground ginger

Steps:

  • Preheat oven to 350. Grease and flour a 9 x 5 inch loaf pan.
  • Mix all dry ingredients together.
  • Lightly beat eggs in small bowl. Add oil and eggs to dry ingredients and stir until moistened. Fold in apples and nuts and pour into loaf pan.
  • Bake 1 hour or until toothpick comes out clean. Cool in pan on wire rack for 10 minutes. Remove from pan. Cool on rack.

1 tablespoon margarine
1/2 cup milk
1 cup water
1/4 teaspoon salt
3/4 cup Quaker Oats (Old Fashioned preferred)

2 tablespoons brown sugar

Steps:

  • Melt margarine in a large saucepan over medium heat. Add diced apple and cook until apple is slightly soft (about 3 minutes.).
  • Add milk, water, and salt to saucepan and bring it up to a boil.
  • When the milk and water comes up to a boil, add Oats, cinnamon, nutmeg, and sugars. Stir to fully incorporate. Add more flavors to taste.

Lisa tried everything, but nothing worked, till she tried Granny Smith apples, with a little help from brown sugar and cinnamon. That combination led to these cookies, which are packed with flavor and texture, and just as welcome on a cold, wet day as those bowls of oatmeal were.

1 1/2 sticks plus 2 teaspoons unsalted butter, softened at room temperature
2 small Granny Smith apples, peeled, cored, and cut into 1/2-inch dice
2/3 cup plus 1 teaspoon light brown sugar
1/8 teaspoon ground cinnamon

1/2 teaspoon pure vanilla extract

  • Position a rack in the center of the oven and preheat the oven to 350 degrees F.

1 cup raisins (about 6 ounces)

Steps:

  • Preheat the oven to 300 degrees F.
  • In a bowl, combine the flour, oats, salt, baking soda, cinnamon, cloves and lemon zest.
  • Mix well with a wire whisk and then set it aside.
  • Cream the butter and sugar together in a large bowl with an electric mixer.
  • Add the egg, applesauce and honey, and beat at medium speed until smooth.
  • Add the flour mixture, fresh apple and raisings.

Sprinkle with reserved topping, patting gently. ##Bake until deep golden brown and a skewer inserted into muffins comes out clean, about 20 to 22 minutes. Transfer to a rack to cool for 5 minutes, then remove muffins from pan. Serve warm.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8-inch square pan.
  • In a large bowl, combine brown sugar, oats, flour and butter. Mix until crumbly. Place half of crumb mixture in pan. Spread the apples evenly over crumb mixture. Sprinkle with sugar and cinnamon and top with remaining crumb mixture.
  • Bake in the preheated oven for 40 to 45 minutes, or until golden brown.

1 1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. salt
1 1/4 c. milk (dairy or plant based)
2 eggs
1/4 c. honey (or preferred granular sweetener)
1 tsp. vanilla
2 c. peeled, diced apples, plus extra slices for topping
1/2 c. chopped walnuts, plus extra for topping

Steps:

  • Preheat oven to 350 degrees. Lightly spray a 9x9" baking dish or pan with non-stick baking spray. Set aside.
  • In a mixing bowl, combine the dry ingredients: oatmeal, cinnamon, nutmeg and salt. Set aside.
  • In a separate bowl, whisk together the wet ingredients: milk, eggs, vanilla, and sweetener (honey or granular sweetener.)
  • Combine the wet and dry ingredients together with a rubber scraper. Fold in the chopped apples and walnuts and combine well.
  • Pour mixture into prepared pan and spread evenly. Optional: Top with additional apple slices and walnuts.
  • Bake at 350 degrees for 30-32 minutes. Remove from oven and let cool for at least 10 minutes before slicing.

1 ¼ cups milk of choice (300 g)
¼ cup melted unsalted butter or coconut oil (60 g)
1 teaspoon pure vanilla extract
1 cup shredded apple or finely diced, more for topping (115 g)
⅓ cup chopped walnuts, toasted (35 g)

Steps:

  • Preheat the oven to 375℉. Spray a 9×9 or 8×8-inch baking dish with cooking spray.
  • In a bowl, combine the old-fashioned rolled oats, cinnamon, chia seed, baking powder, fine salt, maple syrup, applesauce, eggs, milk, butter, and vanilla. Stir until combined.
  • Fold in the apples and toasted walnuts (see toasting notes below).
